    4 large eggs [200 g without shell]
    Chocolate Mousse:
    8 oz bittersweet chocolate [225 g]
    6 tbsp of unsalted butter [85 g]
    3 large eggs, separated [60 g yolk + 90 g whites]
    1 tbsp brandy (optional) [15 mL]
    1 cup very cold heavy cream [240 mL]
    2 tbsp granulated sugar [25 g] - amzn.to/48VsDFh
    1/4 tsp salt [1.5 g] - amzn.to/3O5bvoS
    Whipped cream:
    4 oz cream cheese (cold) [113 g]
    1/3 cup granulated sugar [67 g] - amzn.to/48VsDFh

    2 cups heavy cream (very cold) [480 mL]
    Topping:
    Handful of bittersweet chocolate chips

    Hi! I've tried this recipe and this are my observations
    I baked mine in a 9" cake pan. If you wish to do the same thing, cut the cake recipe in half or 3/4 if you're into cake. Just level the cake after it bakes (it doesn't dome that much anyway) or you can use cake strips (there are diy cake strips options as well)
    With the mousse, instead of adding the sugar to the cream, I added it to the eggs whites. I then constantly whisked them over a ban marie just until the sugar dissolved (if you have a thermometer you can also use that). I did this extra step to ensure food safety.
    I already expected the whipped topping to be too much for the cake so I only made 3/4 of the recipe. I made a 9" and 6" from this recipe (so bigger surface area to cover with topping) but I still had excess whipped cream. So I suggest just make half the recipe. Also, you can definitely make it without the cream cheese but the subtle flavor it gives is worth the trouble adding it.
    I also don't have a cake ring so I just used my springform pan and parchment paper. It came out okay, but if you want a smooth finish you should use an acetate film.
    To Kurt, your recipe is soooo delicious!!! I might even say that it's better than the one I bought sometime ago. It's not too sweet, not too chocolatey, not whipped cream-y bland.

      You said you whipped the egg whites on bain marie? So it's like making swiss meringue then fold it into choc egg yolk mixture?

    Hi! Thank you for this recipe. I was able to make this with a perfect taste for the first time.
    🇵🇭 ingredients I used, dari cream, 5g Great taste coffee (120ml water), Dutch cocoa powder and 1 Nestle All Purpose Cream only for frosting (so much left for 2 packs). God Bless to both of you

    I love watching your cake videos! Do you think I can use the ring of a springform pan to support this mousse? I don't have a cake ring . Also, can I use parchment paper around the mousse instead of acetate?

      Hi Catherine - yes, you can use the ring of a springform pan, and use parchment paper instead of acetate. Parchment paper is not as stiff as acetate sheets, so the resulting cake may not have straight edges, but it will still be delicious! Hope this helps! :)

      If acetate sheet is not available, I'd suggest using a tall cake ring or the sides of a spring-form pan. Hope this helps! :)

    I started baking this pandemic of covid last june i started to watch on the seelcted video actually i choose the filipino version its because its very clear ti understand. But when i tune in your video i like it and its amazing for me because your instruction was very clear. My question only is can i use the all purpose cream like nestle cream for a heavy cream?

If the cream you're using has lower than 35-40% fat, it will not form stiff peaks.
      But since the whipped heavy cream is only folded into the mousse and used to make rosettes on top of the cake, you may be able to use it since the frosting is not used on the sides of the cake - it's okay if it's not as stiff and stable at room temperature. Hope this helps! :)

      Hi Rejim - you can try using all-purpose cream instead of heavy cream. All-purpose cream doesn’t have as high fat content as heavy cream, so it won't whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks.
      If heavy cream is not available, you can try substituting with canned whip cream (brands like "Reddi-Wip" or "Cool Whip" - doesn't need whipping) or coconut cream (needs to be whipped like heavy cream) in both the chocolate mousse layer, as well as the frosting layer.
      You can also try 14 tbsp of half-and-half + 2 tbsp of butter for every 1 cup of heavy cream needed - needs to be whipped. The texture might not be exactly the same as with heavy cream, but should be close enough. Hope this helps! :)

      Hi Nic. Glad to hear your chocolate mousse cake turned out well! The pound cake should have a pretty dense texture, and not overly moist (certainly not as moist as the death-by-chocolate cake). But it shouldn't be dry. I'd suggest next time baking it for less time than instructed in the video (maybe checking at the 18 minute mark... as everyone's oven is a little different) - as pound cakes can become dry if they are over-baked. Hope this helps! :)

      Hi Pilar - I'd recommend putting the whipped frosting in the fridge till the mousse is ready. Keep in mind that water will begin to separate from the cream with time, so I wouldn't suggest making it too far in advance. Hope this helps! :)

      Hi Jenny - I got mine online on Amazon. The one I used is 4 inches tall. The roll usually comes 4 inches tall in a 33 foot long roll. And you just need to cut it about 30 inches long for a 9-inch diameter cake.
      Depending on where you live, they might be available in home goods stores (like Bed Bath and Beyond in the US) in the kitchen/baking section. Or arts and crafts stores (like Michael's in the US), which also have a baking section. Hope this helps! :)
