I made this today, and it was truly bangin' ! Subbed chili flakes for a chili, deleted the fennel (don't like it) but all else was as written. Both the cakes and mango sauce were both filled with many flavors, all perfectly balanced.
They looked divine!! Your book arrived today and I was browsing through it salivating as I was reading it when this video came though. Now I am starving!
I made this and my suggestion is to cook and drain the potatoes separately. By the time my potatoes were finished cooking in the pan the onions had completely disappeared. Also added minced sweet red pepper and some shredded kale from the garden to use them up and add color. Plus nearly doubled the spices to get it to my liking since potatoes and beans are flavor/spice sinks. Will make again.
"i've allowed to to cool ever so slightly...cause I don't want to burn my hands" ....as there's tons and tons of steam coming off as you handle it. I'm laughing so hand. These look amazing though
We made this for the second time tonight and it was epic!!! The flavour is built so well and this is becoming a go-to for a healthy, comforting, crazy-good meal!!!!

When I began cooking the mixture I went into a sneezing fit for about fifteen minutes. I thought it might have been one of the spices, but I was wrong. My sister arrived and she also began sneezing. so I knew it wasn't just me. We had to open all of the windows in the kitchen. I checked my freezer and found out it was actually a ghost pepper that I added. Lessons learned. I threw out the peppers and this is the last time I will EVER add a hot pepper to any recipe. I will add hot sauce at the table where I can control the heat. After two hours of cooking I was not able to eat my pancakes. :(

400g potatoes
1/2 tsp fennel seeds
1/2 tsp cumin seed
1/2 tsp ground coriander

1/4 tsp cardamom
1/4 tsp ground turmeric
1 1/2 tsp salt
Pinch of pepper
200ml vegetable stock
5 scallions (spring onions)
1 tin chickpeas (240g)
1 flax egg
3 Tbsp tomato purée
1/2 lemon juice
1 Tbsp maple syrup
* Some chickpea flour to coat
-----Mango Chutney-----
200g frozen mango
1 tsp rice wine vinegar
1 tsp maple syrup
Pinch of salt
1/2 tsp ground ginger
1/4 tsp chili powder
50ml water
