    초콜릿 가나슈 위에 달콤하고 쫀득한 카라멜을 올렸답니다.
    진하고 부드러운 초콜릿 맛과 풍미 깊은 카라멜의 조합은
    맛이 없을 수가 없고 당 충전이 필요할 때 딱인 것 같아요.
    작은 조각 하나로 기분까지 행복하게 만들어 주네요.

    [재료 Ingredients]
    | 타르트 시트
    60g 무염버터
    15g 슈가파우더
    15g 달걀노른자
    80g 박력분
    10g 코코아파우더
    | 가나슈
    150g 다크 커버춰 초콜릿
    115g 생크림
    25g 무염버터
    15g 물엿
    | 카라멜
    70g 설탕
    70g 뜨거운 생크림
    15g 무염버터
    | Tart sheet
    60g Unsalted butter
    15g Powdered sugar
    15g Egg yolk
    80g Cake flour
    10g Cocoa powder
    | Ganache
    150g Dark couverture chocolate
    115g Whipping cream
    25g Unsalted butter
    15g Starch syrup
    | Caramel
    70g Sugar
    70g Hot whipping cream
    15g Unsalted butter
    [만드는 과정]
    타르트 시트 만들기
    1. 실온 상태의 버터를 섞어 부드럽게 만들고 슈가파우더를 넣고 섞어 주세요.
    2. 달걀 노른자를 넣고 섞은 다음 밀가루와 코코아 파우더를 넣고 섞어 주세요.
    3. 테프론 시트 위에 반죽을 올리고 비닐 랩을 덮어 약 3~4mm 정도로 밀어 펴주세요.
    4. 냉동실에 약 30분 정도 넣어 굳혀 주세요.
    5. 굳은 시트를 길게 자르고 냉장실에 넣어 두세요.(반죽이 무르면 다시 굳혀 사용하세요)
    6. 타르트 링으로 시트를 자르고 오븐 팬에 올려 주세요.
    (저는 타공 매트를 사용해서 누름돌을 사용하지 않았어요)
    7. 길게 자른 시트를 옆면에 둘러 붙이고 위쪽으로 올라온 반죽을 칼로 잘라냅니다.
    8. 예열 되는 동안 냉장실에서 굳힌 다음 165도 오븐에서 20분 정도 구워 주세요.
    9. 오븐에서 꺼내고 식혀 주세요.
    초콜릿 가나슈 만들기
    10. 다크 커버춰 초콜릿에 생크림을 넣고 전자레인지에서 30초 정도 가열해 녹여 주세요.
    11. 버터와 물엿을 넣고 골고루 섞어 주세요.
    12. 타르트 시트에 초콜릿 가나슈를 붓고 냉장실에서 1시간 이상 굳혀 주세요.
    카라멜 만들기
    13. 냄비에 설탕을 넣고 평평하게 한 다음 가열해 설탕을 완전히 녹여 주세요.
    14. 설탕이 완전히 녹고 갈색이 날 때 뜨거운 상태로 데운 생크림을 넣고 섞어 주세요.
    (생크림을 넣으면 끓어오르기 때문에 조심하세요)
    15. 볼에 담고 버터를 넣고 골고루 섞어 실온에서 완전히 식혀 주세요.
    16. 초콜릿 가나슈 위에 카라멜을 짜고 초콜릿으로 장식했어요.
