    I love Adobo that has slightly reduced sauce that has been thickened through simmering, loads of garlic and chilies that add that appetizing kick. The sauce is just addictive on rice. 😊

    If your 3 kids under 7 and your hubby all mumble 'I love this' while they finish off their plates, I know I've hit the jackpot. This rarely happens in our house. This is the first time I'm trying one of marion's recipes and it did not disappoint!

    I love that Marion is now highlighting dishes from all over Southeast Asia and not just Thai dishes. Try cooking Filipino dishes like sisig or caldereta next time which I think are also universally loved.

    I’m a Filipino born and raised in the PI. This is one of the many version of cooking adobo whether pork or chicken. You did an outstanding job on this dish! I’d say you have my approval. Congratulations Marion! Thanks for featuring our dish.

    I tried this recipe yesterday, i never taste adobo before, it says 3/4 cup vinegar on the written recipe(I use white wine vinegar ), it came out way too sour, i marinated them over night, so i couldn't neutralize it with sugar, water or more soy sauce, so for people never make this before, double check your seasoning portion, i will try it again next time with way less vinegar though, it looks so good. Thank you Marion

    Adobo can be taken to another level when Filipino soy sauce & coconut vinegar is used. It gives it an authentic flavour. It’s kind of like using Chinese soy sauce in Japanese dishes, it’s delicious but not quite the same. But using regular soy & vinegar does make it more accessible to everyone though.

      Greenwood&Reid I’ve tried both ways and I sometimes I want it with the regular vinegar then other times I do coconut vinegar. I love both ways lol

      I would love to try it with the coconut vinegar! I'm pretty sure I can get that here in Thailand. But I think it would be hard to most of my audience in Australia and the USA :-(

    When I was in college.
    1. put all the ingredient in a pot
    2. turn on the flame
    3. forget about it.
    4. check back on it, when you remember.
    If it is still edible. Congrats, you have dinner!
    If not, instant ramen it is.

    I love that you put the chilis! I love putting chills in my adobo but when I lived with my parents I couldn’t. They can’t handle spicy. Now I live alone and put as many chilis as I want. 😂 but I never tried making it your way. I shall try it soon!

    I made this last night but I used boneless skinless chicken thighs. Did a little less vinegar, added some chicken broth and didn’t have chilis so I used chili paste. I also added a cup of coconut milk. Also garnished with chopped cilantro. My husband told me it’s the top 5 best dishes I’ve made and he wants it for his birthday dinner! Best compliment I’ve ever had on any meal I’ve ever made him! Thank you Marion! I save every one of your videos❤️

    We don’t really use ginger in authentic adobo it’s just Garlic and apple cide is too sour..you could just use a lemon but not too much

    This is such a easy, weekday dinner. And quick. I reduced the amount of apple cider vinegar and I added some sliced fresh jalapeños. I served it with steamed jasmine rice and steamed brocolli. My 6 year old cleaned her plate!

    Just a suggestion, try using less onions(if you really wanna use onions) because it enters the "Bistek" category. Bistek is basically very similar to Adobo, Savory/Salty and Tangy/Sour. The difference is the ingredients. For Adobo, it's Soy Sauce, Vinegar and Garlic, for Bistek it's Soy Sauce, Sour Citrus Juice and Onion. You might wanna try Bistek as well!😊

    No sugar in Filipino adobo please.😳 you are cooking sweet and sour chicken, and no onion either...
    Chicken garlic black pepper vinegar little water soy sauce, that is simple basic original Filipino adobo.

      In some parts of the country, especially visayas and mindanao, adobo variations are sweet. Adobo whether sweet or not is also called Humba.

      I put sugar in my adobo, too, ‘noh. There’s a thousand ways of doing adobo. Sometimes we even put coconut milk pa nga. Elevates the taste to the next level.

    Marion your dish looks great. Traditional Filipino Adobo does not need no marination. We simmer the cut up chicken with the mixture of loads of fresh garlic, soy, bay leaves, and crush peppercorns with some water. After simmering, then you pan fry it. Then you put it back in the pan add the cook sauce and add your vinegar. Cover the pan don’t flip, don’t mix, until the vinegar boils and cooks through. After that you can add brown sugar and add salt, if needed. The main purpose of boiling the vinegar is to avoid spoilage. Adobo is a dish that can be left out of the fridge for hours. When it cools down and place in the fridge a well cook Adobo [chicken or pork] should be good for 2 to 3 days without causing stomache after consumption. Most Filipino prefers Adobo because refrigeration is not needed.

    I"ve seen and tasted so many different ways of cooking Filipino adobo in my life and this is the first time I've seen regular adobo cooked with chili, interesting. Adobo in the visayan region of Philippines cooks it with coconut milk, they put those long green chili or small red chili, one of my fave version of adobo. I miss eating that. I cook my adobo with sesame oil, rice vinegar, lots of smashed unpeeled garlic that my kids fight about, & soysauce. When I want it with more sauce then I add onions and a bit of water .

    Marion, please do your version of “beef rendang”. Most of the recipes have too many spices (cloves, cardamom, star anise and cinnamon). I don’t mind the heat, but so many spices for a small quantity of meat?

    NO GINGER!! You want the Garlic as the main herbs to taste the chicken. NEVER anyone add ginger. Any Filipino will give you a "what stare".

    I’m Filipino and I’m so sorry sweet and charming pretty lady but that’s no longer “adobo”! The real adobo is pretty simple to cook and has very few ingredients, that’s what makes it unique! Maybe you should make the title ADOBO, MY VERSION! 😊😊😊

    Hey Marion can you cook "LAING"? Laing originates from Bicol Region in the Philippines. Filipino dish of shredded taro

    this is really a good take on adobo. i like how you seared the chicken first giving it better texture and locking in more flavor. most filipinos would just dump everything in the pot in one go.

    The Adobo that me and almost everyone I know make has garlic and no ginger and onion. I find that searing the meat wont give you that adobo flavour. I think this is an entirely different dish.

    I have all the ingredients but the only chili’s I have on hand are Jalapeños and Serrano peppers. Can I use Jalapeño in place of red chili?

    Squid Adobo (𝘈𝘥𝘰𝘣𝘰𝘯𝘨 𝘗𝘶𝘴𝘪𝘵 in Tagalog), one of the several traditional native adobo dishes here in the Philippines (others are Pork Adobo, Chicken Adobo, Beef Adobo, Fish Adobo, 𝘈𝘥𝘰𝘣𝘰𝘯𝘨 𝘒𝘢𝘯𝘨𝘬𝘰𝘯𝘨, 𝘈𝘥𝘰𝘣𝘰𝘯𝘨 𝘈𝘵𝘢𝘺, &c.), also tastes like heaven. You should try it, it's one of my favorite dishes here. 🇵🇭🇹🇭

    I hate it when people put Onions in Adobo. I like the garlic taste in Adobo and Onions takes over that taste. Its still part of other recipes for Adobo but I dont like it.

    Most of the adobo recipes I’ve seen are very basic, but not yours Marion. So even I used to add a bit of chilli and spring onion.
