BBQ Potatoes on the Pit Boss

  • 3lbs of Russet Potatoes
    Peel
    Cut into bite size pieces
    Soak in cold lightly salted water for 20 minutes
    Take out of water and lay on paper towel and pat dry
    Put in pan
    Coat with Extra Virgin Olive Oil
    Then layer the BBQ rub or other seasoning of your choice
    Cut a stick of salted butter into pats
    Place on top of potatoes
    Cover and place in smoker at 300 degrees for an hour or until potatoes are cooked to your liking.
    Serve hot with your favorite meat.
