This is special Marathi ritual for monsoon. Almost every household makes kandabhaji, for welcoming first rain after going through very hot summer . We even have a special day dedicated to this, in our calendar, called kandenavmi.
P.S. usually red chilly powder is added to mixture, little bit of rice flour for crispness, pinch of soda, carom seeds for taste.Also you are supposed to fry few potato slices, capsicum slices , handful of peanuts etc.mixing in same batter to have different varieties of bhaji/pakoda platter.

Kanda Bhaji and Tea is one of the most famous breakfast in India particularly when it's raining. Ensure the Oil is hot before frying bhaji otherwise it remains soggy from inside. I cooked Gol bhaji ( another version of Kanda Bhaji ) yesterday but it was not well cooked and remained uncooked from inside. Wishing to have a good journey in India.
@Gladiator_88888 the first few weeks fried was a little undercooked 😊, but luckily realised it soon enough to ensure the rest was well cooked. That gives us an idea of what to try next😊. Thank you for your support ❤️🙏🏻

just you can add carrom seeds locally called ova you can get them from local grocery shop put one teaspoon optionally you can add red chilli powder half teaspoon instead of green chilli these tastes best with tomato sauce

We don't add green chili. We only add red chilli powder, turmeric powder, ajwayan(don't know english name) and salt into onion. It is also called khekda bhajji. Khekda means crab. ❤❤

One trick to make the fritters more crispy is to remove them when half done and let them rest for about a minute and then fry them again until done. As a side note, we have a dish called Kadi pakoda (or Curry pakoda in English) which we relish with plain rice. North Indians love it.

Bhajia looks perfect. Now after seeing your video going to make bhajia for dinner and have Bhajia Bhat (Crushed bhajia mixed with cooked rice with small quantity of oil on top).
Bhajia Bhat is not eaten so much in Mumbai / Pune but is loved to core in Nagpur and Vidarbha region of Maharashtra.

There is no need to add water, after cutting the onion, add salt and chili powder, leave it for three to four minutes, the chopped onion will release water, then add coriander, gram flour,
As a result, the onion becomes crispy, with very less oil.

Traditionally we donot use rice flour in bhajia bater. At home it is always without rice flour. Only roadside chops use rice flour.
Also dip green chilly in bater and fry to make mirchi bhajia. They go well with onion bhajias.
Also you can slice few potatoes and make potato bhajia as well

Traditionally we donot add chopped 🌶️ in onion bhajia. So green chilli not requited. You can dip full chilli in bater and fry to make chili bhajia if needed

First add salt to the onions which will release water in which you can mix other ingredients without adding additional water, this way releasing the batter in oil will be easy and will have crispy onion fritters

One of the best Pani puris in town. Very clean & hygienic. They use bottled mineral water to make these. So very safe to eat Pani Puris at this place.
*2. Sardar Pav Bhaaji - (area - Tardeo in Mumbai)* -
The best and the most buttery Paav Bhaaji on Planet Earth.
*3. Bade Miyan - Late night place - is open till 3 am or so (area - near Taj hotel & the Gate way of India in Mumbai)*

For Kanda Bhaji, the onion should be cut vertically (so the other way, right).
Also, it should not be too thin or too thick. Up to half centimeter thick is good.
Washing onion is not recommended if you want crispy Khekda Bhaji.
For Khekda Bhaji (spiked ones) you chop the onion, spread little bit salt on it. Wait couple of minutes to draw some moisture from onion. It is this moisture that helps bond it with the besan flour. Few people add some water to the flour and some people don't add the water at all, they just use the moisture of onion. You can try both methods and select the one you like. So ones it's moist, mix it with dry besan flour. In this type of Bhaji, the proportion of flour is less or just enough to coat the onion completely. Literally spread the flour over chopped and moist onions and then mix it to coat it properly. Before mixing the dry flour, add little bit of red chilly powder (as per your taste) and crushed carom seeds (proportion just like red chilly powder) and cumin powder. Generally you don't add chopped green chilly in Khekda Bhaji. Rice flour is optional. I have seen food stalls adding even maida for extra crispness. But that's unusual. If you add maida, you have to add water.
For Gol Bhaji (the round balls type) you chop the onion in squares approx half to max one centimeter in size. Then mix it with thick liquid besan batter. In this type the proportion of batter is more than onion. The same salt, crushed carom seeds, cumin powder goes in the batter. In this type you have the option of using red chilly powder or chopped green chilly or both. Here you should add finely chopped fresh coriander. Generally the food stalls add baking soda in Gol Bhaji. You can figure it out if there are too many air bubbles/cavities inside and if it feels too light, soft & fluffy when you eat it. But yes, adding some baking soda would make this type of Bhaji better. Too much baking soda is not good for your gut health.
With the thick liquid batter you can make many different types of bhaji. Just substitute onion with other vegetables like thin slices of Ghosale/Gilka i.e. sponge gourd (not ridged one), palak (spinach leaves), cabbage, cauliflower, thin potato slices, small paneer cubes, chili pepper (use bhavnagari chili, it's the least hot one), etc. For some of these vegetables you can also add garam masala, chat masala, ginger garlic paste, chopped pudina i.e. chopped fresh mint leaves, lemon juice, turmeric powder, asafoetida powder, etc. for extra taste.

Turmeric not added, coriander is not to be added in Kandha Bhajji. Onions should be squizzed in the basen instead of putting water in it. You can eat bhajji with pav like Vada Pav, bhajji pav

4:40 here i also want to give you one tip...take a big bowl full of water and when you cut one onion in to two pices put it in to that bowl in water one by one the gas relising from onion will not affect on eyes...and one by one you can cut onion....👍🙏
