      Can anyone help me… I do not like the texture of almond flour the taste is fine I just don’t like the gritty texture .. can someone help me with a replacement that would be just as good?

      @@justiceforallnotjustsome I have tried Victoria's kitchen flours with the exact same ingredients (brands) and it does not have any almond meal / flour texture at all 🙂

    Grate frozen butter into your flour mix instead of using a blender or food processor. Fold it in so all the butter is coated with flour, then add your wet ingredients. It works the best, I’ve found.

    I appreciate Victoria because her motivation to create wonderful recipes is not weight-loss! She is reducing her epileptic seizures! The ketogenic diet was created 100 years ago for that very purpose. This is not a "flavor of the month" diet for her, but a necessary lifestyle. She has 4 little kids and has to make tasty meals that satisfy the whole family!👍🥰🤗

    Yes indeed. Every person making these life saving (for us on keto/ carnivore) recipes are spending a small fortune testing one recipe after the other. I, for one, appreciate every recipe I see. They may not be palatable to me or suit my taste. That’s not because it’s a bad recipe. It’s because my taste buds are different and I have a major texture problem. After I see the originals, I alter them to my liking and that’s what everyone else should do. You are relearning how to cook and eat foods that are more healthy for you. That doesn’t come easy or cheap. However being thankful and appreciative does!

      But make sure to use Modern Mountain oat fiber brand like Victoria for the true copy recipe of her flours. I have made all of her flours (self rising, perfected all purpose, cookie and cake flour, and her keto Bisquick) and the Modern Mountain brand oat fiber makes all the difference.

    I just stumbled onto Victorias channel and the first thing I made were the biscuits and gravy, they were amazing. I would love to see you make more of her recipes. She claims her flour can replace the flour in basically any recipe, I want to put that to the test with some family holiday recipes. You guys are amazing and I love that you give credit and respect to the recipe developers that put so much time and resources into their creations.

    I love how you give a realistic review of recipes. You tell it as it is. I really get disappointed when people say that some foods taste exactly like the one being imitated and then it's nothing like it. It takes away from enjoying this new thing that can replace the other. It doesn't have to be the same, just give a similar experience or feel. Really look forward to trying this recipe even though here in Iceland we don't have biscuits and gravy. It looks delicious 😋

    Yes I love Victoria's channel...I've made her flour and keep in my freezer. I've made her cinnamon rolls they're amazing, way better than fat head dough! I've made it in another option where I made the dough and spread the melted butter out onto the dough and then instead of cinnamon mixture, I did sausage...to make sausage rolls and these are now my absolute favorite!! I also use the self rising flour for any keto recipe that calls for flour, for instance "all day I dream about foods" brownie recipe, I use this self rising flour and do all other stuff in that recipe except baking powder, best brownies ever had!!

      My brain was thinking, "Why the heck are you using Italian sausage instead of breakfast sausage?" @ketotwins, most sausages are not unseasoned ground meats. That's very unusual. Almost all sausages have seasoning. It's *which* seasoning that makes them different.

      Same! I dislike Italian sausage so freaking much. I can’t stand the fennel seeds it usually has in it. But breakfast sausage is a requirement for biscuits and gravy! My family especially loves the sage version of Jimmy Dean.

    I loved the bit about being grateful for keto recipe developers! They’re spending all the money so we don’t have to. And their TH-cam/websites are FREE to us.
    As for the bottoms burning, I have the same issue with my oven, so I add another cookie sheet under anything I bake and that helps a lot. You can also wrap the bottom of your cookie sheet with foil to insulate it.

    I really like Victoria’s channel a lot. I would use finely cubed butter in this recipe and instead of warm cream I would use whole milk cold kefir. Tastes more like buttermilk.

    Italian sausage has a flavor I don't associate with gravy biscuit.
    The finished product does LOOK fabulous, though. I'm going to try it.
    I might also use whey protein powder in place of egg white in one batch....

    Victoria uses Modern Mountain oat fiber. She explains in one of her flour recipe videos why she only uses Modern Mountain oat fiber brand. It is light and airy and has the least oat fiber taste. It really does make all the difference. Hope this helps.😊

    Oh dang, totally on board for the cinnamon buns. The current recipe I use (once a year for mother's day) requires about 20 ingredients. It's delicious but I wouldn't mind trying something different.
    We always use breakfast sausage, the big tube of either Bob Evans or Jimmy Dean, never would have thought to use Italian sausage.
    And I'm a biscuit expert, a humble one at that 😁 if you try this recipe again but still don't have a food processor, try grating the butter when it's really cold, then just working it into the dry ingredients with your fingers. If you have the time, refrigerate that mixture for a couple hours before finishing up the rest of the steps. Also you might be able to get some flaky layers by rolling out the dough, folding it, rolling it again, folding it, do this at least 3 times. That works with regular biscuit dough, not sure if it would work with this one.
    Thanks for all the recipes though, my week for cooking is coming up and I want to try some new stuff!

    I have to confess, I'm a bread and butter girl. I could never go that long without one. I 💯 % agree with your opinion on settling sometimes for a alternative to the carb and wow gravy is always good too.

    Make your gravy look more "country" and deepen the flavors- mix in a little espresso powder. weird, but works!

    Ladies, I’ve made so many homemade biscuits, I used a pastry blender by hand to blend my butter and flour, so you may have over blended it, it doesn’t take much. What makes the biscuit flaky is the cold butter, just cut up the butter in slices and use a hand pasty blender, that’s what I plan on doing these when I make these. The high heat it to get them to rise quicker, maybe cut your time down some… I usually use a large iron skillet coated nicely with butter. I can’t wait to try these and make and use my regular technique.

    Y'all are really becoming experts in the kitchen. I'm so impressed with this video. Another thing that I have seen done with biscuits is to freeze the butter. You then grate the frozen butter and add to the flour mixture. This could be a hack if you don't have a processor.

    There is a tool to cut the butter and flour by hand if you have no food processor. It’s called a pastry dough cutter…or just use a knife to chop the butter and flour together. Food processors didn’t exist when I learned to bake.

    How do you guys feel about Carbquick? It’s not clean keto, but had 2 net carbs per serving. Does contain wheat. It’s the closest to Bisquick and makes amazing biscuits!

    I just wanted to say (though not related to this recipe) that I made fried pickles from dill spears that I first dipped in pork rind crumbs, then egg, then back in pork rind crumbs-they were SO very good! I figured that you two must've mentioned/cooked this, but could not recall, and wanted to share! Thanks, you two-I'm glad that I've got TWO channels for you that I can watch!

    Victoria's biscuits are the only recipe I've tried that I keep going back to even when I'm not strictly doing low carb. They are so close to the real thing that I crave them, but because they are low carb, they don't make me feel like binging. She is AMAZING!

    I'm not sure if anyone else has mentioned this, but allulose has a lower browning point and draws more moisture than other sweeteners. This will cause baked goods using allulose to get very dark and have a cakey, less crisp texture.

    That is so funny, I just came across her channel like 2 weeks ago? Maybe because you all were watching her channel and I am subscribed to yours so the algorithm suggested it to me? Anyhow, I love how detail oriented she is, she actually measures out her flour in grams! Thanks for sharing the biscuits and gravy (One of my all-time favorite dishes) recipe. I add nutritional yeast to the biscuits which turns them pretty yellow but also adds a cheesy-yeast bread flavor that’s pretty good. As far as the butter goes I usually freeze it and then use a cheese grater to make shreds quickly which makes nice size little butter pieces that melt inside the biscuits. Never thought about using her self rising keto flour in the gravy, what a great idea! :-)

    You guys need to try her new keto flour with the bamboo fiber. My son made some cheddar bay biscuits like Red Lobster and substituted regular flour for her new keto flour and was blown away. Been doing keto for 6 wks but even my non keto family thought it tasted like the real thing! And they are hard to please!

    I know it’s not technically clean keto, but I love the Carbquik flour. It makes buttermilk biscuits that taste pretty much exactly like real biscuits. Also makes killer pancakes and waffles.

    I'm not southern but I agree with all the posters recommending breakfast sausage with sage for this recipe. I recently tried Butcher Box breakfast sausage and I added it to all my regular orders. The best I've had.

    a trick with the butter is to freeze it then shred it with a shredder like you would cheese .. the cold will help with the flakiness or it does with regular biscuits..

    450 degrees is normal for biscuits. I'm a southerner and I've made regular biscuits hundreds of times. The temp always makes me nervous.

    Chop cold butter into cubes and then just use your hand to mix with flour breaking butter up. After you form biscuits put in the freezer for a bit. See if that helps with flakiness.

    My experience thus far has been that even when I've "taken a break" from Keto, and kind of raced to get some of my "forbidden favorites", I've been disappointed with them. With the real thing!!! Not everything, but quite a few things, and it has surprised me where I was disappointed and where I wasn't.
    Many of the Keto substitutes aren't going to taste the same, it's more rare that they DO taste like the originals (like the Mission Low Carb Tortillas!). But, they can appeal to all the senses and satisfy the craving for the original item, and that's key to sticking with ANY diet plan. Not letting cravings take hold and fester, and not letting yourself feel deprived.
    Thank you, Ladies, for inviting us into your test kitchen and basement (where I can almost see the little girls you used to be! LOL), and giving honest reactions to your endeavors. Your videos inspire me to continue, and help me find the tools to do so! 70 lbs. so far!

I'm trying her bread and cinnamon rolls tomorrow. I liked your comment about not expecting our old foods we were addicted to, to taste the same when made with keto ingredients!     I started watching Victoria about a month ago. I made her cinnamon rolls. OMGosh, best keto cinnamon roll recipe I have made. I can't wait to try the biscuits and gravy. Black tie kitchen has a great biscuit and gravy recipe too.

    I have health problems,1 of which is diebeties.I found that I had to be strict on NOT eating many foods.Since being on Keto / diebetic foods I have had health improvments,in a big way.Loosing weight,and keeping my sugar levals stable,I am over the moon.But being truthfull I find myself compairing recipes and tastes and finding I have to learn to cook all over again.Some is good ,and you have to let old flavours go and find new tastes good and even better,and forget the old tastes, and consider them poison to myself ,not healthy,and painfull if I eat them,( considering my digestive problems it is)..So thank you for your effort,and testing.

    I’m not sure if someone said this already but, the burning could be due to elevation. The higher the elevation the higher the temp would be to have a delicious baked product. Maybe you guys could try it again at a lower temperature, they look yummy anyways!

    Next time try a pastry cutter. It cuts cold butter into flour mixtures very well to come up with the crumbly mix you want. Yes please do the Cinnamon buns.

    For the biscuits, on baking shows they say the butter has to stay cold right before you put it into the oven to get that good steam and expansion in oven. sometimes they will grate frozen butter, then after mixing into flour they will chill flour in freezer a little before they bake.     I had to laugh when you said beige food because my nephew is going through a phase where he will only eat beige food so this should be right up his alley (minus the parsley) 😂😂😂😂😂😂 and definitely do the cinnamon roll recipe 😃

    I'm curious about how that "self-rising" flour would work in pancakes/waffles? You two are totally on about the differences between keto versions of breads compared to traditional high carb/gluten breads. There is a difference but once you have enough distance from the old style, the new one is acceptable.

    Agree! At the beginning of my Keto journey I ate basic foods only!! No recipes- grilled meats and fish, lettuce salads,avocados, lettuce wraps, deviled eggs. Etc etc etc. Oh and BACON🎉 I was I love with those foods. Now trying some of your recipes but they are a treat after cleansing my memory of the old foods 😂. I have never felt better!

    Those biscuits look very good. I have been using a cheesy biscuit recipe I have had for years which is a decent substitute but Victoria's look more correct in texture. Can't wait to try it. Thank you, ladies, for trying this out.

    You can use 2 butter knives to cut the butter. That is real old school

    I like Victories Self Rising Flour, it is handy when you want to make something fast. tonight I will be trying it with her Coffee Cake recipe. Oh a tip on making better biscuits is using cold chopped or grated butter and mixing it in by hand or if you have a Ninja using the Dough hook

    Hi, thanks for making this, it looked so good and I agree it needed the parsley garnish :)... but I wanted to let you know that in Victoria's recipe, she is using her 'plain flour' for the gravy, not self raising.

    I'm so happy that I'm not the only keto self that craves brown food. Thanks ladies for testing all the recipes. I've had so many keto mistakes in trying new recipes. I'm kinda thinking I'm getting skittish around baking. There's just my husband and we have to cut recipes in half or it'll be wasted. And my mistakes end up being so wasteful. Haha!     To make it taste more like the biscuits and gravy that you used to eat before keto - use country sausage instead of italian sausage. Italian sausage is good for things like spaghetti or an italian soup. Country Sausage is the flavor you want when it comes to biscuits and gravy. Just a tip for you all.

    You can order a food processor from Amazon and get it delivered in two days. It doesn't even cost that much. You can even deduct it from your taxes as a business expense.

      @@ketotwins gotcha, me too. Last time I got a food processor I also needed a blender. Got one with same base that operates multiple appliances...blender. processor, juicer. Just me myself and I now so I use a mini processor like yours. It work great. LOVE YOUR CHAFFLE RECIPE. USE IT EVERY DAY.

    You can 'cut' butter into flour using 2 butter knives, it takes a little longer but it works - when all else fails you were born with the perfect tools, your hands!

    I just found your channel and I am so happy! I have been binge watching your videos for days. It is so inspiring to see your transformation and definitely inspiring. You ladies are funny and informative and I have already printed out a few of the recipes to try them out.
    P.S. Have you checked out Keto Upgrades channel? She makes deserts, in fact she made snickers bars back on Oct. 23, 2021. She figured out how to make the nougat I don't know if that would be worth attempting but maybe one of the other desserts she's made.
