This looks so good. I have been cooking a breakfast casserole for about 45 yrs. On Christmas morning. This was my sons favorite. Now that he has his own family , we go to his house for Christmas breakfast. He cooks the breakfast and does a great job. After 51 years of marriage, my husband passed away a little over a year ago. My daughter in law lost her dad 8 yrs. ago. So now it is my son, daughter in law, my grandson, and 2 grandmothers at the table for Christmas breakfast. I think this Christmas I will make this recipe to take to Christmas breakfast and we will have 2 casseroles. We love leftovers. I am blessed to have the family that I have. I've made this before with leftover ham from Christmas dinner. I used a little oil to fry the onions to replace the fat from the sausage in the original recipe. It came out so good!

I remember having something similar to this about 14 years ago at a Volunteer function our nonprofit held. Very delicious. Thank you for sharing the recipe. Another good recipe to make and what I don't eat I can freeze foe later. YUMMY. But with me I woyld add more cheese. Can't get enough cheese. I also gave one of them meat choppers and love it. Use it all the time.

I love breakfast casseroles and agree that they're great for dinner also. I have a similar Lodge pan. It was advertised as a 3.6 quart braising pan. It's very versatile but also very heavy, which can be an issue when my arthritis is acting up. It cleans up like a charm.
Susan, I love our Lodge pans. I was blessed to find them on sale so I could justify buying a few. You're right that they clean up like a charm, but they are heavy! I guess that's part of what makes them so good. Thanks for the comment.

Hi Tom and Melissa: I have a similar casserole recipe that I have made for years. If it's slightly different than the one you made in this video. It uses bacon instead of sausage. The recipe I have originally used 6 strips of bacon, but that wasn't enough for my family's taste. So I used the entire pound of bacon, fried crispy and crumbled into the potatoes ! I got the recipe from David Venable's first QVC cookbook several years ago. And I think it's delicious ! Hope you and your loved ones have a wonderful Holiday Season 2024 ! This really is a versatile dish! Great as is, but also fun to jazz it up with bacon, ham, maybe some chorizo. I've done a version of this dish in a Dutch oven when camping ... feeds a crowd!!

I love making this. So easy and yes, you can make it like you like it. I have used leftover ham in place of the sausage along with swiss cheese. Another thing I love is, the recipe is so easy to halve when you only have 1 or 2 people to feed and it's easy to freeze in individual servings if you make a whole one. Perfect for mornings before work or school.

I have been making this for years my husband‘s favorite but I do use half shredded cheddar cheese and half Monterey Jack as a little spice, but not too much. Love your recipes.!
Donna, I actually prefer Pepper Jack Cheese, but the original recipe called for mild cheddar. I like the little kick from the cheese. That's the really nice thing about this recipe. It's so versatile that everyone can add whatever they like. Thank you for being a part of our channel!
Delicious. I make a breakfast casserole using 2 cans of crescent rolls or the crescent dough when can find it. Then sausage, beaten eggs cheese the the second can of rolls makes the top crust. Sometimes I add pepper and onions that I precook. Can add salsa or whatever you like in omelets.

I agree that this is a fantastic casserole, and I'll admit that I actually prefer to eat this for lunch or dinner. I'm gonna put some dashes of hot sauce on mine because I do prefer spicy. This looks wonderful. I can't wait to try your version. I have one that calls for ham. If I have leftover ham, that's one thing we make. I think it's a different version or method. I can't wait to try this method. With the recipe that I make, I always knew I could replace the ham with sausage. We live in New Mexico, so we have added green chile. If the green chile is too wet, it messes up the recipe, so it has to be very dry green chili.

When I was in the army, I must have cracked 1000s of eggs. Not once did I get a double yolk. Then, a couple of years later, I got 5 double yolk eggs in the same dozen. Haven't had a double yolk since. I'm looking forward to trying this casserole. Looks yummy.
Marie, my allergies are so bad this time of year that I'd never get to eat anything if I didn't eat after having a cough drop in my mouth. 😀 Kentucky is not nice to me in the fall. I live on cough syrup and cough drops in October and November. It's not fun but it's part of who I am. I do appreciate your concern.

I think you could make the whole thing and then freeze half of it. Or get two smaller aluminum casserole pans and make two then freeze one.

This looks wonderful. I can't wait to try your version. I have one that calls for ham. If I have leftover ham, that's one thing we make. I think it's a different version or method. I can't wait to try this method. With the recipe that I make, I always knew I could replace the ham with sausage. We live in New Mexico, so we have added green chile. If the green chile is too wet, it messes up the recipe, so it has to be very dry green chili.

When I was in the army, I must have cracked 1000s of eggs. Not once did I get a double yolk. Then, a couple of years later, I got 5 double yolk eggs in the same dozen. Haven't had a double yolk since. I'm looking forward to trying this casserole. Looks yummy.
Kimberley, I normally buy Jumbo Eggs so I sometimes find a double yolk. It's always kind of cool to find one. Thanks for the comment.

I would never wanna take a bite of that when I just had a cough drop in my mouth, because it would definitely change the whole flavor of that dish.
From what he was saying, it sounds like he kinda lives on cough drops during this time of year, so he's probably used to that combo.
Marie, my allergies are so bad this time of year that I'd never get to eat anything if I didn't eat after having a cough drop in my mouth. 😀 Kentucky is not nice to me in the fall. I live on cough syrup and cough drops in October and November. It's not fun but it's part of who I am. I do appreciate your concern.
You're right, @@bowed305. October and November are miserable for me if we're home in Kentucky. I keep my pockets stuffed with Hall's Cough Drops. If I go south, it all clears up and I have no problem. I'm trying to convince Melissa that we should move to south Florida. 😂
