My mum taught me to make a stew bread called "fritters". It's just 1 cup flour, 1 cup milk, and butter to taste. You could add salt if you wanted, but it doesn't need it. They cook like pancakes. If you add vanilla extract instead of butter and a pinch of sugar they make great doughnuts.
I’ve never used a crockpot in our camper but I have used my Instant Pot! In fact I made an entire 4 person Thanksgiving dinner with the stovetop, the Instant Pot, and the microwave. I think it’s brilliant to use your crockpot in your camper!
I don’t have an instant pot but I bet that would be great! I was pretty happy with it, leave it on while we are outside enjoying things and then have an easy meal! I’ll be trying other recipes!

I made my version of stone soup today too! Its been so rainy it just made sense. But growing up we called it kitchen sink soup becuase you put everything in but the kitchen sink! It had onion, celery, carrot, tomato, zucchini, meat, garlic, peas, green beans, carrots, corn, kidney beans and a teeny tiny bit of macaroni. I wish I had added potatoes too!
Another great video! My favorite line..."It'll be fine!". I say that all the time too and you know what...it IS totally fine! There are certainly bigger things to fret about! 😂
You could have added in some sliced carrot to have given you little color and texture and sweetness to the sweet & sour pork. You can make homemade syrup out of butter, brown sugar, water & vanilla. Also, have you ever tried Cumin Rice with Pork Chops? It is so yummy! I would have sliced the pork chops in half to make them thinner and made some Marsala pork and served it over rice. Also since you had so much pork, you could have added a little to your soup and could have made pork kabobs with some bell pepper, onion, pineapple chunks. Basted it with the garlic butter sauce mixed with leftover pineapple juice from can and soy sauce. Served it over some of your rice mixed with green onion you used in eggs…just grated up some of the regular onion for eggs. If you use a carbonated beverage like coke, root beer or Dr Pepper( 12 oz can)…it will add flavor and tenderizer the pork. Then add your barbecue sauce after that to serve. You can also make nachos out of the pulled pork, stuff baked potatoes barbecue pizza, etc. Just some different ideas for you.
Jessica, you have to read the children's book called Stone Soup. It came out long long before there was a Dolly Parton's Stone Soup. She's probably basing her soup on the children's book given her commitment to children's literature and literacy.
I'm seriously impressed! I'd have just skipped a week. LOL On camper prices, I just don't get it. I actually have 2 because we got a new bigger one before selling the old one. That said, I'm glad we didn't trade it in because the amount my old camper is going for right now is actually more than we bought it brand new. Crazy! Both campers have outlets in the kitchen, so I don't know how you got screwed there, but I'd be running a permanant extention cord to the kitchen by running it up the wall, around the top of the ceiling, and down to the counter. I have not brought my crock pot but only because I rarely use it even at home. I do bring my instant pot every single time we go though. Do you have an outlet on the outside of the camper? If its hot, or I'm cooking something I don't want to smell alllll night long, I will put a little folding table under the outdoor outlet and use the instant pot there. You ought to try the instant pot for pork because you cannot overcook it. The newer camper has a built in griddle/cook top as part of an outdoor kitchen, but we had bought a Blackstone griddle when we got the older camper and that is the bomb! You'd be amazed what you can cook up on that thing! I could never be a full time rv'er... I get too claustrophobic if we are out for too many days! I think I max out at 3 weeks. Excited to see how you pull out next week's challenge with so few meats, carbs, and veggies!!! But if anyone can, I trust you can do it!

Ya, I’m pretty disappointed about the outlet situation and I think we’ll have to set up a permanent extension cord! 🤔 I haven’t looked for an outlet on the outside but there must be one? That would be a great idea to keep the smell and heat out of the camper…but might attract bears? 😂 🐻 The next week should be pretty interesting!
@JessicaWanders Ok, so maybe not a great idea for the slow cooker which would be out there 6 hours or more, but for the instant pot, it doesn't allow smells until its been vented or opened, and I bring the food and pot inside so quickly I don't worry about it. I don't think its any better or worse than cooking on an open fire, right??? Then again, we don't boondock often and while we pick parks with privacy between camping sites, its never so isolated that I think bears would approach a campsite in broad daylight. Plus, we never leave anything from the meal outside after dark regardless how or where it was cooked. If for no other reason than how much of a mess raccoons (trash pandas) would make of the site! There was one park where you could set your clock by the raccoon visit... same time every night despite nothing being left for it. Guessing he/she had a path it took every night through the park to check every camping site, just in case.
Haha if you have a glass pyrex measuring cup you can fill your spice jar with it....arby sauce think a tangy ketchup...and you can always make skilit sauerkraut with the cabbage fry it in vinegar and onion...if you take your ketchup and mix it with your arby sauce and some mustard and brown sugar if you have it then instant bbq sauce lol if you had any apples left you could fry that with your cabbage too 😊

@@JessicaWanders no problem and arby sauce isn't BBQ it's just a mix in a pack haha most people either like or love me I can take it or leave it we don't eat enough fast food it's a occasional treat it's just easier to cook at home..like I'll stock up on stuff like apple butter on sale and put some in a pot roast if I get one on sale and put beef gravy on it mix in apple butter and it makes a cheap affordable quick sauerbraten with out going to all the hard steps in making one.. and we'll have that once In a while and it's like 3$ a plate vs 25$ take out so we go the cheaper route..lol

If you stick your spaghetti noodles into a dry tea towel, roll up tea towel and than hold each end of tea towel and slide it down corner of counter, it will break the noodles up fast

It's funny you mention about the RV insurance, as just yesterday we called our insurance company and increased the coverage on our mobile home rentals. Even the 1970's ones have increased in value a LOT. You made lots of yummy looking meals. We love apple cinnamon oatmeal too, but we always use water instead of milk. Like you, I don't like pork chops as chops. Many times I make a stew with it....and dumplings. I think are doing a great job !

It’s so bad here too! There are permanent groups of RVs here too especially after floods and fires wipe out communities 🙁 And, yes, house prices and rents are too high!

Make you some sun tea to pour over some ice to cool off! Most of ideas I gave you( exception of pizza) you can cook in the crockpot…even the potatoes can be wrapped in foil and placed in crockpot/slow cooker to bake. I would use the slow cooker for everything, until my power came back on. You can even use the crockpot for oatmeal cooked over night.could have used less spaghetti for dish or if you had cream cheese used that to make more sauce.

I think it could really work for us at places that have shore power 👍🏻 but I don’t think out solar panels could support it on their own lol I thought it worked well though!
I have been watching your channel for quite a while now and really enjoy the variety of challenges you do. I have a question and hope I can ask it in a way that makes sense to you. When you say something like " This is for 3 breakfasts, or lunches, or dinners" and you show the same breakfast, lunch or dinner 3 days in a row for yourself, does that mean that you make something different for Mr. Wanders which comes out of a separate budget than your $21? I also really enjoy your creativeness and your seemingly fearlessness at trying new recipes. You are a much more adventurous soul than I am when it comes to food. Thank you for sharing!
For this challenge I am just trying to make 21 meals for $21 and, of course, that is only enough meals for one person so I make other meals for the other 21 meals of the week for two people. All together I am making meals for both myself and my husband throughout the week but am making 21 of them within this challenge. If that makes sense? Did I overly complicate that answer? lol 🤷♀️

You can always invest in a wall plug with six outlets on it for that one outlet in your kitchen theres also three way extension cords with two or three surge protectors on one cord and you could always try them and theres no wrong way to make pulled pork unless your a crappy cook lol .any cut of pork you can cook and pull..lol my phone gave out so im only now able to finish this lol😂

Hi! My challenge is only to make 21 meals for $21. I definitely try every meal that I make but I often share with Mr. Wanders. I judge meals based on whether I feel they were yummy and satisfied me until my next meal. Whether I share or not sometimes doesn’t change whether I’ve made 21 meals 🤷♀️
Oh and people in America were living in campers and mobile homes long before our eccomic quagmire..I used to live in a trailer..but I have the misfortune of living in a popular part of Tx where alot of yuppies and bougie people from California and other places are moving to and I'm all for progress but it's ruing it for the locals as far as rent is and I understand this my dad and I are moving to a cheaper town in east Texas just so we can have some quiet and a much cheaper home we found one for 500$ a month vs the 1,2k we pay here and afford to actually eat lol.. Congratulations..you made Scrap soup..that's exactly what scrap soup is odds and ends to make a meal..and doesn't your dollar tree carry bread ??..if you have grits you can make a dense cornbread that can be used for sandwiches from it😊..btw what I meant by that thing about stone soup and Appalachia is that's a real old Irish and Scottish peasants pot luck and they brought it to Appalachia where dolly would not only know about it probably grew up on it it was a pretty big help during the depression but since salts available now it's still a cheap struggle meal lol...but yeah that's a real dish back when peasants had to use smooth stones and whatever scraps of food they could put together in a giant potage pretty much to get by
I actually consider “mobile homes” just homes and campers or RVs something different. I’ve certainly lived in mobile homes in my life 👍🏻 🏠 As the house prices increase in the Vancouver area people seem to be selling and moving inland and it’s likely driving prices up all over the province but I think it’s a lot of factors….it’s hard for everyone 😞
Lol if you look it up there is a childrens book called "Stone Soup" it starts off with a hungry man putting a pot of water on the fire then adding a stone. People are curious then he convinces them to add a few things... Anyway it's cute. (The Stone Soup short story with pictures teaches children always to strive to share their belongings with those around them. Sharing and caring for others are one of the most important qualities we humans possess. It is one of the few things that make us human.)
We bought a campervan last August, a converted sprinter. If we bought the same one this year we would be paying more. Here in Ireland it's because leaving the country of summer holidays is ridiculously priced so holidays at home in Ireland are becoming more popular. However hotel prices are insane here because lots of hotels are being used to house Ukrainian refugees so the ones left are upping prices.
Ohh interesting! It could have been Covid and people sticking close to home that drove the prices up too maybe? We would definitely be paying more to buy the same camper this year and it’s two years old!
I cant remember if you had some flour in your pantry from the past 9 weeks, but my mom made really simple rolls with just Self-Rising Flour, Milk, and Butter. I'm sure you could find a recipe online for them for the next time. 😊
It seems to depend what was cooked in them. The egg liners I just put in the dishwasher and they came out perfect but after muffins I’ve had to wash them by hand.
I cannot stand a thief. I work loss prevention. I really really hope someone took ur box by mistake. I bought a rice cooker/streamer for my rv. Unfortunately, it’s hard to take it by mistake because you have to verify if at customer service before you leave and each box is numbered. I’m still willing to give the company some leeway for growing pains but it’s quite disappointing 😞
Hi Jessica that stone soup story is originally from Ireland and a round smooth stone has a lot of sodium in them you have to wash the stone off and pat it dry and Dolly's recipe is probably an Irish/ Scottish recipe since it's popular she's like me half native American and half Celtic mutt which is half the makeup of Appalachia haha but salt used to be expensive and only aristocrats could have spices and apparently salt..so peasants figured out there were salt in smooth stones ..and several peasant communities would get their stones and bits of food together to make a communal soup that's actually where scrap soup comes from..eastern Europe has a stone soup too but it originated as well as the legend in Ireland..and I hope you got your $ back that 5$ adds up and no offense my friend but your carrots and peppers are a rip off we have .25¢ carrots and .30¢ each potatoes and.50¢ peppers..at the rate those boxes are your better off buying some burpee or Bonnie veggie or any veggie seeds online and grow them yourself or invest in the fruit of the month club you sometimes get veggies or if you want veggies haha V8 juice original and dry soup mix and if you have some flour baking soda and cold water and bacon grease you can always make native American fry bread or if you have pancake mix and a little flour you can make no yeast sandwich bread with that

Hi! I did the first $21 A Week Challenge in my camper and enjoyed having my groceries separate and the challenge of cooking with fewer appliances. At the time I was getting used to our new camper too! Now I like it all in the camper to learn new ways I can cook when we are away from home and I can take the challenge with us! Lately I’ve been going back and forth when I feel like it so you’ll see a bit of both!
I always include substituted food in the total at the prices I could buy them at. The only other food I use is what I’ve accumulated over the challenge in my pantry. What are you specifically wondering about?

My mum taught me to make a stew bread called "fritters". It's just 1 cup flour, 1 cup milk, and butter to taste. You could add salt if you wanted, but it doesn't need it. They cook like pancakes.
If you add vanilla extract instead of butter and a pinch of sugar they make great doughnuts.
The fritters I’ve tried were delicious but I’ve never tried making my own! I might have to 👍🏼😀
I’ve never used a crockpot in our camper but I have used my Instant Pot! In fact I made an entire 4 person Thanksgiving dinner with the stovetop, the Instant Pot, and the microwave. I think it’s brilliant to use your crockpot in your camper!
I don’t have an instant pot but I bet that would be great! I was pretty happy with it, leave it on while we are outside enjoying things and then have an easy meal! I’ll be trying other recipes!

I made my version of stone soup today too! Its been so rainy it just made sense. But growing up we called it kitchen sink soup becuase you put everything in but the kitchen sink! It had onion, celery, carrot, tomato, zucchini, meat, garlic, peas, green beans, carrots, corn, kidney beans and a teeny tiny bit of macaroni. I wish I had added potatoes too!

My boys teachers always made Stone Soup at Thanksgiving here in Saskatchewan. Each student brought something to put in the soup.

You could have added in some sliced carrot to have given you little color and texture and sweetness to the sweet & sour pork. You can make homemade syrup out of butter, brown sugar, water & vanilla. Also, have you ever tried Cumin Rice with Pork Chops? It is so yummy! I would have sliced the pork chops in half to make them thinner and made some Marsala pork and served it over rice. Also since you had so much pork, you could have added a little to your soup and could have made pork kabobs with some bell pepper, onion, pineapple chunks. Basted it with the garlic butter sauce mixed with leftover pineapple juice from can and soy sauce. Served it over some of your rice mixed with green onion you used in eggs…just grated up some of the regular onion for eggs. If you use a carbonated beverage like coke, root beer or Dr Pepper( 12 oz can)…it will add flavor and tenderizer the pork. Then add your barbecue sauce after that to serve. You can also make nachos out of the pulled pork, stuff baked potatoes barbecue pizza, etc. Just some different ideas for you.

I'm seriously impressed! I'd have just skipped a week. LOL On camper prices, I just don't get it. I actually have 2 because we got a new bigger one before selling the old one. That said, I'm glad we didn't trade it in because the amount my old camper is going for right now is actually more than we bought it brand new. Crazy! Both campers have outlets in the kitchen, so I don't know how you got screwed there, but I'd be running a permanant extention cord to the kitchen by running it up the wall, around the top of the ceiling, and down to the counter. I have not brought my crock pot but only because I rarely use it even at home. I do bring my instant pot every single time we go though. Do you have an outlet on the outside of the camper? If its hot, or I'm cooking something I don't want to smell alllll night long, I will put a little folding table under the outdoor outlet and use the instant pot there. You ought to try the instant pot for pork because you cannot overcook it. The newer camper has a built in griddle/cook top as part of an outdoor kitchen, but we had bought a Blackstone griddle when we got the older camper and that is the bomb! You'd be amazed what you can cook up on that thing! I could never be a full time rv'er... I get too claustrophobic if we are out for too many days! I think I max out at 3 weeks. Excited to see how you pull out next week's challenge with so few meats, carbs, and veggies!!! But if anyone can, I trust you can do it!

@JessicaWanders Ok, so maybe not a great idea for the slow cooker which would be out there 6 hours or more, but for the instant pot, it doesn't allow smells until its been vented or opened, and I bring the food and pot inside so quickly I don't worry about it. I don't think its any better or worse than cooking on an open fire, right??? Then again, we don't boondock often and while we pick parks with privacy between camping sites, its never so isolated that I think bears would approach a campsite in broad daylight. Plus, we never leave anything from the meal outside after dark regardless how or where it was cooked. If for no other reason than how much of a mess raccoons (trash pandas) would make of the site! There was one park where you could set your clock by the raccoon visit... same time every night despite nothing being left for it. Guessing he/she had a path it took every night through the park to check every camping site, just in case.
Haha if you have a glass pyrex measuring cup you can fill your spice jar with it....arby sauce think a tangy ketchup...and you can always make skilit sauerkraut with the cabbage fry it in vinegar and onion...if you take your ketchup and mix it with your arby sauce and some mustard and brown sugar if you have it then instant bbq sauce lol if you had any apples left you could fry that with your cabbage too 😊

@@JessicaWanders no problem and arby sauce isn't BBQ it's just a mix in a pack haha most people either like or love me I can take it or leave it we don't eat enough fast food it's a occasional treat it's just easier to cook at home..like I'll stock up on stuff like apple butter on sale and put some in a pot roast if I get one on sale and put beef gravy on it mix in apple butter and it makes a cheap affordable quick sauerbraten with out going to all the hard steps in making one.. and we'll have that once In a while and it's like 3$ a plate vs 25$ take out so we go the cheaper route..lol

Make you some sun tea to pour over some ice to cool off! Most of ideas I gave you( exception of pizza) you can cook in the crockpot…even the potatoes can be wrapped in foil and placed in crockpot/slow cooker to bake. I would use the slow cooker for everything, until my power came back on. You can even use the crockpot for oatmeal cooked over night.could have used less spaghetti for dish or if you had cream cheese used that to make more sauce.

I think it could really work for us at places that have shore power 👍🏻 but I don’t think out solar panels could support it on their own lol I thought it worked well though!

I have been watching your channel for quite a while now and really enjoy the variety of challenges you do. I have a question and hope I can ask it in a way that makes sense to you. When you say something like " This is for 3 breakfasts, or lunches, or dinners" and you show the same breakfast, lunch or dinner 3 days in a row for yourself, does that mean that you make something different for Mr. Wanders which comes out of a separate budget than your $21? I also really enjoy your creativeness and your seemingly fearlessness at trying new recipes. You are a much more adventurous soul than I am when it comes to food. Thank you for sharing!
For this challenge I am just trying to make 21 meals for $21 and, of course, that is only enough meals for one person so I make other meals for the other 21 meals of the week for two people. All together I am making meals for both myself and my husband throughout the week but am making 21 of them within this challenge. If that makes sense? Did I overly complicate that answer? lol 🤷♀️

You can always invest in a wall plug with six outlets on it for that one outlet in your kitchen theres also three way extension cords with two or three surge protectors on one cord and you could always try them and theres no wrong way to make pulled pork unless your a crappy cook lol .any cut of pork you can cook and pull..lol my phone gave out so im only now able to finish this lol😂

You could have saved the split peas, mashed on toast (like baguette slice) as a crostini…when you have bread that is lol.

Hi! My challenge is only to make 21 meals for $21. I definitely try every meal that I make but I often share with Mr. Wanders. I judge meals based on whether I feel they were yummy and satisfied me until my next meal. Whether I share or not sometimes doesn’t change whether I’ve made 21 meals 🤷♀️
Oh and people in America were living in campers and mobile homes long before our eccomic quagmire..I used to live in a trailer..but I have the misfortune of living in a popular part of Tx where alot of yuppies and bougie people from California and other places are moving to and I'm all for progress but it's ruing it for the locals as far as rent is and I understand this my dad and I are moving to a cheaper town in east Texas just so we can have some quiet and a much cheaper home we found one for 500$ a month vs the 1,2k we pay here and afford to actually eat lol.. Congratulations..you made Scrap soup..that's exactly what scrap soup is odds and ends to make a meal..and doesn't your dollar tree carry bread ??..if you have grits you can make a dense cornbread that can be used for sandwiches from it😊..btw what I meant by that thing about stone soup and Appalachia is that's a real old Irish and Scottish peasants pot luck and they brought it to Appalachia where dolly would not only know about it probably grew up on it it was a pretty big help during the depression but since salts available now it's still a cheap struggle meal lol...but yeah that's a real dish back when peasants had to use smooth stones and whatever scraps of food they could put together in a giant potage pretty much to get by
I actually consider “mobile homes” just homes and campers or RVs something different. I’ve certainly lived in mobile homes in my life 👍🏻 🏠 As the house prices increase in the Vancouver area people seem to be selling and moving inland and it’s likely driving prices up all over the province but I think it’s a lot of factors….it’s hard for everyone 😞

Lol if you look it up there is a childrens book called "Stone Soup" it starts off with a hungry man putting a pot of water on the fire then adding a stone. People are curious then he convinces them to add a few things... Anyway it's cute. (The Stone Soup short story with pictures teaches children always to strive to share their belongings with those around them. Sharing and caring for others are one of the most important qualities we humans possess. It is one of the few things that make us human.)

We bought a campervan last August, a converted sprinter. If we bought the same one this year we would be paying more. Here in Ireland it's because leaving the country of summer holidays is ridiculously priced so holidays at home in Ireland are becoming more popular. However hotel prices are insane here because lots of hotels are being used to house Ukrainian refugees so the ones left are upping prices.
Ohh interesting! It could have been Covid and people sticking close to home that drove the prices up too maybe? We would definitely be paying more to buy the same camper this year and it’s two years old!

It seems to depend what was cooked in them. The egg liners I just put in the dishwasher and they came out perfect but after muffins I’ve had to wash them by hand.

I bought a rice cooker/streamer for my rv. But I haven't had the chance to use it - I don't go camping when it's over 82 or 83 degrees. I'll try it this fall. The reason I picked it was the portable power station I have, will run it too.
Unfortunately, it’s hard to take it by mistake because you have to verify if at customer service before you leave and each box is numbered. I’m still willing to give the company some leeway for growing pains but it’s quite disappointing 😞

Hi Jessica that stone soup story is originally from Ireland and a round smooth stone has a lot of sodium in them you have to wash the stone off and pat it dry and Dolly's recipe is probably an Irish/ Scottish recipe since it's popular she's like me half native American and half Celtic mutt which is half the makeup of Appalachia haha but salt used to be expensive and only aristocrats could have spices and apparently salt..so peasants figured out there were salt in smooth stones ..and several peasant communities would get their stones and bits of food together to make a communal soup that's actually where scrap soup comes from..eastern Europe has a stone soup too but it originated as well as the legend in Ireland..and I hope you got your $ back that 5$ adds up and no offense my friend but your carrots and peppers are a rip off we have .25¢ carrots and .30¢ each potatoes and.50¢ peppers..at the rate those boxes are your better off buying some burpee or Bonnie veggie or any veggie seeds online and grow them yourself or invest in the fruit of the month club you sometimes get veggies or if you want veggies haha V8 juice original and dry soup mix and if you have some flour baking soda and cold water and bacon grease you can always make native American fry bread or if you have pancake mix and a little flour you can make no yeast sandwich bread with that

Hi! I did the first $21 A Week Challenge in my camper and enjoyed having my groceries separate and the challenge of cooking with fewer appliances. At the time I was getting used to our new camper too! Now I like it all in the camper to learn new ways I can cook when we are away from home and I can take the challenge with us! Lately I’ve been going back and forth when I feel like it so you’ll see a bit of both!
Why is this a $21 challenge when she’s using her own food not included in her total?
I always include substituted food in the total at the prices I could buy them at. The only other food I use is what I’ve accumulated over the challenge in my pantry. What are you specifically wondering about?
