Just stumbled upon your video and it was such a pleasure to see you guys preparing and relishing a very traditional Indian recipe. It is indeed a lot of hard work to prepare this dish. You guys did it perfectly and it looked great, and I hope it tasted delicious. We in Hyderabad, usually prepare this for the Telugu New Year, which comes mostly during March-April and OfCourse it can be prepared and had at any point of time. But I am sure, our ancestors had a reason to have it during a particular time, but these days we get it everywhere and all through the year. Some suggestions if you are planning to prepare it again. You can add more of jaggery if you like it sweeter. You can add more of Chanadaal sweet in the dough and while preparing keep swirling it every now and then, on the pan, so it gets uniformly burnt/blemished as you said, and it is ok if it breaks in between, and I usually keep a dollop of the chanadaal sweet for extra sweetness and have it along. Kudos to the kids, for learning and explaining the significance of the festival and mom for working so hard. Keep travelling and exploring India and I hope you only have pleasant memories !!! Loved dining out, if they give more gravy instead of chicken u can order tandoori tikka dry separate and add with it,, it works perfectly as starter and both

U could also add some dryfruits inside filling in future

If, by chance the jaggery & thereby the sweetening feels a bit lacking to ur tastebuds then it can be enhanced while consuming the pohli by adding a layer of natural healthy HONEY beneath the layer of desi cow ghee for an exhilarating experience . Very often than not , the ready to eat packs of five pohlis available in the supermarket are found lacking in the sweetening deptt owing to the miniscule & often negligible size of the puran ( sweet filling) balls inserted inside the dough balls prior to rolling. This is due to commercial compulsions as well as ease of rolling the polis containing the sticky puran which tends to stick to the rolling pin & thereby tears the polis adding to the frustration. Hence , if ur pinched for tym , but relish the must hv polis any day any tym w/o going thru the hassle & frustration of actually making one , please go go go for those supermarket polis . NJOY😊

Dear. I observed many times the Mother use to smell the food..(here she smell the chhole dough) I am sorry but we as a Indian think this as a bad habbit.. U shouldn't do it unless it is leftover overnight food..
