Awesome video as always. I suggest a cooking channel of a humble five-star chef who shares many less-known Indian home cooking and hotel cooking tricks but after watching him you will need to view very few other Indian Cooking Channels. His content is in Hindi but you can easily understand the recipes through the subtitles and learn a lot quickly because of his teaching style. His channel name is "HONEST KITCHEN".

In india cooking is always been with nature, science and geographical location. Onion, garlic are not eaten on festival days because on festival days anything prepared is offered to God so this food is known as satvik food and onion garlic are considered as they grow materialistic wishes that is known as tamogun in our body so it's avoided and not eaten

It is considered that onion and garlic make us aggressive so it is avoided in fast period. The motive of fast is to keep our nerves system clam and mind calm so that we can concentrate on God devotion.

Maraika is right what she googled about garlic and onion... Generally onion and garlic and meat products considered as "tamsik foods" Which can be say vengeful food which increase heat in your body and one who used to eat meat products or onion garlic they are more aggressive in comparison with vegetarians... And hinduism is all about peace and meditation and it doesn't allow to eat meat but now people are also eating meat but thwy avoid to eat meat on festivals because indian feativals are dedicated to gods... In ayurveda there are category of foods like tamsik and satvik... Satvik food is that which is pure vegetarian and doesn't include onion and garlic...

After 10 days of Ganesh Festival, we will have a 9 day festival called Navratri ending with big festival called Dussehra. Navratri is a big celebration in Gujarat and Maharashtra. During these 9 days, again a lot of people keep fast. So, you can try another fasting dish called Upwasachi Kachori or fasting kachori. It is made from Bhagar and potato (outer coating of Bhagar stuffed with boiled potato filling). It is very very tasty. Bhagar is made from barn yard millet and also called as varai che tandul or Samak chawal.
Please do try. It is very easy dish with very little ingradients (almost same like sabudana vada, only thing is sabudana gets replaced by Bhagar / barn yard millet)

Sabudana wada is eaten specially on fasting
We eat it with a chutney
    Recipe
    Curd 1 cup
    finely chopped green chillys 4/5
Roasted peanuts powder 1/4 cup sugar &salt as per taste
    &a little corriender
    Just mix & ster
    Tastes amazing
Besides the probiotic bacteria s in the curd helps in digesting potato & sabudana. BecUse. Both are tough to digest.
Every indian dish is balanced as per ayurveda. Our ancient medicine & hygiene book. I love your videos
    God bless you
Try & let me know how you find that.

Iodine is added in Table Salt in india, as in a survey it was found that Indian's in some regions had a deficiency, in some parts the deficiency was overwhelming, several cases of a disease named "Goitre" (development of a lump in the throat area) were found. So the Govt. of India, inspired Indian's to eat iodised salt. White salt contains excessive sodium, which shoots up blood pressure, where as rock salts are comparitively balanced.

You can also try making Khopra Patties which is crispy and delicious potato patties filled with a spicy, tangy and sweet coconut, herbs and dried fruits stuffing.
Khopra patties are very famous in Indore (Madhya Pradesh), Parts of Vidarbha bordering Madhya Pradesh and in Surat (Gujarat).
If you taste khopra Patties (Khopra means coconut. In Marathi it is called Khobra) & Upawasachi Kachori, you will just forget Hash Brown. Both Khopra Patties and Upwasachi Kachori are much healthy as well, one due to millet (in kachori) and other due to coconut (in khopra patties).
