Maşallah! I love güveç, it is delicious even without meat... Güveç is also popular on the Balkans (Bulgaria, Romania) and also here in Slovakia, where it probably got from Türkiye during the Ottoman times. Lovely! More recipes from the Ottoman times, please... We know it as "džuveč".
In Bulgaria we add bay leaves and allspice and summer savory in Turkey you add either thyme or oregano and parsley in Bulgaria we add parsley and dill sometimes and celery leaves

In Bulgaria we make lamb guvec with peas usually and potatoes sometimes with the base of peppers potatoes and tomatoes spring onion and fresh garlic we add spearmint but why not your herbs

I'm plant based so perhaps use mushrooms, lentils / chickpeas & black beans as protein source? How much water do you use to start the cooking process? What accompanies the stew? Rice, flatbread? It made quite a big pot - how many did the dish serve? 100 people?
100 people 😃 Not that much, it reduces with cooking. Can feen around 5-7 people. I add about 2 cups of water to cook the meat then didn’t add any more. The vegetable releases its water and no need to add more. Yes you can experiment with beans, maybe make patties like falafel and add at the last cooking time. Mushrooms would be nice too.
Sure you can, use deep dish pan, cast iron or any you have. Cook on low for long time until all the vegetables and meat are soft. If using beef again cook it first until tender and contionue to other steps

Balkans were under Ottoman Empire for hundreds of yrs and lots of cuisine style and way of preparing food is still used to this day.
