- The authentic Palakkad Brahmin cooking in Tamil.
ingredients:
Veges [ like ash gourd, pumpkin, Capsicum, carrot, tomato or of your choice] - 2 cups
Coconut oil / Clarified butter (thenga ennai / nei) - 1 tbspoon
Tamarind (puli) - 1 gooseberry size
Jaggery (vellam) - 1 small piece
Turmeric powder - 1/2 tspoon
Green chilly -1
Sambar powder - 1 and 1/2 tbspoon
Asafoetida - 1/4 tspoon
Thuvar dal - 1/2 cup
Salt - to taste
Water - as required
To temper
Coconut oil/ clarified butter - 1 tspoon
Mustard - 1/2 tspoon
Fenugreek seeds - 4 to 5
Red chilly - 1
Curry leaves - 4 to 5
*Quantity of tamarind, chilly, jaggery depends on individual taste

Normally in Palghat people's sambhar is usually use of coconut & other spices( Archvatta Sambhar) & Turdal.Where as in Podi sambhar all other procedures r same expect use of sambhar instead of grinding.Very quick and easy 😊
