Blueberry jam was on my eyeglasses, stove, microwave, cabinets, floor, and my clothes. So, when I can my strawberry preserves, I am going to use my stock pot. Great recipe. I notice that some canners mix the pectin with some sugar. If you add a little butter to the strawberries, it helps with the foam.

I wish I can eat strawberries, I'm allergic to them. My daughter and I tried canning peaches a couple years ago. What a chore that was. We basically did the same recipe as you just did, only with peaches. The amount of suger was too high for me. I havent found a substitute yet. I'd like to do this again.

Using bottled lemon juice is actually better because it has a consistent ph factor. Lemons will have a varied ph factor.

If you add 2 or 3 pats of butter, your foam will be very little.
You should Not use fresh lemon juice. Only use bottled lemon juice because the acidity is consistent.
