I think Ramsey isn't one of those pretentious types who thinks everything has to be crazy. He's the kind of "if it isn't broke, don't fix it" guy. Ketchup is one of those universal things that can't really be improved upon-- if something goes with ketchup, a five-star chef will say it goes with ketchup. Ramsey just modified a fairly simple idea to be his own, and that's really a good idea as starting out as a chef. Find things that work amazingly, and modify them to give them your own twist.
the fish fingers are okay, but as an american, i'd never tried a chip butty. i used sweet paprika, and dear god, bread in that paprika oil, butter, and those well roasted fries. I oiled the pan very heavily for the extra oil to soak in bread, and this is a legitimately good recipe. I roasted the chips at 250F for 20 minutes and it was nowhere near enough, had to do another 15 at 325, which is the temp I'd suggest. The only potato that I could get near the one ramsay uses is yukon gold, which was perfectly fine, though the individual chips were smallish, they taste fantastic. I'd HIGHLY recommend trying this with sweet paprika. I expected it to be bland, but there were so many subtle layers of flavor. The potato comes through, and the butter, and the bread, and the paprika, and the olive oil, this is one recipe I will make many more times.
I'm not sure but I think that Gordon use Celsius instead of Fahrenheit. I'm certainly not speaking by experience but does it makes any sense if you roast them at 390°F (about 200°C) or 480°F (about 250°C) for 20 minutes?
That does sound right, I just found a recipe version of what he did, and it called for 250f, which did not work. Definitely needs higher. I actually liked the smaller yukon gold potatoes, as they have a much higher surface area for seasoning, both to coat the chips, and flavor the oil.
His temperatures are Celcius -- they're something over half as hot as Fahrenheit, but don;t estimate. There will be some accurate conversion charts on the web. You couldn't cook a raw potato at 250F, it would take all day.

Celeste Yeung People don't understand there are goods and bads in everything. There are bad butters, bad margarine, good butters and good margarines. Look for the good fats and chances are either choice is a good one. Plus recent studies put natural butter in a good light over the years. Always research and not go with what your mom and dad might of told you when you were little, so much misinformation about food now days.
You are kind of dumb aren't you? xD The butter wasn't all absorbed by the bread crumbs, only a portion of it. The rest of the fat remained in the pan. Unless you are stupid enough to do shots with the rest of the fat that was used to cook the fish.
I sometimes make homemade fishfingers for my little girl... I use Hake... cut into strips and season - exactly like Gordon does... then dip into cornflour, egg wash, panko, back into egg wash, then back into panko. I then deep fry them. I usually make a lemon sauce for her to dip the fishfingers into... always goes down a treat.
As a Brit, you can really do it either way and it'll still be delicious. A chip butty on its own is a more common thing, so the fish fingers go on the side here.

Chip butty! Brings back good memories from my numerous trips to UK. The fish fingers are so easy to make too. I'm going to be a new mum soon and planning on making real meals, not using stuff like frozen fish fingers from the store. Thanks Gordon for the recipe! Big thumbs up.

for anyone who hasn't had a chip butty before, it is genuinely one of the best things in british food. I know it sounds simple but honestly, a soft chewy bun LATHERED with butter and throw some fries ontop, let the butter melt and seriously, it's one of the best flavours i've ever tasted (in british food). butter, chips and bread. omfg.
This just makes me wish I could afford to have him cook a meal for me. It's pretty awesome to see how passionate he is for cooking; he loves every minute of it.
I made these. Absolutely delicious. I don’t think I did it correctly, as the batter kept falling off, but they tasted scrumptious. I would recommend seasoning the chips with a bit more paprika and to cook the chips a little bit longer than what he says (3-5 minutes longer, depends of the size and how they are cooking). To be fair, he is making "home" stuff, he wouldn't dare serve this in his restaurants. This is from his series Ramsay's Home Cooking, and this particular episode was a "down the memory lane" thing, where he made stuff his mom used to make for him. He mentions in another episode in this series, how, for example, he wouldn't put too much of chilis in his restaurant dishes (because the patrons wouldn't like it), which is why he is happy to able to experiment with however much *he* likes for home cooking.
