The only time I make pumpkin pie is when I can find a pie pumpkin. This is a smaller pumpkin than the pumpkins used for Jack-o-lanterns 🎃 for Halloween. You are correct when you say it is a messy job. I think it’s important to use an electric mixer on low speed to get the pumpkin blended smoothly. I find it easier (and less messy) to make the pumpkin pie filling one day, the pie crust another day, and then assemble them together and bake on a third day.

@@e.wilson6428 I still cook for my family every day from scratch ingredients. I didn't say BUY a pie, I just said the canned pumpkin saves a LOT of work and I m not the best baker. The only spice I used was cinnamon because I did not HAVE any of the others. The only spice I use for sweet potato or pumpkin pie, still to this day, is cinnamon. I love the other spices, but the pies taste just beautiful with the one spice alone. (Plus, no white sugar -- only brown -- and the only evaporated milk allowed in my pies is Pet.)

I recently saw a video that mentioned how much the early American colonists depended on pumpkin/squashes as a food source - without it, they would have starved. Of course, it was the Native Americans who gave them the seeds and taught them how to grow them. Our pumpkin pie is really sweetened pumpkin custard in a pie shell - early settlers ate it as a vegetable dish, without the crust.

Pumpkin Pie is an acquired taste. Kids like the more sweeter deserts. But, the less sweet taste, it really grows on you as you're more mature. Till, you start craving pumpkin pie around the holidays, even the smell that you thought was a little strange the first few times you made pumpkin pie... just becomes a distinct part of the holidays. When I don't have a pumpkin pie in the oven during the holidays, it feels like something is missing.

Huge fan of pumpkin pie! Also, pumpkin bread and bars. There seem to be two camps...love it or hate it. Some do find the texture offputting. You had great success on your first try. The soupiness of the mix can be confusing so it's good that you didn't deviate from the recipe and try to thicken it up. Yours appeared room temp but it's also good chilled as it firms up a bit.

Libby is absolutely The standard by which all canned pumpkin is measured by and it is the best. Also, while it is a gord, pumpkin is definitely not like the two types of squash (spaghetti & butternut) Carol mentions. For starters squash is good by itself, while pumpkin doesn't have much actual flavor, hence why it's mostly only used for Jack-o'-lanterns, or used in a pie that is almost solely the flavor of the spices used. 😋

I bake and puree my pumpkin using sugar pumpkins (sometimes called pie pumpkins). Pumpkins have great flavor by themselves, but are perfect for recipes. The puree can be frozen, then thawed when needed. I also use it for other baking and for making a curried pumpkin soup. The natural (mild) sweetness of all the squashes tastes so good when mixed with savory flavors. Canned pumpkin is a fine time saver and makes it easier to finish all the rest of the holiday cooking.

When I was 12 I took Home Economics in Jr. High School. In October we learned to make pumpkin pie. So for Thanksgiving (the 4th Thursday in November) Nov. 27, 1969 I baked Libby's pumpkin pie for my family of eight. I made 4 pies, because a family friend and his wife and 2 daughters were joining us. The next day my Mother noticed a pie was missing. I took a bag around the side yard to put in a trash can, and there in the grass sat my 10 yr old brother with a fork, a can of RediWhip whipped topping hiding and scarfing down the last whole pie!! He groaned and moaned afterwards, but said it was delicious So happy you liked it! You can bake a real pumpkin and use the flesh of it to make pie. I'm glad that you both enjoyed your first pumpkin pie! Historically, pumpkin pie was preferred by Northerners and sweet potato pie was preferred by Southerners. In more recent years, there have been lots of recipes for pumpkin pie cheesecakes, which are really, really good! Some recipes swirl the pumpkin mixture with the cream cheese mixture and others will have distinctive layers of the two fillings. They've also come out with pumpkin spice eggnog around the holidays here in the USA and it's a delicious seasonal treat. Pumpkin is so good in our American-style pancakes, quickbreads, and muffins. When we're buying our canned pumpkin, we do have to be careful and check to see if it is 100% pumpkin purée or pumpkin pie mix, which is ready to use straight from the can as it has the added spices, sweeteners, thickeners, etcetera already added to the purée. It just needs to be transferred to a pie crust and then baked. When baking any pie or even a full casserole dish, it can be easier to move the full baking pans/dishes in and out of the oven when it's set on a rimmed baking tray, preferably lined with parchment paper, plus it will catch any spills or messes should it bubble over. This way, you'll only need to wash the baking tray instead of having to deal with a dirty oven with baked-on and burnt food. Hope this helps!
Love to you both and to all of your sweet, precious kitties!
    ❤️ 😺 🇺🇸 ❤️ 🇸🇪

Pumpkin pie is what my daughter requests for her birthday dinner. Her birthday is near thanksgiving so she has always asked me to make an extra pie for her birthday. I use the Libby recipe too but I play around with the amounts of spices. A bit more ginger and the pie has a bite to it. Too much ginger and it tastes like soap. So I add a bit more ginger and a bit more cloves. Good job getting it figured out. For thanksgiving I’m the one that makes the pumpkin pies and pecan pies. A few years I ended up making 6 of each. I was cooking for days.

Very good job! Glad you were able to finally try it. Half of my New York City family prefers "Hard Sauce" topping instead of whipped cream on pumpkin pie.
    MY GRANDMOTHER'S HARD SAUCE RECIPE
    ½ cup softened butter
    1 teaspoon vanilla
    1½ cups powdered sugar
    1. Beat butter & vanilla with mixer until fluffy.
    2. Add powdered sugar gradually until mixed in, scraping sides of bowl as you mix.
    3. Serve on top of pie. It will keep in refrigerator for days covered in plastic wrap.
(Some people substitute 2 tablespoons of whiskey for the vanilla, but add whiskey last instead of first.)

I'm glad to see that the recipe you tried included both ginger and cinnamon. I think that the ginger really helps assemble the flavors. I've had pumpkin pie without ginger and cinnamon, and it was the sort of sweet pasty flavor that clings to the tongue in a smothering way.

Tip: it's always best to put your pie pan with crust on a cookie sheet before filling and then put the whole thing in the oven. No accidental spills and the sheet pan catches any bubble over as well. We also put aluminum foil around the edge of the crust to keep it from burning or getting too dark. Test doneness with a butter knife inserted into the center. When it comes out clean it's done.
    Great job y'all.
I don't care for pies with a pastry crist unless they're chicken pot pies. I prefer a graham cracker crust pie. That said, I can bake like nobody's business and during Thanksgiving and Christmas I have to bake at least 1 whole pumpkin pie just for my son to take home. He'll eat pie here then take a whole one home. 😂
He's the same way about my chicken & dumplings, green bean casserole meal (not the side dish), tacos and gyoza. He'll eat here then take some home. He recently tried making his own chicken & dumplings and didn't do too bad. His only mistake was using extra buttery canned biscuits and rolling them flat to resemble my home made slippery dumplings. The butter made the whole dish taste too sweet. Even adding salt or Better Than Bouillon chicken base didn't help much. He didn't taste it as much because he added a bunch of pepper and spicy spices to his bowl.😅

Great job! This is the recipe most of us use. I have made it from a whole pumpkin that I roasted and processed into puree. It was delicious but sooo much extra work. I don't think it was so much better to justify the time and effort.
For me, pumpkin season starts in October and I eat as much as I can through January. Pumpkin pie, pumpkin quick bread, pumpkin butter, etc....I really love it, but I like to save it for that season.

When my kids were younger, I used to make pumpkin pie from their jack-o-lanterns after halloween. Pumpkins used for Jack-o-lanterns are pulpier and require more processing to make the pumpkin puree.

The combination of spices allows for adjusting the proportions to create slightly different flavor profiles. Other spices can be included, such as nutmeg, cardamom, etc.

there is a spice we can buy which is called pumpkin pie seasoning. It is a combination of the spices you will have added to the pie such as cinnamon, nutmeg, cloves, and ginger. Sometimes allspice is included or just use the individual spices to make other things too. One thing I do, especially in winter, is to add this spice to a hot bowl of oatmeal with a touch of butter. Many Americans love the pumpkin pie seasoning for many uses. Seems you did very well making your first pumpkin pie. Libby's is the most iconic brand to use. Another method is to get a sugar pumpkin and cook it from scratch to make the filling but I bet you may have trouble finding them in Sweden. You are becoming so American with all your not a cooking/baking shows. In the southern part of the US, sweet potato pie is also a tradition... just like your favorite corn bread

Ive eaten this pie since i was a baby. A tradition for Thanksgiving every year. The next morning ive always had pie and a cup of hot tea for breakfast because im too full on thanksgiving day to really enjoy. Pumpkin is very healthy, packed with vitamins and fiber.I use half brown and half white sugar for s denser flavor.I also use butternut squash, pureed in place of pumpkin. They are cousins, after all.So glad you enjoyed it!Thank you to the enablers that sent you the ingredients.

I love pumpkin pie, but I am not a huge fan of ginger, so I leave that out and add a little extra cinnamon and nutmeg. That's the beauty of a pumpkin pie, you can adjust the spices and the amount sugar to suit your taste. Great job and I'm so glad you liked our traditional Thanksgiving dessert.

When baking pumpkins are in season, you can always roast a pumpkin(just cut in half, scoop out the stringy stuff and seeds, and maybe lube the outside of it first). Check to see that pumpkin is fully tender after you roast it! If you fully roast it, and let it cool, just peel it, remove the stem, you can make pumpkin puree!

I always made two at a time, one for dessert and one for breakfast the next morning. Pumpkin is very nutrient dense so along with the eggs, milk and relatively low amount of sugar it is a fairly healthy dessert. You can always adjust the spices to your individual tastes. Your pie turned out great!
