My best friend and I would trade houses on Sunday - she’d get French bread pizza and I’d get an old-fashioned southern Sunday dinner with homemade biscuits, venison, okra, mashed potatoes. We’d shell peas and pick corn from their enormous garden, but I never learned to cook any of it until much later.
Just like mom made for me when I little, I'm 60 now and mom has passed. I'm going to make this for breakfast tomorrow morning and have fond memories of her. Thank you.
I was raised eating these. My mom would whip them up often! I’ve made them using instant mashed potatoes many times as my family loves them for breakfast topped with fried egg over medium. Good stuff. Though I do season mine a little more w and fry w a pat or two per cake of real butter! 😁..

We’d eat ours with ketchup - like tater tots. But whatever you add to the recipe just find something to compliment. My mom made these from a family recipe book (she was born in New Orleans) and she’d add cheese, crumbled sausage, or anything else from the “leftover bowl” in the fridge. Anything she didn’t use went into a stock pot with broth or pasta sauce to make soup.
I'm really grateful fr this, but i have one question, do you have to use Mazola oil? can you use like olive oil? im not that big of a cook so i just wanna know :)
If I were you I would not use olive oil because I think it would add a stronger taste to the recipe. Probably any milder tasting oil such as corn oil or canola oil. Hope this helps and enjoy your cooking. It gets easier with time. These videos on TH-cam are very helpful!

Potato pancakes are NOT American in origin. They are European, and NOT made with mashed potatoes. The potatoes are shredded. Do some research on Polish or Slovak potato pancakes. Much better!!

You can substitute some instant flakes. I've had diced onions in them, too. Looks great!
