  • Oh my god!!! It’s been a while guys!!!!
    I didn’t expect that my next video would take this long 😆
    Even though I’ve been super busy with my hotel job, I did film my youtube videos during the time. But the thing is…. I failed all of them 😭 That’s why I couldn’t post it for several weeks.
    Hopefully everything goes well with my future recipe videos. I looooove creating baking videos so I’m not going to give up making them 💪
    Today, I’m here with a chocolate tart recipe. I hope you like it! By the way, I got the idea from Valrhona Instagram. They have amazing dessert pictures so please check it out! ( / valrhona_korea )
    Chocolate tart shell
    Icing sugar 75g
    Unsalted butter 150g
    Egg 30g
    All purpose flour 200g
    Cocoa powder 24g
    Bake at 325F for about 15min
    (Time can be different depends on your oven and the size of shells)
    *Tart ring size is diameter 9.5cm height 2cm
    Chocolate filling
    55% Dark Chocolate 200g
    Heavy Cream 185g
    Corn syrup (Glucose) 40g
    Unsalted Butter 38g
    *65~67g for 1 tart
    Milk Chocolate Montee cream
    Milk chocolate 85g
    Heavy cream 95g
    Corn syrup (Glucose) 5g
    Honey 5g
    Heavy cream 95g
    (It’s better to keep it overnight in the fridge but I didn’t have time so I only kept it for about 4 hours in the fridge!)

    그동안 잘 계셨나요? 저는 어젯밤 꿈속에서 한국에 있는 디저트 맛집을 여행하는 꿈을 꾸었… 답니다. 워낙 일이 바쁘다보니 현실에서 탈출하고 싶었나봐요. 유튜브도 너무 하고 싶은데 예전만큼 시간이 없어서 흑흑 ㅠㅠ 개인적인 이야기는 브이로그에서 더 풀도록 할게요. 기대해주세요!

    슈가파우더 75g
    무염버터 150g
    계란 30g
    중력분 200g
    코코아 파우더 24g
    160도에서 약 15분간 구워주세요
    (오븐 사양, 타르트 사이즈에 따라 시간이 달라질 수 있으니 유의하세요!)
    *타르트 링 몰드 사이즈는 지름 9.5센치 높이 2센치입니다.
    초콜릿 타르트 필링
    55% 다크 초콜릿 200g
    생크림 185g
    물엿 (또는 글루코스시럽) 40g
    무염버터 38g
    *타르트 하나당 65~67g
    밀크 초콜릿 몽테 크림
    밀크 초콜릿 85g
    생크림95g
    물엿(글루코스 시럽) 5g
    꿀 5g
    생크림 95g
    (이런 몽테 크림은 하룻밤 냉장보관해서 숙성(?) 시키는게 좋지만, 저는 시간이 없는 관계로 4시간 정도만 냅뒀어요. 그래도 괜찮긴 해요. 물론 하룻밤 냉장 해두는게 크림이 잘 올라오지만요 헤헤)

It's very relaxing that whenever I am studying and feel so stress, I would go to your channel and watch some baking videos 😂💜 Anyway, how do I temper chocolate using double boiler? I don't have a candy making thermometer to monitor the temperature of my chocolate too >< last time I made the Earl grey madeleine but failed at the chocolate coating 🥲 it doesn't harden at room temperature.... I used coverture chocolate too 😭😭😭 please kindly advice! 🙏🏻

      Thank you so much for your sweet words! I’m really glad that my videos make you relaxed!!! 😍 Tempering is not so easy to do at home to be honest. You can use coating chocolate (you don’t need to do anything. Just melt the chocolate and use, it will set with no problem) If you still want to do tempering at home, basically you melt chocolate to 45C and cool it down to 27C and warm it up again to 30~31C. You can do this job using double boiler or microwave. If you’re new to tempering you really need a thermometer! Otherwise, you can’t tell the temperature at all 😙

      제가 구매한 건 지름 9.5센치에 높이 2센치랍니다. 살짝 큰 느낌이 있어요 8센치가 딱 좋은 사이즈일 것 같아요.

      I got it from Amazon canada. It was like 26 dollars with 6 tart rings. It’s not the best quality but it’s not too bad! 😜

    This is the third time watching this video hahaha cuz i think im going to make it after i got my tart rings!!! but may i ask why do we need to add the corn syrup? because it will become more shiny? im really curious about that💝🥰🍫

    When I use these tart rings the bottom of the tart always puffs up too much, even if I poke holes first! Any advise? The only thing I can think of is maybe leaving the tarts in the fridge for longer before baking. Thanks! :)

      I'd suggest put some beans or rice [raw] in a cupcake liner/ parchment paper and bake with it. it provides weight, and the tart won't puff up

      제가 올린 레시피 양으로 충분히 큰 타르트 만드실 수 있을거에요 (하나만 만드신다면요) 굽는 시간도 늘려주셔야할 것 같아요. 물론 얇기나 오븐 사양에 따라 시간은 달라지지만요!!

      I don't really know what whipping cream is in your country. I can say that I really recommend you to make this recipe with dairy cream with 35% fat content because it tastes really good

    I tried this using 77% dark chocolate, milk chocolate and semi sweet dark chocolate together without adding sugar at all. I also added cocoa powder and espresso powder (half a tablespoon each) to the mixture before pouring it in.
