In case someone’s interested; I tried this recipe yesterday. I doubled the recipe right away because my tart pan is 31 cm. - I didn’t chill the dough for 8 hours, instead I put it in the freezer for 10 minutes - I used both dark and milk chocolate - instead of rum I put bourbon in the ganache - I didn’t have gold leaf, I put sea salt flakes and orange zest on top It was the best dessert I’ve had in a long long time. I recommend you trying this!
What kind of cream did you use? I see the recipe in the description says heavy cream for the ganache and whipping cream for the glacage, but the text in the video says heavy cream twice. I also made this with a 24cm pan, but I should have doubled the ingredients as well since the layer of chocolate was too thin.
I used 36% fat whipping cream in the whole recipe. Yes, you should definitely double the ingredients. Maybe multiple the ganache ingredients by 2.5 . My ganache layer was also a little too thin, it didn’t really fill up the tart shell. Just like 2/3 of it. The glaze layer was perfect amount and consistency though. It was still very delicious.

I baked the tart twice and it came out wonderful and delightful, but I didn‘t use rum instead i used a little bit of vanilla extract and a little bit of sugar for the sweetness, at the end i decorated my tart with berry varieties and luster dust in gold. My family and friends were really amazed ✨✨✨It‘s the best tart recipe I know so far, I followed the instructions exactly how he showed. I will also try his lemon cake recipe. 🍋
