✔How to make SHITO/ Vegan/Vegetarian version/ Ghanaian Black Chili Oil/Sauce

    This recipe is dedicated to all Ghanaian Vegan food lovers and anyone living in the diaspora with limited access to authentic Ghanaian ingredients. Shito is a black spiced chili oil reigning from Ghana and is served with a variety of dishes such as rice and beans, fried savory dishes, etc. I have a previous shito recipe which contains animal protein linked below.
    INGRIDIENT
    * half cup of dry shiitake mushrooms
    * 1 cup of chopped fresh shiitake mushrooms
    * 1 cup of dry, roasted red chilis (blend to flakes
    * 1/4 of dry black seaweed (blend to flakes
    * 1/4 cup of black sesame seeds
    * 2 red onions
    * 4 habanero chilis
    * 1 heaping tablespoon of tomato paste
    * 3 sprigs of spring onions
    * 150g of fresh ginger
    * 2 garlic cloves
    * 1 teaspoon of aniseed
    * 2 cups of virgin coconut oil
    * 1 tablespoon of crushed black pepper (for shito)
    * 1 tablespoon of salt to season shito
    * Pinch of salt and crushed black pepper for marinating mushrooms
    * Total of 3 tablespoon of smoked paprika (1 tablespoon for marinating mushrooms and 2 for actual shito preparation)
    Begin by crushing all dry ingredients, namely: dry mushrooms, dry chilis, dry seaweed. Then, blend onions, ginger, garlic, habaneros, spring onions, aniseed with 1/4 cup of coconut oil till smooth. Next chop fresh mushrooms and marinade with pinch of salt and crushed black pepper, with 1 tablespoon of smoked paprika for 20 minutes. Then, fry marinated mushrooms in 2 cups of oil over medium heat for 12 minutes or until dehydrated, then remove from oil and set aside to be incorporated latex when shito is done cooking. Turn heat down to lowest setting, and in the same oil, pour in blended mixture of onions, etc, and tomato paste, and fry till moisture dries out or for 45 minutes, add salt and crushed black pepper, smoked paprika, black sesame seeds, continue frying for an additional 5 minutes and add rest of dry ingredients i.e. seaweed, chili flakes and fry for 5 more minutes s and finally add fried mushrooms and voila! Your vegan shito is ready!!!! Enjoy!

    I just love your recipes girl but I do have to admit I've had to postpone my vegan life because I just had to try some of your non vegan dishes. As you can imagine I've had rave reviews and my neighbour said I should start a catering company. 😉

    Ooo I love this vegan version of shito, so I’m wondering can you slow bake some crumbled tofu to draw out the moisture content and incorporate it into the sauce. Thx for sharing this recipe.
