Honestly, they've done such a good job with almost all of these bosses. Almost every single one has a unique soundtrack of its own now, something sorely lacking in the first game, and it gives them much more character. Really feels like a lot of the bosses are building on ideas from the first game in good ways, they seem challenging and interesting to fight. All in all, looks really good!
I think the most important thing I've learned by watching this is to immediately set the audio to Japanese so I don't have to listen to Tokichiro's English accent.
Fun fact, Maeda Toshiie is voiced by Nobuyuki Hiyama. A famed VA that is known for Voice acting Viral from Gurren Lagann and Link from Zelda: Ocarina of Time.

Why do people compare Nioh to Soulsborne games? Nioh is more like Ninja Gaiden/Devil May Cry game and it's much faster than all Souls games, even Bloodborne.
Because it is a soulsborne. Soulsborne isn't based around slow action, but committed stamina driven combat, which this game has. Beyond that, the level design and the buffing/nerfing abilities and the bosses with phases changes are also iconic to it as well. Soulsborne do a lot of things different, but in terms of combat, this game is one of them. In fact, I know people who dislike this game entirely because of the stamia and complain it's too much like souls because of it. That being the main complaint I've seen, only compares it more. There are still more comparisons, but those are the main ones.

Looks way better than Sekiro and Nioh 1 (and those are not bad games at all). Glad to see they have cut short the boring samurai fights and made the few ones in this game more interesting, and also made a more varied soundtrack for the boss fights (there was only one or two in Nioh 1). AWildBeowulf the more you use one weapon, the more you have its skill point. It's the only way to learn new skill. As the boss getting stronger throughout the play through, you don't want to change your weapons often because it has no skill.

Koei made another Shuten Doji before, in the orochi warriors series. And that one is a muscular male and part-orochi due to the bloodline
Most Yokai can turn into any form they like to devour human so I don't think gender matter that much

I do not equip Sloth in ng+ because it lasts after about three seconds or less.
