      That is a great line. His comment about getting with a friend who doesn't have rum balls but does have a food processor so that both of your problems are solved was literally LOL for me.

    In Romania we make them with biscuits and nuts, milk, honey, butter and rum. We put one dark cherry in alcohol in the middle and then roll them in shredded coconut and white normal sugar. They are great! And a traditional dessert for Christmas time! 💙🎉

      @@SvobodovaEva In one large pot you boil the milk, butter and sugar until everything is melted. You cand use honey instead of sugar. Then you add the cocoa powder, nuts and biscuits. You turn off the heat and let the mixture rest for 15 min. Then, you cand put the rum. You let this mixture cool down completely and then you form the little balls. They can stay in the fridge for at least 1 week, but we eat all of them on Christmas day 🙈😂

    I wanted to try this, but I'm not a huge rum fan so I made an adjustment.
    I minced up about 1/2 cup of dried Montmorency cherries, and replaced the rum with Kirsch.
    Let me tell you, I will be making these again! Not even so much because I like them, but my wife tried them and informed me I'd be making these again.
    We're taking them to our wine club Christmas party tomorrow night. I have promised to make a small sign informing people there's a nice little surprise inside.

    My grandmother (RIP) used to have a friend (Also RIP) who would make rum balls so incredibly strong you could get drunk off the fumes when you walked past them. It got to the point where people were asking why even bother making the balls and simply bring the bottle of rum along

    Use up the extra white chocolate by spreading it out then toping with leftover coconut and some nuts and/or dried fruit for some tasty bark

    I make a huge batch of these (sometimes two!) every year at Xmas. As well as rolling them in powdered sugar & coconut I also roll them in crushed walnuts. A tiny chunk of glace red cherry on top of the white balls looks great. A package of these makes an always-welcome hostess gift during the holidays.

    My husband makes these every year, but he adds walnuts and uses bourbon instead of rum. Bourbon balls are delicious!

    My Granny always had these in her house when I was a little girl. If I asked nicely, I was allowed to have one...and let me tell you, I could definitely taste the rum but didnt know what it was! 😅
    She made two different versions, one with dessicated coconut and the other with chocolate sprinkles on the outside.

    I did the math. Each rum ball contains 1.11 teaspoons of rum, probably not enough to affect most people. They look great. Thanks, Chef.

    I was about to say roll them in coconut, and then he did it! With dark chocolate, you'll get a better version of the Pina colada Almond Joy, just add a roasted almond.

    TIPS FOR BETTER BALLS:
    A blender works as well as food processor for the cookies then just mix the other stuff in.
    Also grind up some almonds or other nuts - but not too much you want the crunchy nuts and it adds nice flavor.
    Stir in the rum - or whatever hard liquor it all works. Add a lot more than the recipe says 😈
    Don't worry about it being too soft or adding too much. Just refrigerate it until it's firm. I love to juice up my alcohol balls good - those cookies will absorb it all if you give them time. I can get enough alcohol in these things to make you smile, giggle, and even enjoy your time with the inlaws!
    I like to make different flavors by using different hard liquors. I coat them with different things. Roll some in cocoa powder, make some snowballs except using crushed almonds instead of coconut, etc.. One year I found a cherry liquor and dipped in red candy coating.

      ​@@plantlvrI used to help make these as a kid. I'd smash the Nilla wafers in a plastic zip lock bag, then use a flour sifter to make sure it was fine enough.

      ​@@codenameajax7943ummm yes if you're making a no bake cookie, but a big nope if you heat it to boiling water or baking temperature because ethanol boils off at a lower temperature, 173*F so by the time your baked goods are done, or your marinara sauce is thickened, the alcohol is essentially gone.

    in cooking school, we used leftover cake trimmings and cakes that had to be eaten, they would be crumbles then icing and rum were added. it is not a hard thing to make.

    chef John, this is brilliant! there's second batch of balls in our fridge, the first one done on Thursday somehow disappeared! 😅
    as parents of two sick toddlers, thanks for great treat in this difficult week (running nose, kids sick just enough to stay home but healthy enough to destroy the house😅)
    and of course kids didn't get any try of them😊

    I love these. I have been making similar recipe for a few years now but I add lots of walnuts into the chocolate and add sugar into the mix. And lots of rum... I mean a lot.

    I love Chef John. I've tried a lot of his recipes and they are amazing. He's funny. Entertaining. But when doing stuff like this without gloves, it makes me feel a certain way. LOL!!! I am going to try these for sure. Just, with gloves on to roll them into balls.

    Colour the coconut green, put a thin layer of icing on a board or plate and sprinkle the coconut grass on top, I remember my mother doing this for birthday cakes

    I threw some vanilla bean pods (i had already scraped out the insides for recipes, but the pods will work fine for infusing) into a bottle of rye a while back and I think vanilla rye whiskey would be good in these too. Hmm maybe I'll give it a shot this year

    In leu of a food processor or friend you can just put the cookies into a plastic Ziploc. Then mix in the other ingredients with a mixer.

      I imagine a shortbread biscuit would be decent. A lot of recipes call for cake scraps. Something sweet and absorbent, that doesn't conflict with your chosen liquor.

      Biscoff or short read sound deluxe. I would go slowly, and see how they absorb things! I'll be using a gf biscuit...maybe ginger snaps.

    I use to play that Nintendo game with my youngest son. He was usually the Russian and he wanted me to be Lulu Valentine and he always won. My 90 year old mom likes rum so I may make these for my parents if they’re easy enough to make. I haven’t baked much in my life.

    ALL your recipes are great!!!!! And delicious!!! A long time ago, ( a-l-o-n-g), someone told me that rum balls were made with crushed walnuts as the basic item. Can crushed walnuts be used instead of the vanilla wafers? Thank you!!

      I don't know for sure but I thought the base had to be able to soak up the rum so cookies or cake trimmings as people have suggested. Maybe can mix some crushed nuts in but has to be enough cookie or cake to absorb the rum.

      Generally you add crushed nuts to the recipe - usually almonds but walnuts work as well, as in 2 parts crushed cookie to 1 parts crushed nuts. I blend the cookies in the blender till they're cookie flour and then blend the nuts just a couple times so there's crunchy bits. Then mix the rest by hand and use 2 or 3 times the amount of alcohol. Then put the soggy mix in the fridge for a day or 2 until it soaks it all up because I want my alcohol balls to have an *impact*. 😁

      I wonder whether some sweetened condensed milk with a bit of rum flavored extract might provide sufficient moisture without making it goopy. Maybe a reduced amount of liquid-in this case, sweetened condensed milk. Just a hypothesis; I’ve never tried doing it.

    I wonder could you use a liquid that isn’t alcohol? Like if I used say coconut water or maybe orange juice? Would that affect the consistency?

      You can, but it will need to be refrigerated. My dad made me some with black raspberry juice when I was a minor.

    How would Biscoff cookies do as a sub for nilla wafers? I can’t eat dairy, so my choice of cookies here is limited.

      I had the same thought! I think biscoff cookies would work well but I’ll be starting with less rum in case they aren’t as absorbent as nilla wafers.

    Ingredients
    1 (11-ounce) box vanilla wafers
    3/4 cup confectioners sugar, plus more for rolling
    2 tablespoons unsweetened cocoa powder
    1/4 cup mini dark chocolate chips, or finely chopped dark chocolate
    2 tablespoons maple syrup
    1 tablespoon dark rum(in the video he says 1/3 cup)
    For Coating:
    3 cups finely shredded sweetened coconut
    10 ounces white chocolate, chopped into small pieces

      Your pet peeve is weird by the way. My dad made these every Christmas. My grandma used to make 9 different types of cookies/candies every year. Do you insist on making your own sweetened condensed milk too?
