    I'm so glad I found this channel. I know you mainly made this aimed at people on keto diets but as a type 1 diabetic this is a lifesaving channel. So many (good) foods have carbs in them and ruin the control I have over my blood sugar. It's hard to find snacks that have little to no carbs while still tasting good. You make this easy with these wonderful recipes that are simple and tasty. Thank you so much!

      you should try taking a tablespoon of turmeric+coconut oil+black pepper every morning. plenty of peer-reviewed studies on using turmeric as treatment to diabetes.
      also some plant called moringá oleifera should help.

    I've been making almost the exact same recipe for a year. Though no husk. I hate that stuff. And I use 6 eggs instead of the water/oil and 2 eggs. I'll have to switch out. I'm sick of buying so many eggs. I also sometimes add in 1/2 pack of yeast and 2 packs stevia to give it a true bread flavor. I also take this recipe and make 8 hotdog rolls with it, but making aluminum foil molds.

    • @tiffanyhernandez3322
      @tiffanyhernandez3322 4 ปีที่แล้ว +2

      Hi. Can you just add the 1/2 pack to Joe's recipe above with the stevia? Do you think that would work? I miss the taste and smell (lol) of a good yeast roll/bread. Thank you so very much.

    • @lemmh2
      @lemmh2 4 ปีที่แล้ว +3

      @@tiffanyhernandez3322 haha! IKR! That smell! My mouth waters!! What I do is use like 1 tablespoon of water, and "bloom" the yeast in 2 packs. I assume you can use 1 pack, or maybe a pinch of monk fruit or anything else you want. The first few times I did it, I used like 1 teaspoon of honey to bloom the yeast. Yes, it's an extra 4 carbs or so, but spread out over 6 rolls, it doesn't affect the macros too much. Though I couldn't taste the honey, so I switched to those Splenda stevia packs in the green and grey box. I'd say use whatever you want! Let's bring the real bread smell and taste back! :D

    Those do look great, however I think we suffer from making things look like the real thing and therefore they don't function like it due to being much more dense. I think I'd prefer something thinner but that is about equal in terms of weight to normal bread. Or even less so that the fillings can be the star of the show and the bun is just to protect your hands and to hold it all together.

    Can i do 2 or 3 batchs of these burger buns and freeze them fir later? Was looking for a high fiber hamburger/ bread . Already use flax meal in my cookies to mske more nutrious. My son is a picky eater and he ssid they were good. Added a little extra water so they would be dry csuse i used the powder form of fiber. Despite letting it sit for 1/2 without the extra flour which i addedd later, it still is amszing hamburger bun..oh didn't hsve ghf brush to brush on egg and still look and tasted good.

    I made these last week and am wondering how to keep them from becoming too dense and moist. I followed the directions to the letter, and what I got were super soggy, dense buns that were nothing like a traditional hamburger bun. Then, once they finally dried out a bit, they crumbled apart. Any suggestions, keto hive mind?

    Finally! Thanks Joe. Just to be clear, the xantham gum should be added to the dry ingredients or after adding the water?

    • @lemmh2
      @lemmh2 4 ปีที่แล้ว +1

      I'd say yeah, from personal experience. It's much harder to blend it in without things getting gummy if you don't do it with the dry. I make two batches usually, one for hamburger buns, for which I have molds, and one for hotdogs, which I make homemade foil molds for. I only put xantham in the hotdogs so they hold up when you half-slice them. I've had serious issues in doing the hotdog ones second, when leaving the leftover goo from the first batch. It doesn't want to mix well throughout the entire batch if it's already moist. But maybe Joe has a different experience. He's better at this stuff than I am lol

      2 tablespoons psyllium husk whole
      0.5 tablespoon baking powder, 10g (measure)
      1 teaspoon xanthan gum
      0.5 teaspoon salt
      0.75 cup water, hot
      2 large eggs, beaten
      1 tablespoon olive oil
      1 teaspoon sesame seeds
      1. Place the first 6 ingredients in a bowl and mix.
      2. Add the water, eggs, and olive oil to the bowl. Use a spatula to combine the liquid and dry ingredients.
      3. Add in another .25 cup of almond flour. Mix it into the dough and form a ball.
      4. Place the ball into the bowl and cover with plastic wrap and let it rest for 30 minutes.
      5. Use a scale to divide the dough into 4 bun shapes, gently. Place each bun onto a baking sheet lined with silpat.
      6. Use an egg wash to brush the tops and add sesame seeds.
      7. Bake in a 350F oven for 25 minutes.
      8. Allow the buns to cool to room temperature before slicing.

      Heraclitus Ethos hello, yes I used golden flaxseed meal and also the egg wash. I let the dough rest, and then applied the egg wash and then the seeds. All turned a purple color??

    They look delicious, but tiny. Is the solution to make them flatter? I was planning to use with Kirkland frozen 1/3-pound grass-fed patties.

    Why do you need psyllium husk with flax and xantum gum if there are eggs?
