Facing into the wind for hover seems pretty important for a lot of reasons. I was watching tutorials on vortex ring state and loss of tail-rotor effectiveness, and cross/tailwinds in a hover seem to be a factor in both of those conditions.
The problem I’m having is the collective is too sensitive. The window between too much and not enough is really small. If you have any idea on how to adjust this that would be great.
Generally, no, in hover you're going to be making lots of small corrections around the center of the stick, so trim won't be helpful. It's more something you engage in cruise so you don't need to have constant forward pressure on the cyclic.
I use the Xbox Gampad and after a few seconds the cloche freezes making me fall. And if I manage not to fall after a few minutes it still happens. With planes it has never happened and I play it since the release date 2020

Don't move and hold. Jab the stick back/forth/back/forth. Keep practicing. You will get it.

Good tutorial, but 20-30 hours to learn it? That’s without VR! With VR, it’s far, far less. Helicopters and VR go hand in hand.
