- Gee Wash, you make a lot of cheesy potatoes dishes. Yer damn right I do! THEY'RE DELICIOUS!
So this week, we're trying our hands at improving a mid west casserole classic; Funeral Potatoes!
Let's see if some fancy technique, making things from scratch, and a couple extra hours is worth it; or if maybe we should just accept that some classics are classic for a reason.

CLASSIC:
1.5lbs shredded potatoes or pre-frozen and thawed hash browns
1.5 large white onions
1 10oz can of condensed cream of chicken soup
12oz shredded cheddar
8oz sour cream
Corn flakes
FANCY:
4 strips thick cut bacon
1 red onion
1/2 med white onion
10oz aged cheddar, grated
8oz plain greek yogurt
3 yukon gold potatoes
1/2lb shredded potatoes or pre-frozen and thawed hash browns
2 medium shallots
(Cornflakes. Not shown in video but HUGELY improves the final dish)
Soup:
1lb mushrooms
1oz flour
8oz milk/cream/non-dairy alternative
Thyme
