That $1000.00 meal looked good but was ridiculous for that amount of food, experience, or not, no way (even if i was filthy rich) would I waste my money on about 4 bites of food.
And that’s your choice but when you spend 250 bucks or more for a five course tasting menu, you actually get decently full. But the food is guaranteed to be the best food you’ve ever had and the service is guaranteed be the best. You’re paying for a lot more than food.

For an authentic dried seafood experience I would personally recommend the 'Dried Seafood Street' in Des Voeux Rd West, Sheung Wan. As the name suggests it is an entire street filled with shops that sells all sorts of dried seafood delicacies at a more affordable price! On the other hand If you want to eat at a nearby restaurant I would suggest the Sweetheart Chinese Restaurant inside the Ibis hotel, Sheung Wan. It is a less discrete location that serves great dim sum and seafood dishes. Supposedly the owner has a dried seafood shop nearby so the quality is maintained pretty well. For reference a decent and filling meal costs between 20-25 USD (150-200 HKD approx.) per person for a group of 4-6 people.
The drying the seafood actually intensified the flavor a lot. It’s not so much about changing the texture: Just like mushroom, very intense and also different flavor after it’s being dried.

14:02, Dried to rehydrated is like trying to eat it when it's FRESH! Only they want to trick you to think it's going to taste better because of the drying time... I've tried dried foods and sure, some dried foods are great but for the "most part" I think fresh is better.
It's a tried and true method. Some foods when dried are flavor bombs compared to being fresh. If you've ever had dried shitake or dried shrimps before you'd understand but these are flavor ingredients and not something you eat as the main course. Abalone and fish maw on the other hand are entree ingredients that people eat so they have to be rehydrated or they're inedible.
Loved this episode also! All those deliciously looking seafood! I've eaten those lobster with cheesy noodles and depending on the chef it can be a hit or a miss. Never tried those ultra expensive abalones, the only time I was aware I was eating a medium sized abalone at a wedding I wasn't impressed; just like a bit chewy mushroom and I didn't taste any seafood flavours unfortunately.
I really hope people take into consideration that there are always cheaper options. Just like buying saffron, Wagyu etc. dried Abalone can be bought for a far more affordable price, and also premium quality in Vietnam. Or other countries. You need not buy it from expensive brand markers.

I'm glad that he does the tasting because, some of the things he has eaten, I would never try. I like how he goes beyond tasting to explain why, he eats some controversial foods and that he does it because of the people traditions. That being said, I wish I was there to eat a bunch of seafood.

I buy fish balls and fish cakes to slice up to make top ramen. They're actually good. It has a rubbery feel but not fishy taste. It's just ground up fish meat and formed into balls. No different than meat balls.
Highs and lows in reality. There's a lot of good quality cheap eats bc nearly everyone eats out a lot. The thing is when things get high end it's gonna be really pricey

No drying really concentrates the flavor of umami rich foods like shiitake mushrooms, seafoods, some vegetables, salted fish.
It's a tried and true method. Some foods when dried are flavor bombs compared to being fresh. Abalone and fish maw on the other hand are entree ingredients that people eat so they have to be rehydrated or they're inedible.
