I have found that using a good quality pair of scissor is easiest to cut that material. I then put the cut edge away toward the peak of the roof and have the uncut clean edge hang over about 1 1/2 to 2 inches of the drip edge. This material is durable if attached to a plywood backing and screwed in the valley like you did.
