Hi, Seonkyoung! I saw this video the morning it came out and made this for dinner that very night. I'm Filipino and I really enjoyed your recipe! Adding the sake and fish sauce really enhanced the flavor! I added about a tablespoon of grated ginger to the sauce to make it feel like my mom's. And I really appreciated that there was plenty of sauce to drizzle over rice at the end. Amazing recipe. Thank you for giving Filipinos a shout out and for helping other people get a taste of our food! ❤😁

I basically have been changed to the Philippine and Korean food and all the good stuff. And most of the recipes they had a coconut barbecue with chicken. And I'm usually not a chicken person. But I like what it's made just asking a simple question. Because I seen flaked or shredded coconut. And it was done by rice flour. And she's a good cook I just was curious about my question

Looks so good. No Filipino will ever say an adobo's not an adobo as long as you have the basic components of an adobo. If you want to buff up the adobo, you can add potatoes as well. My mom forgot to turn off the flame one time and the sauce reduced more than usual and concentrated into something magical.

I’m not Filipino, but asked many of them how they cook this dish and I took bits from all of them. First off I now cook it in an Instant Pot and it gets ever so tender. America’s Test Kitchen went to a Filipino restaurant in NYC a few years ago and the head chef marinated the chicken in 4 oz. of soy sauce, then fried it in a cold pan to brown it. Then that sauce went into the coconut milk. Next a Filipino friend in our church choir gave me some annatto seed paste made in her village in the Philippines. I’ll add Sake as you recommend. Another twist is adding diced potatoes to the mix. My family is from Shanghai and I was born in Macau and we put potatoes in our curry. They absorb the tasty gravy. Thanks so much for your version!

This is awesome. I’m going to have to try it! I’ve never made adobo without marinating the chicken first. Great video!
