Today I made tamales with that dough, but I cooked the pork with red chili, the chicken with green sauce and they were delicious following my grandmother's recipe, also accompanied with guava atole.
Loved it! I made them a few years ago and put the masa to the “floating in water” test. Mine flunked, but still tasted great. I noted you didn’t bother with this step.

Does suet mean something different in UK? In US beef suet is beef kidney fat.
