sorry for omit the process. soak the leaf gelatin into the cold water for 10 minutes. squeeze out of water and then microwave it for 10 seconds not more. if powdered gelatin, bloom in the 5 times of cold water and then maicrowave and use it.

Sorry, I've never used agar agar for cheesecakes. but I know this - when put agar agar, the amount will be needed half of gelatin. And this recipe has to be totally changed since agar agar needs a lot of hot liquids.

How did you prepare the 4g of gelatine? Did you use any water to dissolve it? Im thinking whether to use the lemon juice to dissolve it.

Tried it today, very successful!! The taste is great. It is a bit too sweet. I would reduce the 1/4 sugar next time.

Folding in whipped cream incorporates air into the batter :)
