Those dishes such beans, lentils, Chic peas and all kinds of legumes are a big part of the Italian gastronomy.
The little vegan tip at the beginning is much appreciated :) I would certainly pick a nutbased fake cheese over an oil based one so that it gives a richer, earthier flavor - but to be very honest I am always opting for the real one in case of Parmeggiano 🙈

I had no idea that Parmigiano Reggiano wasnt vegetarian. I immediately googled it!
“Calf stomachs are ground and then soaked in an enzyme extraction solution,” which makes the end products not vegetarian by most standards. While all cheeses labeled Parmigiano-Reggiano definitely contain animal-derived rennet, Parmesan can go either way.
Yup it's horrible stuff...the lining of a calf's stomach 😢😢 the vegan options are just as flavorful, no one needs to be eating a calf's stomach 😢

I would blend up the chickpeas after they cooked. I would make sure it was good and creamy then put it over pasta.

Parmigiano Reggiano actually isn’t due to using rennet in the production process. Rennet is usually taken from the fourth stomach of a relatively young grazing animal like calves, goats, or lambs. So because of that it’s not considered vegetarian
