Back in the 1960s, I learned to clean leeks from a Julia Child broadcast. It saves more of the leak than cutting in slices, and it keeps the dirt off of your cutting board. You cut the leeks halfway through lengthwise, then open it into leaves under running water. You can open them halfway, rinse, then open the other half, rinsing one leaf at a time. Then you just fold it back together and slice.
Hi Ladies! Amazing as usual! Gourmet recipe! I have been making your provolone ravioli since you first posted it. My grandson asks for it on the regular. It is perfect for all types of fillings! Have found that if you are under time constraints or just lazy lol, you can skip the folding part and just lay another slice of cheese on top of filling to make a large round ravioli. You just need to place it back in oven briefly to melt top piece of cheese, so it will stick to the bottom one and that way your filling gets warmed up also! Love all your recipes and your videos! I made this tonight and my picky husband loved it! He's not a fan of provolone but kept talking about this dish being the first meal he's ever liked using provolone. He wants me to make it again. I used bacon instead of pancetta because I couldn't find pancetta anywhere. This was very good. Again, thank you ladies for doing all the hard work to share another delicious meal!
Made this today and it's brilliant! One of us can't eat pork so I subbed smoked turkey bacon which was fine. I left the provolone rounds out on the baking tray at room temp while waiting for everyone to gather (wanted to make the ravioli last minute) and they got soft enough to go ahead and add the tablespoon of filling and fold before putting them in the oven. Worked out great! THANK YOU!
It’s great with a chicken tomato herb and garlic filling too. I made smaller ones by cutting Gouda slices in half length ways and folding over the filling

I made this last night *finally* It's seriously epic. I think next time I'll use no sodium chicken broth. I also used a combo of shitake and Portobello mushrooms'. You guys were right, there's a ton of leftovers lol. I think tonight I'll just use the filling/sauce with some shrimp and throw it over some keto pasta.

Shape-wise, those raviolis more closely resembled pierogis or pot stickers, but in any event they looked awesome. Very clever to manipulate the provolone cheese like that, plus the filling and topping looked major yum.

I and my non-keto hubby loved this. Doing the prep for the filling and sauce was a lot of work at one time for me, so will make the sauce one day and then do the filling the day we will eat it. Filling can cool while I am heating up the sauce and cheese. Was also thinking I might make extra sauce and freeze it.
Looks delicious! I would be using that leftover filling as a dip with fried low carb tortilla chips. Love spinach artichoke dip...kinda reminded me of that. Great job!!
FYI it is easier to chop the leaks and then put them in a bowl of cold water and give it a swirl The grit will sink and then just scoop the leeks out. Also if you start chopping from the bottom through all layers and then just peel off one layer at a time as you get to the green part you will end up with more usable leeks.

I made this recipe and was surprised at how salty pancetta is (never used it before) I also hated to throw out the green part of the leeks. I watched another video from "Green Talk" and she made them into chips after dehydrating them in the oven...it took 8 hours in her oven and I live in Florida, THAT AINT HAPPENING. Since you live up north why don't you try it and see if its worth it and figure out how many carbs that measures out to be. Love you 2!

I saw a Short of a guy putting shredded cheese (mozzarella, I think) in a muffin tin. Then he dolloped about a tablespoon of marinara meat sauce on top of the shredded cheese, and then he topped the meat sauce with more shredded cheese. He called it a ravioli too. I bet that method would work for this too! Might be a little easier.

OMG, was intrigued by this provolone ravioli. A day or so ago I made a cabbage soup w/ ground beef Keto, which was quite thick. I so wanted to try this ravioli thing and was hungry for lunch. I quickly made the provolone rounds, following your instructions, added tbsp of soup, folded and threw into canned tomato sauce heating in my frying pan, heated through, added grated pecorino Romano on top when platedd. DELICIOUS and quick and easy. I really could not tell it was not pasta
I'm using scallions leeks are a pain in my butt and go thru all that prep and still find grit. Hard pass just a touch ocd about grit. Ok this looks so good I'll do it the right way. Love the provolone ravioli style brilliant

In culinary school, a common soup they teach is potato leek soup! Delicious yes. Leeks are a forgotten food for sure as I haven’t used them in over 30 years since Cul school. Wow that looks amazing ladies! I’m impressed. I really hate the smell of melted provolone. Will sliced mozzarella work too? What about Halloumi? Anyone get creative with Halloumi cheese?

Think I'd leave the provalone on the cookie sheet, and just protect the counter with a towel. I don't generally work too fast.

In culinary school, a common soup they teach is potato leek soup! Delicious yes. Leeks are a forgotten food for sure as I haven’t used them in over 30 years since Cul school. Wow that looks amazing ladies! I’m impressed. I really hate the smell of melted provolone. Will sliced mozzarella work too? What about Halloumi? Anyone get creative with Halloumi cheese?
We haven’t tried it but mozzarella should work!

As for this recipe, holy cow...it's awesome! The filling, the sauce and the provolone meld beautifully! I will make this again and again! My hubby doesn't believe it's keto!! Damn, less for me! Love you girls!
Ok, I'm back to tell you that I froze the sauce and filling a couple of weeks ago and tried assembling this awesome recipe! Super success!
