I'm Australian and when my parents went fishing sometimes my mother would put fish through the hand mincer with bread and vegetables and egg and then coat with flour before frying in butter. Best fish cakes ever and a completely balanced meal.

There is nothing like fish fingers to bring the kid out in us. These I should think would freeze very well and reheat in the air fryer and keep crispy. Sort of dish if your just a bit hungry and cannot decide, quick and tasty.

Hi Rik, my daughter just saw you making fish fingers, now I have to make them tomorrow. I am sure they are delicious compared to shop brought. When I remove bread crumbs from the pan, I use a tea strainer, works perfect every time.

My nan used to make the fish sandys like this, she also made sandys with chips . When we were kids we never ate the fish sandys till we got older because when the sandys were cut it looked like bread with teeth. Just so u know my nan called sandwiches sandys. ❤❤❤❤

I love Barramundi, a French Chef I worked for years ago used to do the Barra with a really nice sauce, I like seafood, I think I'll do this during the week. Can't beat a fish finger sandwich...I want one now lol.

@@BackyardChef he used to make a type of Bearnaise sauce with a few capers, a thinner type to the usual Bearnaise, it was very tasty. One thing I'll give the French is they do great sauces. Henri and I worked together for about 3 years. Some of the very funny kitchen stories from those days with his very thick French accent were hysterical, my name for one...imagine how Pixie was pronunced with his accent, I used to spend half my night laughing at some of the things he came out with. Luckily he had a good sense of humour and could laugh at himself.

Many years ago, when my husband and I were dating (mid 70s), in Kalamazoo, Michigan, USA, there was a restaurant called Holly's Bistro. I don't know if it was a chain or not. Across town there was a place called Holly's Landing in a Holiday Inn Motel. Anyway, they had a dish called Sherried Breast of Chicken. It was so good.! Boneless chicken breast, breaded, with a sauce over it, served with rice. The chicken was so tender, but a little crunch from the breading, and the sauce, oh the sauce! I've looked online for recipes with that name, but haven't found anything. If you, or any of you followers have any ideas, I'd be very grateful.

Barra is the best of all white flesh fish. Once we got Barra wings (the fins cutoff with flesh on them) I treated them like chicken wings - honey soy on the BBQ - the best!

I love food and its history. Kids love fish fingers and I’m going to try doing these for my grandkids as we’re now being told how bad processed foods are for us, with all those additives and preservatives.

Rik looks really appetizing, I love a good fish finger, but (and you know there's going to be one) I've heard that you don't want to be using a non-stick pan for deep fat frying because the coating gets into the food. I'd love to hear your take on this!
