    I just use water in bread-making and don't proof the yeast first. Mix the yeast into the dry stuff and get going. Try kneading the dough in the bowl with a rice paddle or silicone spatula. Then, it remains softer so it absorbs into the wheat bran as it rises. When you roll it out use as little flour as possible. This gives a more tender naan. Don't worry about the shape. When I used to eat it at restaurants back in the day, they were more oblong or triangle shaped. Also, they cook faster and don't dry out as much if you put a lid over the cooking naan for a minute.

I was plant based for about 3 weeks and felt amazing, then was invited over to friends for dinner and had meat and was achy, headache and bloated all night. Need to figure out how to make that work when invited for dinner.

    Naan in Indian restaurants sometimes comes with the garlic included in the batter so you can get more garlic to each naan. Also to help prevent the ‘crusty’ effect on the risen dough you could try dampening the cloth before you cover the bowl. BTW love the book 😊

    If you have access to an Indian grocery, get some dried methi leaves (fenugreek leaves) and some carom seeds (they look like caraway but completely different taste) and pat that into your naan for a lovely taste. Love your videos - you make me want to get in the kitchen and try something new!

    You don’t need to soak and active yeast in water. Just add it to the dry ingredients, then add water, knead-it’ll poof the same in the bowl.
    Either way you’re going to have to let it sit and poof anyway in a bowl, with a wet paper towel or towel over the bowl. 🤷‍♂️

    • @brigboss
      @brigboss ปีที่แล้ว +1

      The thing with soaking the yeast, before mixing it in the flour, is to test if it's still active.

    You let it rise in a warm place covered until it doubles in volume. You want it a little sticky, that will give you a softer bread, more flour makes it tough. Flattemn out the bubbles gently so the whole insides gets cooked. the whole thing should inflate like a baloon. A traditional naan has yogurt in it also, makes it soft.
