Toques off to Rose for pointing out the make or break techniques for something as simple as meatloaf, to Emily for her tribute to Meatloaf (unsurprising that she’s a comedienne), to Lorenzo for being himself and to Chris for truly bringing his “A” game.
This episode was perfect. A clear division in the skill level required to make each level. Emily perfect as always don't change a thing, Lorenzo's food looked delicious and I want to cook with him. When Chris said he was making a meatloaf wellington I scoffed and said "Are you making your own puff pastry?" and then he comes out with rough puff recipe, the great vodka tip, grinds his own meat using a wonderful combination of flavors and then when I'm impressed enough he pulls out quail eggs and a terrine mold. Simply amazing, the editing at the end of the episode felt a little off though Rose felt like she was about to get cut off at the end and her segment is where all the magic is.
Highly skilled chefs can make an actual meatloaf and do make them with simpler ingredients and less fuss. What Chris made is not even close to being a meatloaf. You can add to a classic, but what Chris is doing is overcomplicating a classic.

Mix well. You want the mixture to be moist, but not falling apart. Add more salsa for moisture or crackers to firm it up as necessary. Flatten mixture out evenly in the bowl, make a line down the 40/60 line (like Lorenzo in the video). Preheat oven to 400°F. On a broiler or pan, take the 40% portion of the meat mixture and create a flat 1" oval. In the middle, layer the ham and cheese so there is minimum 1" from the edges of the meatloaf. I usually do 4 or 5 layers. Use the remaining 60% meat mixture to cover the entire concoction; you'll want to take small handfuls and flatten them out before building your exterior. MAKE SURE there are no holes or the cheese will melt out during cooking. Cook for one hour, take out and baste with ketchup, cook for 10-15 more minutes. Sometimes I throw in stuff like Cilantro and corn. Hope this helps!!
