  • This "Not so" classic meatloaf recipe brings together the comforting flavors of ground beef, onions, garlic, and savory spices, all cooked to perfection in my 80+ year old family passed down cast iron skillet that creates a beautifully caramelized crust on the meatloaf while keeping it moist and tender on the inside.
    Ingredients:
    2 Pounds ground beef (I use a lean 90/10 or 93/7 ground beef)
    1-1 1/4 Cup breadcrumbs (plain, seasoned or gluten free)
    1/2 Onion, finely diced
    1/2 Green pepper diced
    2 large eggs
    1/2 Cup milk
    1/2 Cup Pepsi
    1 Cup Pineapple salsa
    1 Tsp. Garlic Powder
    Salt and pepper to taste
    Glaze:
    1/4 Cup brown sugar
    1/4 Cup ketchup
    1 Tbsp. Mustard
    Mix together in a small bowl and apply 15 minutes before meatloaf is finished.
    Instructions:
    1. Preheat your oven to 350°F
    2. In a large mixing bowl, combine the ground beef, breadcrumbs, onion, green pepper, egg, milk, Pepsi, pineapple salsa, garlic powder then salt and pepper to taste. Mix well until all the ingredients are evenly incorporated.
    3. Preheat a cast iron skillet when preheating oven.
    4. Transfer the meat mixture into the prepared cast iron skillet. Using your hands, push meatloaf evenly edge to edge of the skillet.
    5. Place the skillet in the preheated oven and bake for 45 minutes, add the glaze on top and bake for another 15 minutes or until the meatloaf is cooked through and the top is nicely browned.
    6. Once cooked, remove the skillet from the oven and let the meatloaf rest for 5-10 minutes before slicing. This allows the juices to redistribute, ensuring a juicy and flavorful meatloaf.
    7. Serve slices of the meatloaf with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad. Enjoy the comforting flavors of this "not so" classic dish made even better with the magic of a cast iron skillet.
