Gluten-free coconut melting moments (Bánh men)

    (Makes about 8 dozen cookies)
    7 oz (200 g) arrowroot starch (or tapioca starch) plus more for dusting
    1 tsp baking powder
    5 oz (140 g) sugar
    1 small can (165 ml) coconut milk
    a pinch of salt
    -----

    I remember when I was younger, my grandmother and grandfather would eat these with coffee. They didn’t have teeth so these were easy to eat since they dissolved. Every time I see these treats, I think of them and the memories we shared together. Good times.

    I love eating these because it's like putting a cloud in your mouth that melts to a yummy coconut-y-ness. :) I've not seen any youtubers make this recipe before so it's so awesome that you show us how to do these recipes, Van. And I can tell your boys love it....especially the younger one who went back for seconds. LOL!

    I have seen other recipes but yours is the first that calls for arrowroot flour. Not only it is gluten free, it also has lower glycemic index compared to tapioca which is a great news for folks with diabetes and folks who watch their weight. Well, everything should be consumed in moderation 🤓 but I will definitely try out this recipe. Thanks!!!

    Chị Vân ơi, mình muốn pha màu cho bánh thì làm sao ạ? Em dùng nước màu tự làm từ rau củ đc ko ạ?
    À em thấy nước cốt dừa sau khi trộn vs đường thì chuyển hơi đục đục giống bột sắn nấu lên. Vậy chị trộn có đun ko hay là trộn thường thôi?

    Hi Vân, mình làm bang bột huỳnh tinh và để qua đêm, sau đó vo tròn từng viên như cách của Vân hướng dẫn, nhưng khi đưa vào nướng thì bánh bị chảy xẹp lép luôn. Bạn có biết nguyên nhân tại sao không ? Cám ơn bạn.

      uhm... I'm actually not sure. I had never made these with cornstarch, I can't tell for sure how it will turn out. Sorry!

    Hi, I tried the recipe but it turned out so hard. I am not sure why was that. The dough rested 12 hours and bake at 320, then I let it cool down in the oven. Taste great but can't chew

      +Amy Tran uhm.... I have never tried Bot san day so I have no idea. It is different from bột huỳnh tinh/ bột bình tinh (Arrowroot starch) though. Sorry I couldn't help.

    Chao chi Van. Cam on chi da chia se cong thuc nay. Hom nay E lam Thu nhung kg Thanh cong. e phai nuong banh rat lau thi moi chinh va banh rat cứng (co le vi nuong qua lau). luc e nhoi bot thi bot cu bể ra mac du đã dung them 1 tbs nuoc cot dua va bot cũng rat uot roi. xin chi giup cho. ths

      +Daisy Phan Vo viên chỉ cần nhẹ tay chứ đừng ép mạnh quá thì bột sẽ vỡ ra nhé. Để bột nghỉ một lát rồi mới làm thì sẽ ít bị dính tay và dễ vo viên hơn bạn nhé. Làm vài lần có lẽ sẽ quen hơn với loại bột này. Nó rất khác với các loại bánh kẹo của Tây dùng bằng bột mì wheat

    Hi Vanskitchen, in this video u used arrowroot starch, and what if i use tapioca starch will the texture of the melting moments be different from using arrowroot starch? Please reply cuz i really want to try to make it. Thanks u

      +Sharon Ngo I think it would be the same texture. I used to make some cookies using tapioca starch instead of arrowroot starch in the original recipe and I could not tell the difference :)

      CHị để cả tháng không sao cả. Chỉ cần bỏ trong hộp kín, nếu bị khí ẩm vào thì bánh sẽ không còn giòn nữa.

    I did exactly as you mentioned. But I had to use the entire milk mixture. The texture was great but there was no coconut taste at all. Plus the cookies were extremely sweet although I put 1/3rd of how much you showed. Anything on the coconut flavour please. How did yours turn out? Is there the coconuty taste?

      +Sharon Ngo I would think because your dough is probably too wet so the cookies can not hold its shape. You can add more flour and knead again, or let the dough rest longer.

      Củ năng là waterchestnut à chị, dùng làm bánh này chắc cũng được, ở VN dùng bột huỳnh tinh. Bột huỳnh tinh chợ Mỹ có bán, nó là gói này nè chị www.images-iherb.com/l/BRM-00505-1.jpg
