Potato Cakes - (Tater Pancakes) - Depression Era -The Hillbilly Kitchen

  • Potato Cakes - Tater Pancakes are an old recipe, at least from the Great Depression era, but I believe this recipe may be a lot older. This delicious dish can be served on the side, or as the main course.
    There's an endless combination of foods and flavors that can be added to them, which makes for the perfect way to clean all of the leftovers out of your refrigerator.
    This recipe can be stretched to feed an unexpected number of guests.
    Ingredients for the basic recipe:
    2 cups of leftover mashed potatoes
    1 egg
    3/4 cup of flour
    1/2 cup to 1 cup of milk
    Salt, pepper and onion powder to taste.

    Thank you for your testimony. My 45 yo son suffered a brain aneurysm and suffered two strokes back in October. Today, praise the Lord, he is back working and has had no loss of faculties. I know prayers are answered. I give God the glory for all that is, ever was, or ever will be. Amen.

      I had a brain aneurysm and wasn't that lucky. Lost use of my left side. After hours and months of therapy. I did learn to walk and did get some use of.my side. Memory problems. Short term. From 1980 till now. Been rough raised 2 boys. Ann

      I'm 65, my mom used to make these when I was a kid,love them, eat them with applesauce, imagine this is a ol recipe, she used to make bread pudding also, which is good also.

    I'm Polish and we were all talking about the weekends when my Dad would make potato pancakes for breakfast. So, I made Dad's Polish potato pancakes for dinner the other night. Was my comfort food that night thinking of my Dad.

      @@carolsyman5868, my German Pop told my English grandmother when they married that he didn't care what she cooked, but he did want potatoes at every meal. My Grandma could cook and we all cook just like her. I miss my family, but have wonderful memories of us cooking together.

    My grandmother lived through the depression but her potato pancakes never did anything but satisfy her family. I make these anytime I have leftover mashed potatoes and my grandkids love them.       If i run out of fresh potatoes, i've even made them with dry, instant potatoes out of the box. They're good too! Just make sure you don't get too much liquid in them, in order to fry up good!

      Cut through the middle of a biscuit.... spread butter on it then add the hot mashed potatoes.
      He'll probably love it.
      My cousin taught me about mashed potato and biscuits when I was 8 years old. Now I'm 73 and it's still one of my favorite foods.

    I'm 32, my father is 70, he used to make these for me as a kid, 20 plus years ago, like his grandmother made for him. She was born in 1901, married and a mother of 2 toddlers when the Great Depression hit in the Pocono Mountains. Thanks for taking me back. Sending him this video as well. God bless.

      I am more partial to fried okra and squash than green matters. But I also love tater cakes. A side benefit of making too many mashed taters and applying the waste not want not principle.

      S. Lee Mccauley I always make more mashed potatoes than I need just to make potato cakes lol. I never tried fried okra until I moved to the southern states (or grits). I remember thinking “why didn’t anyone ever tell me these existed?!?!” Lol

    Becky, I am 80 years old and an old country boy with 10 siblings, most with long lives, raised on such. We never went hungry but were very poor by today's standards. I appreciate your religious views and ask that you would pray for our country at this time, that we would elect leaders who are religious that practice what they preach. God definitely loves us, and we must show our fellowman the same even though they may be different as your beautiful potato cakes. I am deeply worried for our country so I'll pray as I try your salmon and potato cakes this week not for them to be good, but for our country.

      I appreciate your sentiments entirely, and also ask a favor. Please also pray for my brothers and sisters who have been held hostage by Hamas for now over 6 months. While most are Israeli - Jewish, Christian, and Muslim, some are of various nationalities, still all of the hostages kept against their will from their families are our brothers and sisters (and children) in humanity. 🙏🏼 May they all be released in life and unharmed as soon as possible.       My dad's ancestors went from County Cork, Ireland, to Boston, Massachusetts, USA, during the potato famine.
      My mom's ancestors went from Ireland (I don't know which county) to Canada during the famine.

      Our family name is Gallagher. And I'm 75 and I asked my Gram," where did u come from in Ireland?"
      And SHE said, "count Cork".
      Fast forward 50 yrs and my sister and I went to ireland for 5 days🥰. In a gift shop a man heard us talking and HE said, "where are u girls from?" And "i" said, "well our family name is Gallagher and our Gram told us we're from Cork." And He laughed
      And said,"When we got to america we had ALL left Ireland FROM Cork, because Cork was our only port. There was a big sign
      Over the gate for everyone from "Cork" to go thru and get registered. Beside your name, it said origin; next to
      That they wrote Cork Ireland. When u got a job they wrote on your papers again that u were from Cork.......now the Gallaghers all came from Sligo(county sligo) that's up the road a piece."💝 it was so funny to us that all our lives WE had said we were from Sligo.🤭🤭🤭🤭🤭

      I went to Google and typed in" where does the name Noonan come from in Ireland?" PLEASE DO THIS SEARCH there is so much wonderful info info there about your name. The chieftain of that area was a Noonan. Several Barons were Noonans. The spelling of Noonan back in history in Gaelic. Products available w your family crest and here's a wonderful bit; your name means "Beloved" 🤦‍♀️

    My heritage is from Ireland. Back in 1812 many of my family came either to Canada or New England states. This recipe came with them along with others that I've tweeked to fit our family. I love the way you introduce your faith in your videos. My great-grandfather was a traveling minister from Michigan and went to St. Louis, I'll., Indiana and Ohio to speak of our Lord Jesus Christ to thousands. He taught my father the most about Revelations. My dad got me interested in studying revelations since I was 16. I am now 61 and I'm sharing my learnings with my adult children who grasp their heritage with open arms. God bless you and all who watch your videos.

    My grandmother made these, but didn't add the milk. They were great! I don't remember ever going hungry as a kid, but I also never realized we were poor. My mother and grandmother made sure that what we ate kept us full.

    At 40 years old my daughter had a stroke, she was the one that pressed into the Lord because she knew that if God did not intervene her life as she knew would change forever, thank God for being so wonderful to his children. In 3 months my daughter returned to work as a Nurse, very unheard of, with no loss of speech or brain function, thank God he is sooo Good, i love your show. From NJ

    Have just recently viewed your videos. This one took me back to early teens and before. My mother who is in heaven loved to make my brother sister and myself potato cakes. We adored them then and us girls love them now. Mom has been gone 18 years but is in my heart and thoughts everyday. Thank you for going over the recipe. We loved them plain or w cheese.     I'm 66 years old. When I was growing up we called them potato pancakes.

    I give God all of the Praise and Glory. It's like I told a girl the other day that asked me if I was a preacher when I told her something that God told me to tell her. I said no I'm not a preacher. God will talk to anyone that is truly listening. When God tells me to do something I do it.

    Thank you for sharing this. It brings back memories of my granny. And how she could feed a whole family with next to nothing. And it tasted so good. As kids we didn’t know they were poor, we thought everyone ate this way. Johnny cakes with field peas and snaps cooked with bacon grease….. oh my god I could eat that all day long. Home made biscuits with honey to sop! Delicious! She would ask, you want some blueberry cobbler? And I would say yes! She would hand me a bowl, and say go pick them, and I will make it. Nothing like fresh blueberry cobbler with vanilla ice cream! I sure do miss my granny. Country folks can survive, and make the most of what they have. I dont know how I could get through life without knowing the name to call. I'm 71 and I came to the lord when I was 13 yrs old and devoted my life fully at 20 to the ministry. .     Becky, I tried your recipe for potato cakes tonight for supper. They came out great. You're right about lowering the heat on the second batch. They got a little crisper, but I caught it in time. I just made plain ones as my hubby doesn't like anything fancy. But when I shared about you adding cheese, bacon or onions he was interested. 😁

    I worked at a hospital in a unit where patients were coming in on a regular basis. Some of the patients wanted to bring something to share with the staff. One of our patients was a very kind and deeply religious Jewish lady. One day she brought in a large platter of latke’s (potato pancakes). They were delicious and they were just like my mother’s. I told her this She was very surprised that we cooked these because she knew we were not Jewish ( we are Southern Baptist). This is something that goes back many, many years. Probably as far back as the existence of potatoes.
    I love your recipes, and the way explain how to make the recipes. I especially love the faith messages you always include in your programs.

    My Texas mama passed many years ago. My sisters and I shared her recipes amongst ourselves, but we couldn’t find her recipe for potato pancakes. Obviously, being raised on a farm with her nine siblings and without a mother, she memorized the recipe. Putting our heads together and through hit and miss, we came up with a recipe almost identical to this one. Very excited to see we came so close.       Oh sweetie , we are the same age & my grandmama would put almost anything in them to stretch them so we all had enough for breakfast & make gravy to go on them . They were usually left over from last night's dinner meal . She never let anything go to waste . We also had " Johnny cakes " ie cornbread pancakes .

      We always called them potater pancakes. We are from Blytheville Arkansas, and everything had an ER on the end of most words like yeller, winder, and potater. I can't think of all the words. I had to go to speech therapy when I moved to Chicago from Arkansas. I loved these potater pancakes, especially if my mom had the money to buy sour cream and or applesauce to go with them they were really good.

My 3 grandmamas were very kowledgeable & made almost all our toppings for things . My favorite was the blackberry jam on everything as a kid . It always made certain leftovers much better the next day for breakfast .

    Irish viewer here. We make Potato Bread - same recipe, but a much stiffer doughy mixture which is rolled out and cut into triangles which are then shallow fried in oil. You fry it with the soda farls and serve with egg, bacon, sausage, and fried tomato - that's an Ulster fry! The Appalachians were settled by the Ulster Scots, which accounts for similar foods, bluegrass music and blood feuds LOL! And religion, it looks like ... Potato Bread is hundreds of years old. When the Potato Famine struck, soda bread became more popular. In the south of Ireland, Potato Bread is known as Boxty.

    I "discovered" this channel and this kind lady this morning and I've been watching several of her videos.
    Not only are the recipes, her delivery and demeanor just like I was raised in (miss you Mama RIP 1992),
    but I know now I was led to find her this morning.
    I've been having a really hard time lately and most all of my relatives are gone now, so short of my
    great wife, I've been left to my own devices to work out of things. I'm a believer and I pray a lot,
    but I do suffer from the belief that "I ain't nobody" and that God probably don't think much of me
    and therefore wouldn't spend any time helping me.
    In other words, I needed to find this channel and hear some of what she's got to say - because she's
    right.

    Tater-cakes are one of my very favorite foods, fried in butter of course! I grew up on them. My Granny never put egg ,or flour ,or baking powder. They were always just the leftover mashed potatoes from Sunday dinner that she fried up in butter for next mornings breakfast. As an adult, I have always made a lot of extra mashed potatoes so that I can have my Tater-cakes for the next day or two.       My Mother used to make these and I never watched how she made them. She's been gone since 1996, and I have often wondered how to make them. She was born in 1919, so she was definitely a Depression-Era kid. Thanks for sharing this recipe. I've missed them.

    My granny made these for all of us grandkids when we were growing up and I loved them. Still do. My beloved granny was a good ol girl from the Appalachian Mountain region of Virginia and was a phenomenal cook. This brings back memories. Thanks for sharing. 😎

    I remember both my Mother and Grandmother making these when there was left over mashed potatoes or even just using whole potatoes that they would shred up. They would vary the recipe every time so that we would not get bored with them. Always delicious. Thanks for the reminder.

    Here I sit eating from your potato soup recipe and watching you make potato cakes! My Mamaw made them often, and I’ve been making potato soup for years, but I still enjoy seeing how another Appalachian woman makes hers. We live in the north Georgia Appalachian foothills but the accent is similar. Much love to you and your family!

    I was raised in Texas and Georgia (by northerners-haha) and missed out on some of the good home-cooking from the south. I do appreciate you going out of your way to share with us your recipes, cooking skills and of course your deep love for GOD, FAMILY and our COUNTRY.

    I was raised on tater cakes and my mamaw called them “Arsh taters” also. Lol. I’ve been binge watching all of your videos this Memorial weekend. You and Brett keep doing what your called to do so that we can enjoy your wonderful channel. You cook and speak from the heart and it shows. This Kentucky gal appreciates you! 🇺🇸

      My grandma called them “Arsh” potatoes too. I have since found out that means Irish potatoes! Lol. Just add southern accent.

    I make mine like my momma did. Leftovers mashed taters have to be cold, self rising flour, salt, pepper, and chopped onions, chopped dried onions, that's it. We don't ever put anything else in them. Fry them in a skillet of hot grease or cooking oil, make sure they're golden brown on both sides. Eat immediately because they taste best while hot. My momma always called them - fried tader biscuits. She was born and raised in Tennessee as well as her people.
    Love your cooking channel and I enjoy watching your videos. I appreciate as much hearing you speak of Christ and the scriptures. May God bless you for your efforts.❤

    I am visiting during the crazy year of 2020 and I subscribed almost immediately after you started talking because I just really felt comfortable and like this is a place I want to be able to visit often and then when you put a little thing in there that said if you don't want to hear about God, skip to a particular time stamp you put up I got all excited because you were going to talk about God! Now I really feel at home! Thank you so much for this lovely Channel and I am so glad that people's prayers have stirred God to give such an amazing result for your Channel! I haven't checked out any other videos yet but I know I'm going to love everything I watch already! God bless you and thank you again!

      I was looking for something different to do with hamburger and your name Hillbilly Kitchen caught my eye. I live in the Great Smokey Mts of N.C. and all my family have lived here for over 200 yrs. You cook alot like my mama...and she was an amazing cook. I loved it when I heard you talking about our Lord and our country!! Prayer is very powerful and I will be praying with you for our nation and your program. May God bless you in all you do.       @Deb Harris We actually have a recipe book that has those back over 200 yrs. I really need to get in that big hard folder with big rings ppl used to have in grade school and put them on something for easier access.

    I remember my grandma making these when I was a kid! I love my tater pancakes!! My husband loves them too, he likes sour cream I love putting onion and chives cream cheese on mine!! Oh soooooo good! My grandma used to can maters, she kept a jar on the table it was like a puree almost, I ate it on everything! Real pancakes, tater pancakes, anything!! I wish I had her canning skills! This made me miss her..
