    If you boil the peppers for 5 min before stuffing, they don’t take as long to bake and are more tender. I personally use red or orange peppers.

    If you like your peppers more tender you can steam them in the microwave in a shallow dish with a little bit of water. Place them open side down and microwave for 2 minutes.

    I boil the peppers to make them soft then you stuff and you only have to bake a few minutes to melt the cheese. So good with soft peppers!

    Perfect recipe!!! Instead of ground beef we used Italian sausage we had in the freezer, added diced mushrooms to the stuffing, added 10 minutes to your cook time and they came out perfectly! We will definitely be having these again! Thank you!

    What brand of marinara do you use?

      I believe I used Barilla or Bertolli. Just check the sugar content of either brand or whatever brand you decide to go with if you want to keep the dish Keto friendly.

    Can you freeze these after cooking?

      You can definitely freeze the filling, but I'm not sure how the bell pepper will react to being frozen and then thawed. The bell pepper might come out with a weird texture, but then again, I haven't tried it myself.

      @JustAddMoreButter I've done some research and I think I will parboil the peppers for 5 mins, stuff them with the cooked filling, then freeze them. When I'm ready to eat them, cook from frozen and top with the cheese near the end. I think the pepper may be a bit softer but I can't eat them all soon enough and it will be nice to have something like this ahead on the days I don't have time or the desire to cook.
