  • Old video that I made and I finally go it working. I show the simple basics of how an offset BBQ works, and depending on the type of BBQ that you buy it might be rather tricky to keep a stable temp in the pit because of the cheap construction of the smoker. I hope this helps you understand how to BBQ right.

    I have been watching a lot of smoker videos for the purpose of building one myself. None have been as informative in describing how heat distribution works. My mind was racing with homemade ideas to replicate what you explained. Thank you for putting this together.

    Great video! Helped me figure out what to do with the beast I just inherited from my neighbor.
    All the other offset smoker videos were 15-30 mins so thanks for you condensed information, that being said, pace yourself no need to rush. Great visuals. Extremely useful information.

    I bought a chargrill offset smoker last year. This WHOLE time I've been putting my coal on the bottom bars off the cooking chamber, and my meats above it on the grates. I don't even use the smoker box at all. No water pan either. Can you believe I've made steaks, chicken, lamb etc with no problem besides constantly having to tend to the coal/wood fire, constantly moving the meat to move the grates, to reach the coal underneath lol. Smh and the food STILL came out amazing every time. Glad I learned all this today. Now I wanna experiment and use it the right way.
    Edit: And I use lighter fluid on the brickets lol
    Edit 2: No wonder I could never get the fire over 290 degrees lol. When I did it didn't last long.

      Most guys keep the stack vent wide open during the whole cook time. I understand the oxygen principle but wouldn't that cause the lose of excess heat? What are your thoughts?

      @@simflier8298 I have experimented and I haven't noticed a difference with heat loss. There could be more charcoal or wood consumption because the top vent is wide open.

    thank you for Showing.. this is good information.. I Built a smoker and I made it to be 2 in one.. offset smoker and revers flow... Of course you cant use both in the same run, ether or use... when this thing fires up at first with wood it goes into the food chamber almost like a rocket... I only used it once.. I need to seal the doors ( it does have gaps).. But I cooked one set of ribs and some chicken drums and they came out great.. All this info is good for making a smoker.. I should do a quick video on it..
