But finally I feel like I understand it after Onika explained everything. 😄
One thing I love most about this series is that the level 1 chefs still make a great looking plate, which is perfect for those of us who accept our mediocrity in the kitchen and it gives us a nice, realistic goal to aspire to. Keep up the good work epicurios!

Nope. Made Frank's recipe for my girlfriend for lunch- couldn't find duck eggs though- and it was quite easy. Duck confit here is easy to find and nettles are everywhere too.

Onika is a great addition! I wish she and Emily could do an episode together. Then add Lorenzo and Julie. Top it off with Frank reading his chickens bedtime stories so the eggs are made with more love to be extra delicious and Saul just being fantastic…. Had a delivery disaster at the restaurant once and the chef ended up using wonton wrappers. All the guests complimented the ravioli so much we've just done it that way ever since. 🤭

I appreciate Frank showing how to make traditional homemade raviolis on his channel, and I like his decision to use a different recipe for this show, just to spice things up.
Agreed. It's not just pasta machines - there is an entire arsenal of tools used for making pasta of different shapes, sizes, and consistencies. A pasta machine is one of the staples in any professional kitchen, that emphasises speed and consistency above anything else. This is a first for me though, seeing Chef Frank use an electric pasta machine - I believe he's used a hand-crank variant before on the channel.
Guys, i think I know why Frank is finally back. He completed his preparations for the 3levels in growing his own vegetables and raising his own own meat. So after his reserves are used up he'll be gone again. Or he'll just go back to his own channel and tease us with the star wars spoon.
This was probably the best, most informative episode ever. The way it was edited with Rose, and the questions asked, and the variety of the dishes was just perfect! And of course, anything with Frank gets 5 stars from me.
Onika's use of lasagna noodles is creative. I think I'm going to try that, but make a few adjustments. First I'll only boil the lasagna noodles once and then after putting the filling in and cutting them into squares, I'll sautee the ravioli with sliced cherry tomatoes, minced garlic, salt, pepper, spinach and top with cheese. I'll try that or maybe breading and frying the ravioli and serve it with a marinara dipping sauce.
I learn more from watching this show than I did in my culinary class. Im the kind of learner who understands better when given more explanation and information with evidences. I just tend to forget everything that I learned after a few days.
She has nails on. If you never wore acrylic nails and cooked before I suggest you refrain from commenting. She's actually doing pretty well for someone with an acrylic set. Normal ppl can't even turn the stove nob on with them.
Happy to see Frank using the KitchenAid attachment. I helped make ravioli for several hundred people once and we had ONE hand roller and 2 molds that made 10 pieces at a time.
The moment Onika whipped out those lasagna noodles for a ravioli challenge I became emotionally invested.

Had a delivery disaster at the restaurant once and the chef ended up using wonton wrappers. All the guests complimented the ravioli so much we've just done it that way ever since. 🤭

I feel like this level 1 is the most level 1, level 1 I've ever seen on epicurious. I do love her though.
I think it would be pretty interesting to have a blind judging at the end - the judge doesn't know which is the level 1/2/3 chef's food.

I think the "it's done when it floats" thing comes from cooking gnocchi, where often they are done once they float due to taking on enough water.
Using a pasta maker is not cheating cos that is literally what it's for. Lol. Esp if thinness is important.

Agreed. It's not just pasta machines - there is an entire arsenal of tools used for making pasta of different shapes, sizes, and consistencies. A pasta machine is one of the staples in any professional kitchen, that emphasises speed and consistency above anything else. This is a first for me though, seeing Chef Frank use an electric pasta machine - I believe he's used a hand-crank variant before on the channel.

Guys, i think I know why Frank is finally back. He completed his preparations for the 3levels in growing his own vegetables and raising his own own meat. So after his reserves are used up he'll be gone again.
Or he'll just go back to his own channel and tease us with the star wars spoon.

Onika's use of lasagna noodles is creative. I think I'm going to try that, but make a few adjustments. First I'll only boil the lasagna noodles once and then after putting the filling in and cutting them into squares, I'll sautee the ravioli with sliced cherry tomatoes, minced garlic, salt, pepper, spinach and top with cheese. I'll try that or maybe breading and frying the ravioli and serve it with a marinara dipping sauce.

I learn more from watching this show than I did in my culinary class. Im the kind of learner who understands better when given more explanation and information with evidences. I just tend to forget everything that I learned after a few days.

Yea, it feels like a lot of the level 1s were starting to level up.......that or in reality, we are actually lower than level 1.
I love how the show shows each step of level 2 and 3's pasta preparation, while showing level 1 throwing hers in boiling water.
Happy to see Frank using the KitchenAid attachment. I helped make ravioli for several hundred people once and we had ONE hand roller and 2 molds that made 10 pieces at a time.
