- Chicken Adobo is a classic Filipino dish renowned for its delicious and savoury flavours. It's a simple yet incredibly tasty dish made with chicken, vinegar, soy sauce, garlic, bay leaves, and black peppercorns. The vinegar adds a tangy and slightly sour note that is balanced by the savoury and salty richness of the soy sauce. Garlic imparts a robust, aromatic flavour to the dish, while bay leaves and black peppercorns give subtle undertones. The braising process results in tender, juicy chicken in a delightful sauce that's both savoury and slightly sweet. Chicken Adobo is a staple in Filipino cuisine, enjoyed both in everyday family meals and on special occasions. Its simplicity, rich flavours, and versatility make it a favourite dish not only in the Philippines, but also among foodies all over the world.

Clear and simple instructions easy to follow. It looks yummy 😋
I appreciate that you featured our all time favorite Filipino adobo. I would still recommend our cane vinegar or coco vinegar for a more authentic Pinoy taste and marinate overnight for a more flavorful dish. More crushed garlic would also add in more flavor. We would also add in the onion at the end of cooking so it is half cooked, add in a few pepper corns and green sili for a slightly spicy flavor and aroma.
Thanks for sharing!! I'm salivating already just with your suggestions. Good one, Maria!
THANK YOU THANK YOU to both of you! I have made this dish a few times and it would come out good enough to let me know that I was on the right track, but I could tell that I wasn't quite there yet. Now with your recipe and techniques (+ the tips included in this comment) this dish has reached new heights for me!! I made it tonight and I am surely using this same recipe from now on! With cane vinegar and extra garlic 😊

You’re welcome Sir. Your Videos are give help to me in my work as a domestic helper here in HK. I recommend it to my friends also . And my Employer likes the food that i cook from your videos.
Yes sir!!! Just the sauce only is yummy, bonus if there's chicken 😅
You got that right! 🙂🙂😊
Thank u chef roland for d admire on our favorite,,Adobo🎉🎉❤❤😅
You're most welcome, abrillebenteuno. It's too delicious not to be admired.
I'm happy he put so much garlic and onions! 😅😅😅
Hehe. Best seasoning ingredients ever 🤗🤗🤗
I made this today and really enjoyed it! I was only cooking for me (just three drumsticks) so had to reduce the ingredients etc to a third, though I think next time i'll need a little more water - half instead of a third as it had reduced nicely by the time the initial 20 minute cooking time had done, and I had planned to put the rice on so it would cook and be ready while the sauce was reducing. Either that or I put the rice on when I start cooking it so 20 minutes will be enough. Definitely one I'll be cooking again. Thanks Roland!
Thank you so much for using our recipe, Gary! Glad to know that you like it. I like the way you think. Saves time. :))

❤❤❤❤
😅😅😅
Ypu try also the famous kaldereta mix with peanut butter ❤❤❤
Bulalo
Hi Roland, thanks for the recipe, one question on the peppercorn, did you mean the Szechuan Peppercorn? thanks
Just regular peppercorns
Adobo uses black peppercorns
black peppercorns
Happy cooking, Brian. Thank you everyone who helped Brian with his query.
Seldom do we use onions. But as we have hundreds of variations this must be as tasty.
If you don't use onion, what~may I ask~do you use instead? Looks like onion is the only veggie in the dish.
Yes, you are right, Ace of 2Hearts. We actually asked a Filipino friend and her version includes onion. :0)
Would u try bicol express..sir,,i hope u wl like it
Chef Roland, please make 3in1 fritters. Yam, nian gao and sweet potato.
Yum! But I don’t know if this recipe will interest anyone else other than you. Let me try making it first and see the results. Thank you so much for your request, Charlie ☺️☺️
This was a surprise to us your Filipino fan ❤
Thank you so much for your support, myleneraca!!
I'm the one thankful for all the delicious recipes you shared, that I cooked for my employer and they loved it🙏💕
Guess what I'm making for dinner , thank you ❤
Hehe. What are you making? :ppp Happy cooking, Odette!
Is it okay not to use sugar at all btw I'm from India I love ur video
👍💜👍💜
Thank you very much, Duncan!
Can i replace sugar with honey?
Can we add cornflour in the end to make the gravy thick?
its ok to add corn flour if you want your sauce to be thick but just don't forget the main ingredients of adobo
Hi SMHBK! Yes absolutely but I reckon that if you reduce it well enough, you don't really need to add that. Hope this helps. Happy cooking!
Ok as a Filipino, i'm not mad at the oyster sauce 👍also, Sugar and Onions are not essential to adobo. More authentic without sugar, chef.
Opps. Points noted. Thank you for not being mad at me 🙏🙏
who are you to say whats authentic and whats not? everybody in the Philippines got their own recipe and way of cooking adobo. people. stop being a karen. @chef, keep it up! your adobo looks good. don’t mind my fellow filipinos hating on your recipe 😂😂😂
well i sometimes add oyster sauce and even worcesteshire ( sometimes hot worcestershire) and voila! it’s adobo to the next level! a little bit sweet adobo is just fine, btw. i like it a bit sweet too. to each his own preference
@@sundalo1217 Pilipino. Original adobo walang asukal at walang sibuyas. OO Kanya kanyang recipe ang adobo pero dapat malaman nya din ang original. Dapat alam nyo din yun :)
@@lj1175 thats ok. You know what you're doing is a variation of adobo. I'm just letting him know the Basics of adobo. It can get lost with the many versions around.
Note to self : Made this tonight followed exactly..need to reduce soy sauce and increase vinegar slightly...found it too salty
Hi dustbean, thank you so much for using our recipe! Good note to self 👍👍👍 Considering switching your soy sauce out to another brand as some brands are indeed saltier than the others according to our tasting experience.
You forgot to add bay leaf and pepper corns. No, we dont usually use onions should be garlicky though. Lots of garlic I mean and sugar to balance the sourness
We did add bay leaves and peppercorns. Perhaps you missed that
Yummy Chef ❤😊😋
