great find. In the 80's there was a dictatorship, a really cruel one, so we were almost cut off from the rest of the world. Probably the one mayo is Helman's, that brand dominated the market. We love the home-made mayo, with egg, but since a few outbreaks of salmonella, commercially available mayo made from raw eggs is banned. Now every sandwich place uses a pasteurized egg base, which has to be discarded at the end of the day. Food regulations here are brutal, in the interest of public health. There's even cartels of abalone smugglers that've been caught, because the species is highly endangered and there's quotas for local fishermen. That's why they are so expensive (and tasy)
I think there was some translation error. The prawn empanada was with slightly salty queso ranco not parmesan. They tend to use parmesan instead of the local names for a few cheeses.
Ah, I was wondering, because that was definitely not real parmesan/parmigiano... Parmesan is just very much not a melty cheese, but if locally they kind of use it as a generic term for some cheeses, it might explain how that term made it in the video.

Chile has many different types of seafood that are out of the ordinary: giant mussels (Cholgas and Choro zapato), giant barnacles (picorocos), piure, pinuca, abalone (locos), machas, navajuelas, giant sea snails, also algae such as cochayuyo, lúche, ulte, all kinds of fish and crustaceans of which for me the best is the Magallanes King Crab ("centolla"). Of course you can try it in gourmet dishes but if you want to try the most authentic flavor, it is best to travel to the south of Chile, especially Chiloé, where you can eat the traditional "Curanto". I'm from the Magallanes region, in Patagonia, where King Crab is caught, here we typically eat it on a base of lettuce with half an avocado in the center of the plate, stuffed with King Crab and the legs of the King Crab on the sides, all garnish with homemade mayonnaise.

Centolla is not rare at all 😂 in the south of Chile where Sonny travelled to Antarctica, you can buy a Kilo of pure crab leg-meat for 30$, that's cheaper than cheap beef in Germany ^^
Chile sea level is tops how the chart looks over everything to pick out the best fish ,crab.your plate looked amazing and delicious too. You put everything together with teamwork, and try to have everything where everyone can enjoy and have a better understanding of what you’re trying to tell them.
Fun fact, the Chilean Locos (Abalone) are extremely rubbery and basically impossible to eat. What they do is put them into an inner tube and bang them repeatedly on the ground to soften them up. Sonny seemed to like them but many Chileans think of them as an acquired taste.

Compare this video to the 100 dollars street food challenge: it was shot at a big market across the river, the food was simple, hearty, delicious, and cheap. The host did not expend all the money.

Just a small clarification: 0.34 - it is not a Chilean seabass (Patagonian toothfish) that American love. Most likely Corvina, Drum Fish, which in Chile called 'Chilean Seabass'. This has been a cause of many unhappy tourists who ordered Chilean Seabass thinking they would get the one like in the States, but being served Corvina instead.

King crab is lovely but personally I think a good old fashioned Dungeness crabs has far more flavour pound for pound. But the king crab obviously you get a lot more meat but insane cost.
