How to make the BEST Ghana Waakye aka Rice & Beans

    Ingredients List:
    Stew Meat (chunked) - I used 3 lbs
    Fish (steaks) - I used a medium Red Snapper
    Waakye:
    1 cups Black-eyed peas
    2 cups Jasmine Rice
    3-4 Waakye leaves
    Stew:
    1 Habenero
    4 small Habeneros or Scotch Bonnets
    4-5 small Tomatoes
    1 1/4 Onions
    1 Garlic Clove
    1" Ginger
    1/2 cup Diced Tomatoes
    5 Tbls Tomato paste
    1/3 cup Safflower or other oil
    1/2 cup tomato sauce (extra)
    Spices for Stew:
    Magi Cube (shrimp)
    1/4 tsp Cumin
    1/4 tsp Moringa
    1/4 tsp Oregano
    1/4 tsp Ultimate Umami
    dash Nutmeg (grated)
    Salt to taste

    I'm half Ghanaian and half Haitian. I enjoy food from both sides. Unfortunately, I can't make Ghanaian cuisine as well as I can make Haitian cuisine. I just discovered your Channel today. I love it!!

    Stella, Stella Stella... Thank you so much for this video. 🤗 We're pregnant with our first child and my wife woke up last Saturday morning and had a strong desire for waakye. 😫 As a caring and loving husband I had to cancel all my morning appointments and went to the shop to get the ingredients.     Just a suggestion, when I make my waakye I bundled my leaves in cheese cloth and add them to the water to boil for 15+ minutes before adding the peas for deeper color. I take the bundle out just before I add my rice. Makes life easier.

    Excellent tutorial. Thanks for telling ingredients first, changes along the way, and the length of cooking time. I made it, and it turned out great! I substituted a couple of the spices for other things I had on hand but it was still good. My husband is Ghanian, and he will be pleasantly surprised that I made this. Thanks for sharing your good cooking skills!

    I sell the waakye leaves. If you don't have waakye leaves, you can use baking soda, while you cook the black eyed peas. Stella a job well done. My so in law is white also, and he eats all Ghanaian dishes. Will cook this for him. Thanks!

    Stella I cooked waakye again and this time hubby was home and I had guest. My daughter made the stew. I oven baked salmon and steam zucchini and kabocha squash. My niece said aunty this is alot of cross cultural mixes but it's good 😁😁😁😁. I was far from traditional but everyone enjoyed the meal.

    stella do u know you can recycle the waakye leaves and use it for your next waakye. all you have to do is rinse it off with water once you removed it n freeze it

      Liline Lyma its sorghum leaves so check wherever sorghum is grown or african market

    hi Stella. great video. love the bambalika dance. memories.
    I now use kitchen aluminium foil to retain the heat when cooking jollof or any rice dish. to get more heat, u can also place kitchen towels on the foil
