I watch a lot of these types of challenges, and you're one of the very few remaining who hasn't raised their budget recently. Carrying the challenge over several weeks and building a "pantry" seems to make all the difference. Actually, maybe not all the difference. There are quite a few little unique ways you've designed them that set your challenges apart from all the others.

you don't need vinegar for sauerkraut, all you need is salt! I've made it a bunch, but you essentially just chop it up finely and then put it a bowl with salt and let it sit for a while, the salt starts to pull out the water. Then you can put int in a jar, but you need to let the gas escape. They have special fermentation jars, but I'm sure there's a way to do it without one. The longer you let it set the better but a minimum of 3 days. I also like to add things like garlic or caraway seed or whatever to flavor it. Super easy. Once you make it you will never need to do the storebought again!!!
Yes, the food culture differs between Europe and North America. I have been with my daughter-in-law and our grandchildren twice to San Francisco when she has been involved in projects, to take care of the children. One time 2 weeks and the other time 4 weeks. Our son has himself been away with work the two times since he is a manager in a company. We completely lose our appetite due to the enormous amount of food served, there has been food for 2-3 people in each order! In addition, the payment system was very strange, there was a price for the dishes that were sold, but in addition we had to pay quite a bit extra in tips. It turned out that we cooked our own food in the apartment her company had provided for us. And then everything tastes sweet, even the bread tasted like cake. Everything tasted sweet. The second time we agreed that I should at least bake the bread myself, but you know, even the flour tasted sweet! In addition, very much was very fat. Now the children are at school and I have had my last trip across the water. But my daughter-in-law will try to bring Danish rye bread with her next time, it stays fresh for several days and she can freeze them when she is where she is going to live. Otherwise, I saw a small film today about the difference between food produced in the USA and that is sold in both the UK and the USA. Oatmeal, instant from a company called Quaker Oats, Strawberries and cream. There is no strawberry in the US variety, there are apples which have added chemical flavorings and artificial colour, color number 40 which affects the ability to concentrate. The variant from the UK has real strawberries in it. Now I reckon that most parents don't give that stuff to their children, but someone has to buy it since it's on sale. I have great respect for the food culture of different countries and it is exciting to see what people eat in other places, but for most people the food is best at home :). Thanks for all the good recipes you come up with, you are a festive lady to follow and your mister sounds like he has the same good mood as you!

The closer you can get to the original food I think the healthier it is! I do have a sweet tooth, especially for maple syrup being a Canadian, but I do get tired of sweet all the time! Florence McCormick's Stuffed Cabbage Rolls Ingredients: I head of cabbage Filling: 1 cup cooked rice 1 tsp. caraway seeds 1 tsp. salt 1 egg 1 small onion, chopped 1/8 tsp. pepper Ingredients: 2 cups water 1 can tomato sauce 1 can water Recipe instructions: Core the head of cabbage by heating a kettle with 1 to 2 cups water. Steam whole cabbage 4 to 5 minutes. Next: Mix 1 cup cooked rice, 1 tsp. caraway seeds, 1 tsp. salt, 1 egg, 1 small onion, chopped and 1/8 tsp. pepper all together; mix together well. Stuff cabbage leaves with filling and make rolls. Put in kettle and pour over the top 1 can tomato sauce and 1 can water. Simmer 45 minutes.

Lorita's Gingered Carrots serves 4 Ingredients: 5 to 6 carrots water Ingredients: 1/4 cup butter 1/2 tsp. ground ginger 1 tsp. sugar Recipe instructions: peel 5 to 6 carrots and slice. Cook in a small amount of water until tender. Drain. Combine ground ginger, sugar and butter with cooked carrots. Heat over low until carrots are warm & coated with the sauce. Sprinkle with fresh parsley if desired. serve immediately. I have been making this since I first got my first Rival crock pot and this recipe was in the recipe book that was included maybe 30 or more years - I now use Panko crumbs instead of bread crumbs usually
Bachelor Stew (serving 6)Rival Crock-Pot cookbook Ingredients: 2 lb. Beef Chuck 1/3 cup dry bread crumbs 1 teaspoon salt 1/8 teaspoon pepper 1 teaspoon leaf basil 1/3 cup quick-cooking tapioca 1 can (4 oz.) sliced mushrooms or stems & pieces 2 cans (10 3/4 oz. each) condensed Tomato soup 1 cup beef broth or water to rinse out the can from soup. 1 large onion, cut into eighths 3 carrots pared, split lengthwise and cut into 4 inch strips 4 celery stalks, cut into 1-inch pieces I usually add 1 or 2 potatoes pared & cut to about the size other vegetables 1 teaspoon Kitchen Bouquet I have used other sauces instead or Worcester sauce.
Recipe instructions: Wipe beef cubes well Combine bread crumbs with salt, pepper and toss with beef. Place coated beef cubes in Crock Pot and other ingredients; stir well. Cover and cook on Low setting for 10 to 12 hours. (on high 3 to 4 hours). I like to put it together in the evening and let it cook all night or in the morning and forget it till dinner time. I love the Harvest Loaves because you use what ever fruit or vegetables you have on hand. Recipe instructions: Preheat oven to 350 degrees. Grease and flour 2 loaf pans 9 x 5 x 3 inchs. Beat eggs, oil, apples, sugar and vanilla; on low speed. Add everything else. Pour into loaf pans. Bake 55 to 60 minutes. Refrigerate left over bread. Can substitute for apples; 2 cups shredded carrots & 2 Tbsp. grated orange rind. or 2 cups shredded zucchini squash or 2 cups shredded sweet potatoes.
You’re right! Great tip 👍🏼🙂 I do usually save the skins from the onions I grow myself, I’m just not in the habit of saving store bought skins but I will definitely try to remember! It does make a lovely broth colour!
Actually a Polish dish is the cabbage and onion fried in butter with salt and pepper and onion powder if you want. You fry it till cabbage and onion are soft and lightly browned.
That sounds wonderfully simple! I love cabbage and onion just fried with bacon grease or sausages so I wasn't surprised that they burgers turned out just fine in my opinion :D So many great recipes in Polish cooking I've found! Thanks for sharing!
Quick suggestion when it comes to packaged meats. The Buddig you picked up is usually 4 oz of meat. If you quadruple that, to make a pound, it makes it $6 a pound. In the deli, you can usually find meats on sale that will be $5 a pound or sometimes less. I would personally go for the deli meat, as the quality is usually of a higher level. Used to be that the packaged was the cheaper way to go, but more and more I'm seeing the opposite is true.
I have to agree 1 pound of ground beef makes a ton it's only my hubby myself and our 17 soon to be 18 in 2 weeks son and I buy the giant log and a 10 pound log feeds us good spaghetti meatballs chilli macaroni and ground beef burgers tacos ect. I get like 12 sandwiche sized bags of ground beef it looks like a little.but it's not
It can really stretch! I’m always amazed at how much less we need with just my husband and me now that our three children have grown and left the household. Teenagers can eat a ton of food! Im thinking about starting to package 1/2 pounds instead of pounds in the freezer…
Could you make falafel out of the split green peas? You know you can make Naan bread for just pennies! Also, saw where you can make hummus out of those peas.
Hi! That cabbage was so frustrating but it turned out pretty decent LOL I didn't have any lettuce anyways so...problem solved haha! I love mushy peas in several different forms, there are quite a few recipes around but this one was good with garam masala this week :) You'll have to give it a try!
The rolled oats cook for 8-10 minutes and the apples were soft-ish. It depends on your apple, of course, but sometimes I’ll fry them first in butter and then heat them up with the water and THEN add the oats if I want a really soft apple 🍎
Hi Jessica, we are a dairy free and egg free family. The fritter recipe that I use is half a cup of self raising flour and half a cup of milk of choice. Stir into a batter. Then add fillings of choice (eyeballing here but usually about a cup's worth of filling). Then fry off in oil.
Not sure if your stores carry things of Mexican crema if you ever find that on sale it's a good milk and cheese substitute.😊..if you have mayonnaise that can be a egg substitute in baking as well as meat balls...haha here's a cheap dessert a cheap yellow cake mix and some apple sauce and chopped apple voila apple dumpling cake or a cheap milk chocolate cake mix and a cheap chocolate chip cookie mix and cheap frosting..instant chocolate chip cake..you'd be surprised what good deserts you can make for under 4$ lol😅
Top your burgers with your fried cabbage and have cabbage burgers 😅..haha when it comes to fritters the same batter you'd use for corn fritters you can use for cabbage or potato fritters..oh fried coleslaw you made and it's a staple in places that makes cabbage burgers..cabbage burgers are a German and Czech food in the states..like the Midwest and parts of the south like my area..you didn't invent anything you just accidentally stumbled on hot coleslaw used in cabbage burgers😅lol it still looks yummy and I wasn't being rotten lol..
I love how you show everything, both the good and the bad. I wonder if the pierogi strips could be fried into something crispy? Also, rice can be helpful for budget recipes. It absorbs flavour well and a lot of ingredients can just be thrown in with the cooking rice.

Brown sausage set aside in the same pan stir fry cabage slaw/carrot mix. Mix sausage and slaw together. Put spoons full of mix in egg roll wrapers. Place in 325 degree oven for 15 to 20 minutes. Yummy 😋
You certainly can interest me when your challenging yourself! Everything looks good and I've never heard of mushy pea toast but am going to give it a try. Looks filling!
Mushy Peas is a British dish, originating in Nottingham (home of Robin Hood). They eat a cup of hot Mushy Peas by itself at their annual fairs, and at home, and it's popular with fish and chips. 😊
I do enjoy watching your videos. Cooking using alternatives and thinking outside the box when creating recipes is a good thing to know how to do. Thank you for sharing your challenges.
I have an idea. What if you create a very basic, apartment balcony sized container garden this summer. Then maybe do a few of these 21 dollar challenges while using the produce from that garden. You could maybe calculate how much money you can save even from a tiny garden. Obviously, it won't be a lot and would only provide a little food for a couple of months, but every bit counts. Even a few fresh greens and herbs can seriously brighten one's life when on an extremely tight budget. It might be interesting to explore if it would even be worth doing after having to purchase soil, seeds, and perhaps fertilizer. I can't say for certain that it would be at this point.
I agree that any chance you have to plant some greens and veggies will help out! You're right that starting up something like that requires money up front even if it's just soil and seeds but I could look at it and see if I can add afford to add something to the budget! I think it's a great experiment idea! :D
@Jessica Wanders I suppose it could even become an entirely separate challenge. Not that your channel actually needs anything new. You're doing a fabulous job entertaining and inspiring us as it is. I think I'll keep killing time while recovering by spewing the contents of my poor bored brain all over your comment section for a while longer. Boost engagement and all that... I've suddenly become extremely invested in seeing you make that desert you promised us.
Nice ideas. I’m seeing in the leftovers, cabbage and noodles…with pierogie pieces, veggie soup with or without either noodle. If you get eggs, French toast. Very curious what you see. Good luck on meat deals! I just 94% ground beef for $3.33 a pound. I bought a lot. If you get chicken, chicken noodle soup. Yum! Did you start your gardening yet. Too cold here in USA (Pennsylvania).
Hi Carol! I am thinking about a soup with those noodles, hopefully I can grab some chicken this week! French toast would be a great treat :) Spring is really holding on this year. It's still chilly in the morning with frost sometimes...soon enough though!
Last summer I got a rutabaga which I saved the skins and added to my freezer stock bag. I’ve even added the stock of my cabbage to it then. While back I used up my freezer stock bag to make veggies broth. It was really good.
Sometimes I find cabbage and other strong cabbage-y vegetables can turn my broths a bit sour(?) so I normally don't save them but I've seen loads of people use them so maybe I should give it another try!
I bought 10 quarts of almond milk today at 28cents a quart. Shelf stable kind and it will last a long time. Don’t forget deals at Walgreens as that is where they came from along with 3 gallons of fruit punch at 38 cents a gallon. They were both on sale at 90 percent off. I am a big sale buyer too!

Sadly, we dont have Walgreens in Canada. We used to have a liquidation store here. I was heartbroken when they closed. I found so many amazing deals on food there. There may be something equivalent where Jessica lives. I don't believe she's nearly as rural as I am. That being said, maybe shopping at a place like that would go against the spirit of the challenge in her eyes. Perhaps she wants to stick to the types of stores that most of us have access to. Lol, I'm pretty much just babbling at this point. I've been sick in bed for a while and getting bored.
When you need to use the bacon grease just tip the jar upside down in the pan as you heat it up and it will melt down into the pan. Make sure you use a potholder to pick up the jar once the grease is melted out.
Good idea! You're right, of course, because I didn't let the cabbage sit with salt it WAS still full of water! I did add some flour but clearly not enough for the amount of cabbage LOL

Great video! Cabbage is an inexpensive winner that stretches so far! And it lasts in the refrigerator so well. Keep on doing what you do....I get ideas and inspiration weekly! Hugs!
I would have just turned the cabbage patties into a stir fry. Plus, if you had made a freezer slaw ( that last a week in the freezer), would have been good with your burgers. Also, you could have chopped up the cabbage mixture worked it into your patty mixture would have made it moist . Have you ever tried toasting your bread, then spread both slices with jam or jelly, then sprinkle with some pepper seeds and top with some cheese. Place in the oven to melt the cheese. So good for breakfast with a cup of coffee. Yes you can freeze the stuffed peppers.I was watching Jamie Oliver. He made some meatballs out of about the amount of sausage you have…added some oregano as his seasoning with S&P along with some moistened bread. He made four servings out of them by turning them into Kabobs! Alternating the meatballs with onion and bell pepper pieces. He served it over rice I think😮… It was his series of cheap, but tasty dishes for durning this hard economy we are all in. He had some great ideas! He and I think a like. You could have made a bolognese sauce, with just a little onion, garlic, cooked in some bacon fat, then add a diced carrot or two, then added in a little tomato paste, water to thin it out a little( wine adds a lot of flavor if you have it)…Also a little diced celery too. Plus, sloppy Joes made with some ground pork and lentils on your buns with a side of the freezer slaw. Or make a cabbage roll casserole. Plus, a minestrone soup would be nice with the mixture of vegetables you bought…served along side some of your crusty bread. A panzanella salad is very tasty and you can toss in some kind of canned fish for protein. A meatloaf made out of the pork with rice or potatoes ( there is a barbecue meatloaf recipe).

@@JessicaWanders I was very impressed by what Jamie accomplished with only few ingredients…though he is a famous chef! 😊 His series is called: His one pound wonders. Though he kept his servings around 97pence. I am still trying to wrap my head around pence and pounds.😂 He was making dishes that served four people at 97P per serving. From looking at the conversion chart is pretty good. Especially with such high prices that you all have. It is bad in the states too, but I think you all have it worse. Keep up the good work, but I thought Jamie had some good ideas that might help give you something different to work with.
Just between you and me... I totally would have picked that piece up off the floor, washed it, and put it in the soup. I'm not even on a tight food budget and haven't been for decades . I simply can't fight the frugal.
Well done. It is interesting seeing the Canadian food prices. In Australia food costs have skyrocketed. Look forward to week 5 and just what you can pull together with the leftover ingredients that are left in the pantry.

Very impressive meals this week. The cabbage patties might not have turned out as planned, but you turned it around for the win. Many great recipes start off one way, and end up another. I'm wondering if a splash of vinegar to the meatball sauce would have balanced out the flavours a bit? This week I made a quiche, and decided to chop up some cooked pork cottage roll. I think I will add the remaining meat to some scalloped potatoes. It's wonderful you are showing it is possible to still eat well on $21 a week.

Hey Jessica your challenge this week looks pretty good and I imagine you can turn that cabbage into sauerkraut..if anything maybe a cabbage soup from it..😊..if you have dollar type stores there you can always get emergency pantry items there cheap.. dollar tree definitely helps us .but just a suggestion and you'd be surprised what you'd find there..lol

I wonder if the lack of oil was the problem. It seemed like you did everything right otherwise. Unless the cabbage needs to be wilted like you suggested. That makes a lot of sense as well. At any rate, there was never any possibility of it not tasting good. Cabbage onions and mustard are a winning combination in any shape or form.

Jessica, you did an amazing job this week. You could take the jar of bacon grease and sit it down in a pot of hot water to make it a liquid and pour out. I really was thinking you would drizzle your strata with hot sauce :) Have you ever used the liquid from a can of garbonzo beans.. called Auqafaba.. you can use it for so many things, replace eggs, make a butter, pudding just lot of different uses, then you could use the beans for hummas or soup or lord knows what.. I think you can use can black bean liquid for lots too. Just sitting here watching your video and thinking of ways to help. LOL You are doing great! Thanks so much for sharing.

I've heard of that garbanzo bean liquid being used for many things but I have yet to try it! This was so good! What started out as a cabbage disaster ended up being a great success! Also, hot sauce is great to add on top of the egg bake and mushy pea spread for flavor. I live in Texas and we put it on everything! 😂 One more thing...seasoned bread crumbs are great as a topping for stuffed pepper and casseroles when cheese is in short supply. 😉

Have you ever tried making Dahl during one of these challenges? If it's the sort of thing you enjoy, it would be a fairly inexpensive and filling meal that tastes fabulous. You don't have to buy all of the spices. Super Store carries boxes of premixed blends. You could probably even get away with buying a bag of Tandori Masala and using that. It would be nowhere near authentic, but it would still taste great.
I do enjoy Dahl! I was thinking about making some with the split peas but I ended up having a lot of the mushy peas to use! You're right, it is a great inexpensive meal and so flavourful :D
I think instead of mushy peas on toast I’d make split pea soup with croutons. Otherwise the week’s meals looked good. I like the idea of making soup with leftover scalloped potatoes.

I have been with my daughter-in-law and our grandchildren twice to San Francisco when she has been involved in projects, to take care of the children. One time 2 weeks and the other time 4 weeks. Our son has himself been away with work the two times since he is a manager in a company.
We completely lose our appetite due to the enormous amount of food served, there has been food for 2-3 people in each order!
In addition, the payment system was very strange, there was a price for the dishes that were sold, but in addition we had to pay quite a bit extra in tips. It turned out that we cooked our own food in the apartment her company had provided for us.
And then everything tastes sweet, even the bread tasted like cake. Everything tasted sweet. The second time we agreed that I should at least bake the bread myself, but you know, even the flour tasted sweet! In addition, very much was very fat. Now the children are at school and I have had my last trip across the water. But my daughter-in-law will try to bring Danish rye bread with her next time, it stays fresh for several days and she can freeze them when she is where she is going to live.
Otherwise, I saw a small film today about the difference between food produced in the USA and that is sold in both the UK and the USA. Oatmeal, instant from a company called Quaker Oats, Strawberries and cream. There is no strawberry in the US variety, there are apples which have added chemical flavorings and artificial colour, color number 40 which affects the ability to concentrate. The variant from the UK has real strawberries in it. Now I reckon that most parents don't give that stuff to their children, but someone has to buy it since it's on sale.
I have great respect for the food culture of different countries and it is exciting to see what people eat in other places, but for most people the food is best at home :).

The closer you can get to the original food I think the healthier it is! I do have a sweet tooth, especially for maple syrup being a Canadian, but I do get tired of sweet all the time! Florence McCormick's Stuffed Cabbage Rolls
Ingredients: I head of cabbage
Filling:
1 cup cooked rice
1 tsp. caraway seeds
1 tsp. salt
1 egg
1 small onion, chopped
1/8 tsp. pepper
Ingredients: 2 cups water
1 can tomato sauce
1 can water
Recipe instructions: Core the head of cabbage by heating a kettle with 1 to 2 cups water. Steam whole cabbage 4 to 5 minutes.
Next: Mix 1 cup cooked rice, 1 tsp. caraway seeds, 1 tsp. salt, 1 egg,
1 small onion, chopped and 1/8 tsp. pepper all together; mix together well.
Stuff cabbage leaves with filling and make rolls. Put in kettle and pour over the top 1 can tomato sauce and 1 can water. Simmer 45 minutes.

I have been making this since I first got my first Rival crock pot and this recipe was in the recipe book that was included maybe 30 or more years - I now use Panko crumbs instead of bread crumbs usually

Ingredients:
2 lb. Beef Chuck
1/3 cup dry bread crumbs
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon leaf basil

2 cans (10 3/4 oz. each) condensed Tomato soup
1 cup beef broth or water to rinse out the can from soup.

4 celery stalks, cut into 1-inch pieces
I usually add 1 or 2 potatoes pared & cut to about the size other vegetables
1 teaspoon Kitchen Bouquet I have used other sauces instead or Worcester sauce.
Recipe instructions: Wipe beef cubes well Combine bread crumbs with salt, pepper and toss with beef. Place coated beef cubes in Crock Pot and other ingredients; stir well. Cover and cook on Low setting for 10 to 12 hours. (on high 3 to 4 hours). I like to put it together in the evening and let it cook all night or in the morning and forget it till dinner time.

2 tsp. baking soda,

Recipe instructions: Preheat oven to 350 degrees. Grease and flour 2 loaf pans 9 x 5 x 3 inchs. Beat eggs, oil, apples, sugar and vanilla; on low speed. Add everything else. Pour into loaf pans. Bake 55 to 60 minutes. Refrigerate left over bread. Can substitute for apples; 2 cups shredded carrots & 2 Tbsp. grated orange rind. or 2 cups shredded zucchini squash or 2 cups shredded sweet potatoes.
Save every bit of onion except the very outside brown stuff. It will turn your stock bitter. But you can use onion skins to dye stuff 😊

Actually a Polish dish is the cabbage and onion fried in butter with salt and pepper and onion powder if you want. You fry it till cabbage and onion are soft and lightly browned.

Quick suggestion when it comes to packaged meats. The Buddig you picked up is usually 4 oz of meat. If you quadruple that, to make a pound, it makes it $6 a pound. In the deli, you can usually find meats on sale that will be $5 a pound or sometimes less. I would personally go for the deli meat, as the quality is usually of a higher level. Used to be that the packaged was the cheaper way to go, but more and more I'm seeing the opposite is true.

I have to agree 1 pound of ground beef makes a ton it's only my hubby myself and our 17 soon to be 18 in 2 weeks son and I buy the giant log and a 10 pound log feeds us good spaghetti meatballs chilli macaroni and ground beef burgers tacos ect. I get like 12 sandwiche sized bags of ground beef it looks like a little.but it's not

Hi! That cabbage was so frustrating but it turned out pretty decent LOL I didn't have any lettuce anyways so...problem solved haha! I love mushy peas in several different forms, there are quite a few recipes around but this one was good with garam masala this week :) You'll have to give it a try!

How long do you need to cook the oatmeal for to ensure the apple is cooked through?
The rolled oats cook for 8-10 minutes and the apples were soft-ish. It depends on your apple, of course, but sometimes I’ll fry them first in butter and then heat them up with the water and THEN add the oats if I want a really soft apple 🍎

Hi Jessica, we are a dairy free and egg free family. The fritter recipe that I use is half a cup of self raising flour and half a cup of milk of choice. Stir into a batter. Then add fillings of choice (eyeballing here but usually about a cup's worth of filling). Then fry off in oil.

Top your burgers with your fried cabbage and have cabbage burgers 😅..haha when it comes to fritters the same batter you'd use for corn fritters you can use for cabbage or potato fritters..oh fried coleslaw you made and it's a staple in places that makes cabbage burgers..cabbage burgers are a German and Czech food in the states..like the Midwest and parts of the south like my area..you didn't invent anything you just accidentally stumbled on hot coleslaw used in cabbage burgers😅lol it still looks yummy and I wasn't being rotten lol..

I love how you show everything, both the good and the bad. I wonder if the pierogi strips could be fried into something crispy? Also, rice can be helpful for budget recipes. It absorbs flavour well and a lot of ingredients can just be thrown in with the cooking rice.

Brown sausage set aside in the same pan stir fry cabage slaw/carrot mix. Mix sausage and slaw together. Put spoons full of mix in egg roll wrapers. Place in 325 degree oven for 15 to 20 minutes. Yummy 😋

I have an idea. What if you create a very basic, apartment balcony sized container garden this summer. Then maybe do a few of these 21 dollar challenges while using the produce from that garden. You could maybe calculate how much money you can save even from a tiny garden.
Obviously, it won't be a lot and would only provide a little food for a couple of months, but every bit counts. Even a few fresh greens and herbs can seriously brighten one's life when on an extremely tight budget.
It might be interesting to explore if it would even be worth doing after having to purchase soil, seeds, and perhaps fertilizer. I can't say for certain that it would be at this point.
I agree that any chance you have to plant some greens and veggies will help out! You're right that starting up something like that requires money up front even if it's just soil and seeds but I could look at it and see if I can add afford to add something to the budget! I think it's a great experiment idea! :D

Last summer I got a rutabaga which I saved the skins and added to my freezer stock bag. I’ve even added the stock of my cabbage to it then. While back I used up my freezer stock bag to make veggies broth. It was really good.
Sometimes I find cabbage and other strong cabbage-y vegetables can turn my broths a bit sour(?) so I normally don't save them but I've seen loads of people use them so maybe I should give it another try!
I bought 10 quarts of almond milk today at 28cents a quart. Shelf stable kind and it will last a long time. Don’t forget deals at Walgreens as that is where they came from along with 3 gallons of fruit punch at 38 cents a gallon. They were both on sale at 90 percent off. I am a big sale buyer too!

Sadly, we dont have Walgreens in Canada. We used to have a liquidation store here. I was heartbroken when they closed. I found so many amazing deals on food there. There may be something equivalent where Jessica lives. I don't believe she's nearly as rural as I am.
That being said, maybe shopping at a place like that would go against the spirit of the challenge in her eyes. Perhaps she wants to stick to the types of stores that most of us have access to.

When you need to use the bacon grease just tip the jar upside down in the pan as you heat it up and it will melt down into the pan. Make sure you use a potholder to pick up the jar once the grease is melted out.

I would have just turned the cabbage patties into a stir fry. Plus, if you had made a freezer slaw ( that last a week in the freezer), would have been good with your burgers. Also, you could have chopped up the cabbage mixture worked it into your patty mixture would have made it moist . Have you ever tried toasting your bread, then spread both slices with jam or jelly, then sprinkle with some pepper seeds and top with some cheese. Place in the oven to melt the cheese. So good for breakfast with a cup of coffee. Yes you can freeze the stuffed peppers.I was watching Jamie Oliver. He made some meatballs out of about the amount of sausage you have…added some oregano as his seasoning with S&P along with some moistened bread. He made four servings out of them by turning them into Kabobs! Alternating the meatballs with onion and bell pepper pieces. He served it over rice I think😮… It was his series of cheap, but tasty dishes for durning this hard economy we are all in. He had some great ideas! He and I think a like. You could have made a bolognese sauce, with just a little onion, garlic, cooked in some bacon fat, then add a diced carrot or two, then added in a little tomato paste, water to thin it out a little( wine adds a lot of flavor if you have it)…Also a little diced celery too. Plus, sloppy Joes made with some ground pork and lentils on your buns with a side of the freezer slaw. Or make a cabbage roll casserole. Plus, a minestrone soup would be nice with the mixture of vegetables you bought…served along side some of your crusty bread. A panzanella salad is very tasty and you can toss in some kind of canned fish for protein. A meatloaf made out of the pork with rice or potatoes ( there is a barbecue meatloaf recipe).

Though he kept his servings around 97pence. I am still trying to wrap my head around pence and pounds.😂 He was making dishes that served four people at 97P per serving. From looking at the conversion chart is pretty good. Especially with such high prices that you all have. It is bad in the states too, but I think you all have it worse. Keep up the good work, but I thought Jamie had some good ideas that might help give you something different to work with.

Very impressive meals this week. The cabbage patties might not have turned out as planned, but you turned it around for the win. Many great recipes start off one way, and end up another. I'm wondering if a splash of vinegar to the meatball sauce would have balanced out the flavours a bit? This week I made a quiche, and decided to chop up some cooked pork cottage roll. I think I will add the remaining meat to some scalloped potatoes. It's wonderful you are showing it is possible to still eat well on $21 a week.

Hey Jessica your challenge this week looks pretty good and I imagine you can turn that cabbage into sauerkraut..if anything maybe a cabbage soup from it..😊..if you have dollar type stores there you can always get emergency pantry items there cheap.. dollar tree definitely helps us .but just a suggestion and you'd be surprised what you'd find there..lol

I'm glad I managed to save the cabbage and it turned out pretty good and the meatballs turned out great! It would be great if I could get all those things this week! I haven't seen a good flashfood box in awhile! Fingers crossed!
I wonder if the lack of oil was the problem. It seemed like you did everything right otherwise. Unless the cabbage needs to be wilted like you suggested. That makes a lot of sense as well. At any rate, there was never any possibility of it not tasting good. Cabbage onions and mustard are a winning combination in any shape or form.

Jessica, you did an amazing job this week. You could take the jar of bacon grease and sit it down in a pot of hot water to make it a liquid and pour out. I really was thinking you would drizzle your strata with hot sauce :) Have you ever used the liquid from a can of garbonzo beans.. called Auqafaba.. you can use it for so many things, replace eggs, make a butter, pudding just lot of different uses, then you could use the beans for hummas or soup or lord knows what.. I think you can use can black bean liquid for lots too. Just sitting here watching your video and thinking of ways to help. LOL You are doing great! Thanks so much for sharing.

I've heard of that garbanzo bean liquid being used for many things but I have yet to try it! This was so good! What started out as a cabbage disaster ended up being a great success!
Also, hot sauce is great to add on top of the egg bake and mushy pea spread for flavor. I live in Texas and we put it on everything! 😂
One more thing...seasoned bread crumbs are great as a topping for stuffed pepper and casseroles when cheese is in short supply. 😉

Have you ever tried making Dahl during one of these challenges? If it's the sort of thing you enjoy, it would be a fairly inexpensive and filling meal that tastes fabulous. You don't have to buy all of the spices. Super Store carries boxes of premixed blends. You could probably even get away with buying a bag of Tandori Masala and using that. It would be nowhere near authentic, but it would still taste great.
I do enjoy Dahl! I was thinking about making some with the split peas but I ended up having a lot of the mushy peas to use! You're right, it is a great inexpensive meal and so flavourful :D
I think instead of mushy peas on toast I’d make split pea soup with croutons. Otherwise the week’s meals looked good. I like the idea of making soup with leftover scalloped potatoes.
