Some of its byproducts are known to be mutagenic to mammals but HMF itself has no carcinogenic or genotoxic properties. For reference, heating honey to say 150°C will increase its HMF concentration from around 25mg/kg to around 85mg/kg. Sounds like a big increase right? Coffee can contain anywhere from 1500mg/kg to 2800mg/kg. Anytime you create a maillard reaction or dehydrate something with fructose you're going to create HMF. It's another "scary" internet rumour probably conjured up by somebody who has no idea on the relevant matter and passed it off as fact, after hearing it in conversation somewhere. Hope this helps!
