    Beta! I've seen many chefs on TV and TH-cam over the years but I've never seen anyone as detailed and skilled as you. Your explanations are detailed yet to the point, leaving no room for confusion or doubts. The first dish that I will make in this mixer is the Dosa recipe that you showed above. It's different and new. Something that I haven't seen anywhere else so far.

    You and your team raise the bar in each video with respect to the recipes and video shooting. My nani was a huge fan of desserts. She always wanted me to make ghewar for her.     Hello Sanjyot ji 🙏, I am a housewife and I like to try new recipes for my family. My kids LOVE your hakka noodles recipe and other Chinese ones. For that and other recipes I always check out your channel since last 2- 3 years.     Hello Chef. I'm a mother of 16month old baby and I started watching your videos when I was expecting her and I came across your channel on TH-cam. Once I had sent your Punjabi Aam ka Achar recipe on our family group and my mom made it for me. That was the best Achar I have ever had. And from then my husband and my mom also became your fan. My husband never watches anything on YT but he always watches your recipes and tells me how much informative they are and he sometime do try to make some for me. Today I was thinking of introducing dosa to my baby and my mom was telling me to make fresh batter at home for that and your recipe is here.     Loved your recipe 😋 Being a South Indian, I make dosa almost every week. I was really curious myself to see how you make it . Perfect method I must say. I grind it in a wet grinder though...The only difference between your batter and mine is that I soak 2 Tbsp of chana dal and moog dal ( it gives golden colour to the dosa) along with the urad dal and soak them separately and then mix it with the rice batter in the end. I will definitely try your method of soaking the dal together 😊
    If I get this Hamilton Beach India's Professional Juicer Mixer Grinder, I will first cook the super soft south Indian special " Mallige Idli with sambhar and also Davanagere Benne( butter ) dosa" 🤩

    I am a CA student. Also a big time foodie & hence like to experiment with various flavours.i have made a lot of dishes taught by you which turned out amazing!!
    When I get the Hamilton beach professional mixer grinder, I would first grind full spices coarsely to make spice mix for one of my all-time favourite Punjabi cuisine as the mixer we currently have does not do that job well.

    Hi Sanjyot! This is the 2nd time I tried making masala dosa using your recipe. The first time I used my mom's recipe for making the batter. It turned out much crisper without the addition of par boiled (usna) rice. Loved both the chutneys, especially the onion tomato chutney. Both my mom n I didn't know how to make the aloo masala so good. Yours turns out absolutely authentic and lip smacking yummy. Thank you for the amazing recipe.

    In karnataka, they spread red masala on dosa when it is on tawa. This red masala elevates the taste of dosa like anything. 👌

    Woww. This is PERFECT. And coming from Bangalore where dosa and idli are household breakfast dishes, and also as some one who makes quite good masala dosa myself, I am not saying this lightly.

    Being a south indian i can say u have nailed this masala dosa to the core😊 Authentic ingredients, authentic taste.
    Being a person who loves to cook,iv tried several recipes from YFL and i must say iv succeeded in impressing my family and close ones 🙂Each dish that you make is so intricately explained that there is no scope for doubt or confusion.Even a beginner can cook well by following these recipes.
    If i win the mixer grinder my first dish would be make masala benne dosa (really craving for good dosas in Mumbai).😅
    Also would make healthy smoothies for my parents who are diet conscious.
    I would love to explore a lot of other features if the hamilton mixer grinder as it will simplify a lot of my work while cooking

    Small correction
    1. Soak 1-2 TBL spoon of Channa Dal along with other ingredients
    2. Always add Salt, and Sugar after fermentation, and never before . The reason being Salt Slows Down the Fermentation process. Fermentation breaks down the Sugar, so add it less than ½ hour before frying the dosa.
    FYI
    For Keto Dosa just use Urad Dal, Methi Seed, and 4 TBL Spoon of Channa Dal.

      (Small correction)..This dosa batter recipe is what we follow in south India.. even the addition of salt is done before the fermentation and there is a reason for it as it discourages certain unwanted bacteria.. so get ur facts right before correcting others..moreover u could see the result of how good the dosa was..🤣

      @@Vinodp33 I'm a South Indian, my mom never added salt before Fermentation. According to her salt slows the Fermentation Process (it's a tradition I follow. Scientifically I'm not sure, if she was correct or not).
      She added it next day just before frying.
      The Sugar was also added next day just before Frying.
      The sugar is added to give it caramelized crispy taste. If you add sugar before Fermentation it'll ferment better, as good bacteria thrive on it. But during the Fermentation Sugar looses it's molecular structure (I know this because, I specialise in Keto Cooking/ baking. We use Sugar to Yeast in warm water, even though Keto sugar is Banned, that's because sugar looses it's molecular structure).
      Try it.
      My Grandmother never added Sugar, because traditionally dosas were never THIN & CRISPY. Dosa were thick, fryed in Ghee, never Butter (like what is called SET DOSA).

    I love this recipe. I use this to look up for dosa batter, for masala for chutney everything.
    And the hot water in masala technique is legit food. It tastes exactly like restaurant. So good. I would advice to use a little less water. It took a very long time for water to evaporate.. But the taste is still so good.

    Hi Chef, always loved your presentations, making recipes look easier and "visually" delicious, I am certain they must really be superb too, truly awesome camera work and final YFL style plating separates your channel from others.     You can use the water from which u washed rice and dal ....use it for ur plants which are not grown properly...we r using water which v cleaned vegetables and rice everyday...we had good results.... plants r growing very well ...

    Thank You Chef Sanjyot. Your dishes looks fantastic always and I was hesitant to try your videos. Have been watching for years but never got the courage to try. Recently I tried your paneer butter masala (all in one) and it turned out to be decent (i messed up a little though). This Masala dosa was so much inviting. So tried it. My wife does everything on dosa batter except the sugar (The key point). And she use a laddle instead of the bowl (we use that to make idli). We use cast iron seasoned tawa and she was scared not to use a bit of oil initially. Wife made the masala almost like that (she poured less water and hence it was 80-90% close not 100%).
    So, this time i took control. sprinkled some water like you/shops, used a tissue to wipe it off and poured with that bowl and spread-ed evenly. instead of ghee, i used hard butter and run all over the dosa when the wetness on dosa dried. It came out properly. Crispy as it needed and the color was so good. It was 100% like the video.
    Never thought that i would be making Masala Dosa like in my life. I ended up making it for my daughter and wife & my pet doggy :) . All loved. Now got more courage to try other dishes. Thank you Sanjyot. Have shared this recipe to few

    Hi 😊....you make very interesting South and North Indian recipes and also present it in an interesting way.
    One thing I would like to tell you that you can spread a layer of coconut and garlic red chutney on the inner side of the Dosa before placing the masala......tastes awesome.
    One more thing....... I use the same batter on the first day after fermentation for preparing soft and smooth idlis

Nice explanations and presentation we don't get bored. Thank you very much. If I happened to get Hamilton beach mixer grinder, first I grind Vada mixer and will make onion vada. A hot dish and 2 ndly I grind poornam mixer and will make Poornam boorelu ( a sweet which we make in festivals and offer to Lakshmi and Durga Devi ).     Your method of explaining is simple and elegant I will prefer to make recipes involving use of dry and wet grinder to find difference between Hamilton grinding and normal Grinding using domestic mixture - grinder.

    Chef just tried your this recipe of Dosa . Woww really it came perfectly crispy Dosa. Really I was searching from king time this Dosa proportion .     Chef I enjoy watching your videos. Find them authentic. As far as masala dosa is concerned I follow only my mom's receipe. One glass raw rice a tsp Methi and ek mutti each 3 types of dal. Soak for 8 hours and grind together. Ferment overnight. On tawa sprinkle oil and then spread a very thin dosa then add oil to edges. U get very thin and crispy dosa
