My great grandmother raised 11 children and often made biscuits with onion and milk gravy. She said that during harvest she would add fried potatoes. But they never went hungry. So you feed your family how you can.
I found your video intriguing. You took what you bought for 30.00 and made a bunch of meals out of it. People just need to use their imagination and create some pretty good meals. Thank you for sharing.
Not every meal needs a veggie, but for anyone who may want some you could have cut up one carrot in small pieces and cook it with the chicken. A full belly when times are hard is most important than veggies sometimes.

I even took leftover cooked chicken from last night's chicken marsala and shredded it and put it into a parmasan chicken pasta bake. My family loved it. No-one in my family was impressed that I used my leftovers as a whole new meal...but I was 😊

I feel like the vegetable thing is a "tell me you have never been really poor without telling me" type thing. I appreciate where they are coming from -- everyone knows it's best to have veggies if you can...But in this point of view, FED IS BEST. So we just have to be careful about our judgements.

Love your extreme budget videos. Grew up with elderly grandparents and two unmarried aunts. My grandma endured the depression and often cried when we spent too much at the grocery store, worried about the following week. Lots of people are finding the increased prices hard to budget for. Your frugal videos are a great service to all of us.❤

Hey, Brooke! I think what you provide here is an amazing service to those that are struggling for whatever reasons to find a way to feed their families. I agree with your philosophy of food in your family's belly is what's important when money is very tight and hunger can be only a step away. Thank you for trying to destigmatize the reality that for some, just basic food is the priority, never mind a " healthy" or "balanced" diet. Also, thank you for showing people how they can use the items they can afford. That is valuable in and of itself. On a side note, pancake batter can also be used as batter for fried goods like chicken, or fish. Thank you for sharing! You are awesome!
Ahhh, Brooke, I love you so much. I’ve been so depressed this last week or so. THIS video gives me hope and desire to make a meal. I haven’t even felt like cooking. Nothing looked or sounded good. I have a bag of frozen chicken leg quarters. I have a big bag of pancake mix. I have some tater tots. I have brussel sprouts. I have everything that you used except bagels. But, guess what!? Yes!!!! We, my husband, our children(when they were still at home)and myself, often had it for our supper w/a can of peas if we have them! Still do to this day!Love breakfast for supper and kids did too!
Same here! Loved hamburger gravy over toast/potatoes or rice. She also bought, on sale only, sliced/shaved beef in 4oz packages with a homemade white gravy over toast. Yummy!

Sometimes just not going to bed hungry is all we can do. We are fortunate not to be in that situation anymore but I still like watching these kind of videos because they inspire me to do more in the kitchen. It is easy to get in a rut and make the same meals over and over to the point of burning out on them.
Another good pantry item is powdered milk. Until recently I had never really used it but I do now. It is great in gravy and cream sauces and will save quite a bit over using milk or evaporated milk
One thing I love about this channel is how you do use pantry staples, BUT you also show us how you stock up for those on a budget! It seems like a lot of TH-camrs act like oil and spices just magically exist, whereas you show us exactly how that fits in to the overall budget.
For your cinnamon rolls, just spread softened butter (very thin layer) onto your dough rectangle, then sprinkle your cinnamon and brown sugar on top. Roll and slice. I wrap the roll of dough in plastic wrap and refrigerate for 15-20 min before slicing. Much easier and more even to slice. I make them a lot.
Brooke, I am lucky to be well enough off to not have to worry about food insecurity. However, I did grow up very poor too. I love watching your videos because not only do you give me fun ideas, but you have such a great message. I really admire you and your family. You bring happiness with your videos. Thank you.
I really enjoy these videos Brooke. You can come up with meals to make out of a few ingredients that most people couldn't figure out. The meals all looked simple to make and delicious and were definitely budget friendly. You don't need to always have fruits and vegetables for all your meals especially if money is tight which I feel like it is for a lot of people right now. Thank you for making these videos because they are a blessing to all. Keep doing what's in your heart to help people and ignore the negative comments.
I know this video is a month old when commenting. I loved how you referred to how people feed their families during the Great Depression. I remember my mom telling me about how she feed her and my older siblings (4) in the 50’s. She didn’t have much money to feed. She said that instead of milk she only used water for the grave and to make biscuits. Sometimes she would add a little bacon or hamburger meat to the grave. Not much of either. She saved the dripping from the bacon and sausage. She didn’t talk much about vegetables or fruit for every meal. It was like you say. Filling your belly. She also said that rices and oatmeal made a lot of meals. My mom passed away nearly 40 years ago. I’m trying to remember some of the things she taught me to stretch my grocery budget. Your channel helps to bring back those memories. I’m nearly 60 and been blessed. Thank you again for all you put into your videos. You made me cry when you were talking about your cinnamon rolls. Things don’t always turn out the way we want them to. But your family is awesome. They appreciate all you do to take care of them. Hope you have a Happy New Year!!!

I went today and picked up a pack of bologna. Old Oscar Meyer's was $8.00 and I put it right back. 😳 There's other ways I'll spend my $8.00 to feed my family.

The bones that you cut the chicken off of would make good broth if you cooked them in that instapot. You could use that to cook rice in for extra flavor/nutrition.
@brooke I always smile when you mention that there aren’t any veggies in a certain dish or meal…heck I’ve been a vegetarian for many many years and we don’t eat them at every meal… 🥰 Also, I definitely feel like frozen are as good as fresh because of how quick they get them out of the fields and into the freezer.
First, I grew up with stories from my Mom about how her family lived off potatoes and even just soup made from the brown stuff in the pan after frying the potatoes before - but really just water and potato browning. Mom was second youngest in a family of 8 including the parents (well, 9 for awhile but they lost one young). Anyway, they often couldn't even get eggs - it depended on if a local farm had any left when they got there. Things were really rough! Nowadays, the shelves are more bare than ever but they try to hide it at the store by pushing 2 or 3 items to the front but it's all bare behind those items, or in some cases they have rearranged whole aisles to try to hide the gaps. I have diabetes now in my older age so I normally wouldn't be able to eat some of the meals you made, but you know what? If the tummy is growling you eat what you can get and/or have on hand. Thanks for that spin on making meals from very little. I just spent $350 between 2 stores for my Monthly grocery shop - there was quite a lot of meat in that and things like coffee, plus $31 of items I donated to our local food bank. I buy large family packs of meat, but divide them up when I get home for smaller meals as there are only 2 of us here. Oh, the pineapple chicken actually really appealed to me. :) I may try that this week.
I grew up in the 70's and 80's we didn't have much my mom used to make macaroni and tomatoes sometimes she would add cut up hot dogs, we had a lot of spaghetti meals that would stretch don't ever feel bad about what you're feeding your family as long as they get fed, I love how you just eyeball stuff that is how I cook too, so did my grandma.
Made your chicken casserole yesterday..used herb stuffing mix instead of cornbread mix because its what I had on hand....OMG it was delicious!!!! Low ingredients and low mess...I am all about it!!!
I loved this video. I did have one suggestion though. If you had a cup of bacon grease like most southern folks do,that would have added flavor to your Brussel sprouts and the gravy. I know you probably already save yours but bacon grease is by far one of the best things to save.I just thought maybe for folks that don't know how you could mention it and how best to store it. Great job on this video, I love your boys reactions to the food you make them.
I love (and appreciate) that you add the cost of what would be charged if a main ingredient were purchased in the quantity needed. I've watched and now avoid some youtube channels who don't do this instead it's "I buy my **whatever** in bulk and it costs this" which would change budget cosiderably. Or worse not add at all.
I don't think a professional chef with all their knowledge and glamor can do the wonders you do in your kitchen; we are a family of 4, my kids are 21 and 20, for the past 2 years it was only my husband and I so I wasn't cooking as much as when my kids were little but that has change because you inspired me to get back in the kitchen, stock my pantry (nothing fancy) and attract my children back to the dinner table with home made delicious dinners, so far is working not just we regained the beautiful enjoyment of family dinners but also we all are saving money by eating at home. Thank you Brooke, may God keep the blessings among you and your family and also in your pantry.

Many years ago I was a single mother with 2 boys to feed on a measly budget , I can remember feeding things like macaroni and chicken broth or pork n beans with a little fried hamburger. You do what you have to. My oldest son had a lot of lean times with feeding his kids in the beginning, so he feeds them what I did. You have a cute personality and your family is adorable. Keep doing what you do. A big 👍
Great video. My father was in the military and as a kid I didn't know that money was tight. After my mother passed away I was in my forties, my Father talked about why we did without some things. My mother was one of the best cooks I knew and my friends all agreed. We do what we can and do what we can to make it edible. My husband and I started out on a limit budget an I did everything to make my meals as tasty as possible. Please keep making these meals.
You are absolutely right on all counts!!! People need to learn to cook outside thier normal way of cooking....times like these call for us all to make do with what we can get not necessarily what you are used to having your kids are proof they were excited for everything you made so anyone that thinks it won't be good should try it just like you did!! I appreciate you and these videos so much. You're right, fed is best! Sometimes I forget this and put too much pressure on myself. I love making cheap meals both for fun and highly out of necessity! I recently bought a big ol' cabbage and using pantry items like canned tomato sauces, lentils, spices etc I made several trays of cabbage rolls to freeze and then I used what was left in a cabbage curry, with just sliced onion and cabbage, coconut milk and spices and then I ate it with rice for a weeks worth of lunches and a few dinners! All from one cabbage! You can add it to soup, stir fry, it's really good for anything and a cheap way to eat veggies. We also make a ton of chili very cheaply. We save a lot of money by not having meat or dairy.
Pineapple Sweet & Sour sauce: 1 can of pineapple juice, 3/4 cup sugar, 1/4 cup apple cider vinegar 1 cup water, reserve 1 tablespoon of corn starch mixed in 1/4 cup water. Bring liquid to boil before adding the corn starch mixture. Slowly add cornstarch bring back to boil then simmer on low until thickened. Add fresh green pepper, chunk pineapple & veggies of choice. Debone cooked chicken, then either coat in egg/milk mixture, then coat with flour or cracker meal or can use a thin pancake batter, can also use corn starch if out of flour or cracker meal to make it tempura style & fry. Serve over rice, Jasmine rice has best flavor.

Part of what’s great about channel is the critical thought that goes into everything from shopping day, (when nothing you planned to make was either available or affordable & you need a new game plan somewhere between aisle 5 at store A & the freezer section at store B). It’s poetry in motion. Did it for years… still do once in awhile. Picked up some good recipes during your challenge. I did a slightly less extreme $65 shop for 2 weeks today & feel like I’ll be eating quite well between that and a bit of pantry. You inspired me!
You just gave me a memory...when I was pregnant with my child...I had no money for food...so all I had to eat was peanut butter and mayonnaise sandwiches...then I got a job a nd things got better...but believe me...I have gone without so many times and I am now 76 and eat very little...but I survived!!!

As I was watching you make your pineapple chicken it reminded me of something that I make for my husband. And I think you could use it as one of your budget meals. He was in the Marine Corps and was stationed over in Hawaii and he come home talking about something called Hulu chicken. Now there’s all kinds of recipes online for this but we keep it very simple. We use 5 to 6 chicken thighs,one cup of ketchup, 1/2 cup of brown sugar and one can of pineapple rings. We usually just let it marinate overnight in the fridge and then he grills it the next day and we eat the pineapple rings off of the grill too. Growing up in Indiana I would’ve never put those things together Lol I think you could probably bake it in the oven.

Usually when someone does one of these videos I think of what else they could have done. This is the first time I have no suggestions. I love that you made different meals instead of having the same thing. You are so creative! Thank you so much.
I'm lucky because I can do a loop that is about 3 miles and hit Aldi's, walmart, costco, sams, dollar tree, BJ's, shop rite and stop and shop. My daughter works at Bj's so that membership is free, my mother in law has me as the second card on her Sam's (free for me) and I share the costco membership with my bestfriend.. That way I can get the best deals from them all.
Just wanted to let you know, you can make corn fritters out of pancake mix. Also, if you cook your rice the day before and let it chill in frig overnight, your fried rice will not be soupy. The potato tot casserole, ...beef mixture could have been split into and turned into beef stroganoff over egg noodles. Also, you can make “sopping “ biscuits without any crisp or butter. They hold up well to gravy. Could have taken bones from chicken and made a gumbo and sausage gumbo to use rest of rice up. I think peas & carrots might have been better option instead broccoli mix. That way everyone would have eaten meals, or get onion and pepper mix. Could have made fried chicken on a biscuit, or fried chicken on a waffle drizzled with syrup. Just some more ideas.😊
I just wanted to say...I came across your channel by luck and I love it. I lost my Mom to Cancer last December and my Dad went shortly after in March. My living situation is much better now thank God! At that time in my life i was not worried about if i had any vegetables to eat i was just happy to have something in my belly. One of my favorite childhood meals my grandmama made was macaroni and milk. Boil macaroni and drain. In the sauce pan add a small pat of butter add macaroni, top with some milk like a soup. She added salt , pepper, onion powder and garlic powder. It is so delicious and yet sounds so gross. It was cheap and filled our bellies. I served this to my kiddos and as adults still request it.
This is the first time I've seen someone mention macaroni and milk! My Mom made this for me when she made homemade Mac and cheese because I refused to eat cheese as a child and would not drink milk without chocolate. Butter and cream I adored. I loved it. I should make it again. I eat cheese like a rat now and like milk because it wasn't forced to eat stuff and get a negative view of it.
It's really good if you cook the macaroni in chicken bullion. Also you can add a bit of corn starch. That's been my ultimate comfort food for many years. My mama made it when I was very little. I'm kinda old now and money is pretty tight. But I feel rich when I eat that.
Flour, potatoes, rice... these can be stretched & made into so many dishes. Rice porridge is my fav. 1c rice to 8c water, which feeds 4. Thanks for this video!

I agree with your philosophy of food in your family's belly is what's important when money is very tight and hunger can be only a step away. Thank you for trying to destigmatize the reality that for some, just basic food is the priority, never mind a " healthy" or "balanced" diet. Also, thank you for showing people how they can use the items they can afford. That is valuable in and of itself. On a side note, pancake batter can also be used as batter for fried goods like chicken, or fish. Thank you for sharing! You are awesome!

Sometimes just not going to bed hungry is all we can do. We are fortunate not to be in that situation anymore but I still like watching these kind of videos because they inspire me to do more in the kitchen. It is easy to get in a rut and make the same meals over and over to the point of burning out on them.

Another good pantry item is powdered milk. Until recently I had never really used it but I do now.
It is great in gravy and cream sauces and will save quite a bit over using milk or evaporated milk

One thing I love about this channel is how you do use pantry staples, BUT you also show us how you stock up for those on a budget! It seems like a lot of TH-camrs act like oil and spices just magically exist, whereas you show us exactly how that fits in to the overall budget.
For your cinnamon rolls, just spread softened butter (very thin layer) onto your dough rectangle, then sprinkle your cinnamon and brown sugar on top. Roll and slice. I wrap the roll of dough in plastic wrap and refrigerate for 15-20 min before slicing. Much easier and more even to slice. I make them a lot.
Brooke, I am lucky to be well enough off to not have to worry about food insecurity. However, I did grow up very poor too. I love watching your videos because not only do you give me fun ideas, but you have such a great message. I really admire you and your family. You bring happiness with your videos. Thank you.

I really enjoy these videos Brooke. You can come up with meals to make out of a few ingredients that most people couldn't figure out. The meals all looked simple to make and delicious and were definitely budget friendly. You don't need to always have fruits and vegetables for all your meals especially if money is tight which I feel like it is for a lot of people right now. Thank you for making these videos because they are a blessing to all. Keep doing what's in your heart to help people and ignore the negative comments.
I know this video is a month old when commenting. I loved how you referred to how people feed their families during the Great Depression. I remember my mom telling me about how she feed her and my older siblings (4) in the 50’s. She didn’t have much money to feed. She said that instead of milk she only used water for the grave and to make biscuits. Sometimes she would add a little bacon or hamburger meat to the grave. Not much of either. She saved the dripping from the bacon and sausage. She didn’t talk much about vegetables or fruit for every meal. It was like you say. Filling your belly. She also said that rices and oatmeal made a lot of meals.
My mom passed away nearly 40 years ago. I’m trying to remember some of the things she taught me to stretch my grocery budget. Your channel helps to bring back those memories. I’m nearly 60 and been blessed.

The bones that you cut the chicken off of would make good broth if you cooked them in that instapot. You could use that to cook rice in for extra flavor/nutrition.
@brooke I always smile when you mention that there aren’t any veggies in a certain dish or meal…heck I’ve been a vegetarian for many many years and we don’t eat them at every meal… 🥰
Also, I definitely feel like frozen are as good as fresh because of how quick they get them out of the fields and into the freezer.
First, I grew up with stories from my Mom about how her family lived off potatoes and even just soup made from the brown stuff in the pan after frying the potatoes before - but really just water and potato browning. Mom was second youngest in a family of 8 including the parents (well, 9 for awhile but they lost one young). Anyway, they often couldn't even get eggs - it depended on if a local farm had any left when they got there. Things were really rough! Nowadays, the shelves are more bare than ever but they try to hide it at the store by pushing 2 or 3 items to the front but it's all bare behind those items, or in some cases they have rearranged whole aisles to try to hide the gaps. I have diabetes now in my older age so I normally wouldn't be able to eat some of the meals you made, but you know what? If the tummy is growling you eat what you can get and/or have on hand. Thanks for that spin on making meals from very little. I just spent $350 between 2 stores for my Monthly grocery shop - there was quite a lot of meat in that and things like coffee, plus $31 of items I donated to our local food bank. I buy large family packs of meat, but divide them up when I get home for smaller meals as there are only 2 of us here. Oh, the pineapple chicken actually really appealed to me. :) I may try that this week.
I grew up in the 70's and 80's we didn't have much my mom used to make macaroni and tomatoes sometimes she would add cut up hot dogs, we had a lot of spaghetti meals that would stretch don't ever feel bad about what you're feeding your family as long as they get fed, I love how you just eyeball stuff that is how I cook too, so did my grandma.
Made your chicken casserole yesterday..used herb stuffing mix instead of cornbread mix because its what I had on hand....OMG it was delicious!!!! Low ingredients and low mess...I am all about it!!!

I loved this video. I did have one suggestion though. If you had a cup of bacon grease like most southern folks do,that would have added flavor to your Brussel sprouts and the gravy. I know you probably already save yours but bacon grease is by far one of the best things to save.I just thought maybe for folks that don't know how you could mention it and how best to store it. Great job on this video, I love your boys reactions to the food you make them.
How do you store your bacon grease? Also are you supposed to remove the small bits of bacon from it?

I love (and appreciate) that you add the cost of what would be charged if a main ingredient were purchased in the quantity needed. I've watched and now avoid some youtube channels who don't do this instead it's "I buy my **whatever** in bulk and it costs this" which would change budget cosiderably. Or worse not add at all.
I don't think a professional chef with all their knowledge and glamor can do the wonders you do in your kitchen; we are a family of 4, my kids are 21 and 20, for the past 2 years it was only my husband and I so I wasn't cooking as much as when my kids were little but that has change because you inspired me to get back in the kitchen, stock my pantry (nothing fancy) and attract my children back to the dinner table with home made delicious dinners, so far is working not just we regained the beautiful enjoyment of family dinners but also we all are saving money by eating at home. Many years ago I was a single mother with 2 boys to feed on a measly budget , I can remember feeding things like macaroni and chicken broth or pork n beans with a little fried hamburger. You do what you have to. My oldest son had a lot of lean times with feeding his kids in the beginning, so he feeds them what I did. You have a cute personality and your family is adorable. Keep doing what you do. A big 👍
Great video. My father was in the military and as a kid I didn't know that money was tight.
After my mother passed away I was in my forties, my Father talked about why we did without some things.
My mother was one of the best cooks I knew and my friends all agreed. We do what we can and do what we can to make it edible.
My husband and I started out on a limit budget an I did everything to make my meals as tasty as possible.
Please keep making these meals.

I appreciate you and these videos so much. You're right, fed is best! Sometimes I forget this and put too much pressure on myself. I love making cheap meals both for fun and highly out of necessity! I recently bought a big ol' cabbage and using pantry items like canned tomato sauces, lentils, spices etc I made several trays of cabbage rolls to freeze and then I used what was left in a cabbage curry, with just sliced onion and cabbage, coconut milk and spices and then I ate it with rice for a weeks worth of lunches and a few dinners! All from one cabbage! You can add it to soup, stir fry, it's really good for anything and a cheap way to eat veggies. We also make a ton of chili very cheaply. We save a lot of money by not having meat or dairy.
Hamburger gravy! We have that every couple of months over potatoes or rice.
Pineapple Sweet & Sour sauce: 1 can of pineapple juice, 3/4 cup sugar, 1/4 cup apple cider vinegar 1 cup water, reserve 1 tablespoon of corn starch mixed in 1/4 cup water. Bring liquid to boil before adding the corn starch mixture. Slowly add cornstarch bring back to boil then simmer on low until thickened. Add fresh green pepper, chunk pineapple & veggies of choice. Debone cooked chicken, then either coat in egg/milk mixture, then coat with flour or cracker meal or can use a thin pancake batter, can also use corn starch if out of flour or cracker meal to make it tempura style & fry. Serve over rice, Jasmine rice has best flavor.

Part of what’s great about channel is the critical thought that goes into everything from shopping day, (when nothing you planned to make was either available or affordable & you need a new game plan somewhere between aisle 5 at store A & the freezer section at store B). It’s poetry in motion. Did it for years… still do once in awhile. Picked up some good recipes during your challenge. I did a slightly less extreme $65 shop for 2 weeks today & feel like I’ll be eating quite well between that and a bit of pantry. You inspired me!
You just gave me a memory...when I was pregnant with my child...I had no money for food...so all I had to eat was peanut butter and mayonnaise sandwiches...then I got a job a nd things got better...but believe me...I have gone without so many times and I am now 76 and eat very little...but I survived!!!

I went hungry as a child so much and it is so hard on a kid not eating and more difficult is watching your siblings starve. As I was watching you make your pineapple chicken it reminded me of something that I make for my husband. And I think you could use it as one of your budget meals. He was in the Marine Corps and was stationed over in Hawaii and he come home talking about something called Hulu chicken. Now there’s all kinds of recipes online for this but we keep it very simple. We use 5 to 6 chicken thighs,one cup of ketchup, 1/2 cup of brown sugar and one can of pineapple rings. We usually just let it marinate overnight in the fridge and then he grills it the next day and we eat the pineapple rings off of the grill too. Growing up in Indiana I would’ve never put those things together Lol I think you could probably bake it in the oven.

I'm lucky because I can do a loop that is about 3 miles and hit Aldi's, walmart, costco, sams, dollar tree, BJ's, shop rite and stop and shop. My daughter works at Bj's so that membership is free, my mother in law has me as the second card on her Sam's (free for me) and I share the costco membership with my bestfriend.. That way I can get the best deals from them all.

Just wanted to let you know, you can make corn fritters out of pancake mix. Also, if you cook your rice the day before and let it chill in frig overnight, your fried rice will not be soupy. The potato tot casserole, ...beef mixture could have been split into and turned into beef stroganoff over egg noodles. Also, you can make “sopping “ biscuits without any crisp or butter. They hold up well to gravy. Could have taken bones from chicken and made a gumbo and sausage gumbo to use rest of rice up. I think peas & carrots might have been better option instead broccoli mix. That way everyone would have eaten meals, or get onion and pepper mix. Could have made fried chicken on a biscuit, or fried chicken on a waffle drizzled with syrup. Just some more ideas.😊

One of my favorite childhood meals my grandmama made was macaroni and milk. Boil macaroni and drain. In the sauce pan add a small pat of butter add macaroni, top with some milk like a soup. She added salt , pepper, onion powder and garlic powder. It is so delicious and yet sounds so gross. It was cheap and filled our bellies. I served this to my kiddos and as adults still request it.
This is the first time I've seen someone mention macaroni and milk! My Mom made this for me when she made homemade Mac and cheese because I refused to eat cheese as a child and would not drink milk without chocolate. Butter and cream I adored. I loved it. I should make it again. I eat cheese like a rat now and like milk because it wasn't forced to eat stuff and get a negative view of it.
It's really good if you cook the macaroni in chicken bullion. Also you can add a bit of corn starch. That's been my ultimate comfort food for many years. My mama made it when I was very little. I'm kinda old now and money is pretty tight. But I feel rich when I eat that.

I'm not as price knowledgeable as Brooke is but I'm pretty sure that's a good deal.
It's an awesome price! I saw that this week. My first 2 were 6 qt and I paid double for each. I now have moved up to 8 qt. Enjoy yours as muchas Ido!
