One item from Mario Galaxy 1 that I really liked that was really rare was the red star power up it only made one appearance in a stage. It's a shame it wasn't used more often in the game.

I think the Anchor is the most rare. It's so rare, that many people aren't even aware it exists. It's only function is to stop airships from moving if you fail.
I think people have said by now, but the water bottles in Mario Sunshine spawn when defeating enemies by jumping on them when Fludd is nearly empty. These including the respawning mini-goop enemies.
If you're wondering about the green magic ball in Mario World, that's a reference to Mario 3. That level it appears in is the sunken airship, which is a reference to the airship stages from 3. You didn't actually get magic balls in them, but you did get them from beating Boom Boom in the fortresses.
The blue coins of Mario 64 are always deterministic, you get them from big goombas by ground-pounding rather than just jumping. You can also get them from Boos & Koopas
For Galaxy 2, you should have mentioned the Spring Mushroom. It shows up in only one level in the entire game, and even then you can relatively easily do the level without it.
In Super Mario Land 2 there's another rare item: a bag of money with an M logo. It gives you 15 coins or whatever, I don't remember exactly how much. But there are not many of those during the game.
It might be a bit of a stretch to count this as an item, but maybe the 8-bit rosalina would be the rarest "item" in mario odyssey because it only appears on the Dark Side and Darker Side, and is hidden in both of those.
If you consider enemies to be items in SMB 2 (which you can to a higher degree than you do SMB 1), then that honor goes to the Red Snifit; only one appears in the game, in a random spot in World 3-3.
The sunken ship in super Mario world is actually a ship from Mario Bros 3. Look at the level design then look at a Mario Bros 3 ship design. Now look at how at the end of the ship in Mario Bros 3, you get an orb that ends the level ;) it's a pretty cool throwback

Apparently green berries are so rare they're not mentioned in the video or the comments. Only in Funky, the final stage of the SPECIAL levels of Super Mario World, themselves hidden behind the hidden exits of the hidden star levels, can you find the green berries that add 30 units to the timer when Yoshi eats them. The level is the longest in the game and only has a timer of 200 units, which are shorter than seconds. You cannot beat the level without eating the berries to prolong the timer. Green berries also appear on the intro screen when you start a new game, but that's not a level and you can't get those berries.
I honestly miss the mini mushroom from new super Mario Bros, they need to bring that back it was so fun playing as a tiny pixel that jumps high and drops back down slowly
Kuribo's Shoe appears in 5-3 in Super Mario Bros. 3, and that's it. It didn't appear in a Mario game again until Super Mario Maker (2015). Surprised that wasn't mentioned. I f'n loved using that boot to stomp the un-stompable.
Ik in galaxy 2 if you die a bunch in a lvl there a cosmic Rosalina will appear and if you choose to have her guide mario through the stage to see how you beat it. Though doing so makes the power star turn into a bronze star and if you want a real power star you have to beat the lvl on your own
The invisible cap in Mario odyssey is the rarest in my opinion, I guess we can include all outfits you get after beating bowser but the invisible cap just feels a bit more rare as not a lot of people get far enough to get it
I agree because you need 500 moons to unlock darker side, which is very long and hard to beat, since you have one life per try, and then once you beat darker side you get the invisible suit

In Super Mario 3D Land, in the purple boxes in World 1 and Special World 7, rarely you can get a gold box that has 15 tanooki leaves, 2 Star Medals, and 1 P-Wing, which is the only way to obtain it without triggering the assist block and getting rid of the sparkles from your file stars.
For Galaxy, I would have mentioned the Boo Mushroom. It's only used in a grand total of three levels, one of which is for a whole 20 seconds at the end of a mission, and another isn't even required to use since the Bee Suit is available in the same level. It's even more egregious in Galaxy 2 since it's only used in a single mission, so that begs the question of why they even bothered bringing it back in the first place. Same applies to the spring mushroom, but that powerup sucks anyway so it's no big loss.
Wow never knew about the "Yoshi Cloud" item, that "Cloud Block" was very similar to it. Also sometime you could want to do "Most Useful Items in Every Mario Game" and about those Waterbottles in Super Mario Sunshine couldn't find their original purpose but maybe in theory they were going to recover Mario's Health but that's just a theory Awesome Video by the Way!

I believe this was due to there being no natural sources of water on the roulette wheel and it was a safeguard to prevent having to commit self die to restart the fight if you run out of water. I got stuck on that level a lot as a kid so needless to say, I saw those bottles a lot

In sm64 normal enemies don't have a chance of dropping different coins, what type of coin they drop is set, so if they drop a blue coin(like the piranha plant) it will always drop one, while a goomba will always drop a normal coin.

Isn't the blue shell rarer in NSMB? They only come out of the floating ? blocks or the occasional lottery boxes. Also there are Yoshi fruits in loads of missions, but the gliding bird (I forget its name) is only in two dedicated galaxies.

If you included super mario RPG, my vote for rarest item is the Super Suit. 100 consecutive super jumps is not small task and most gamers have never accomplished this.

The bottle item appeared very common in my multiple playthroughs of Sunshine. You almost always get them when you jump kill the ink bubble slimes.

Galaxy 2’s Bronze Star. If you lose enough lives (on certain quests) and the Cosmic Spirit appears, accepting her offer to help will turn the Power Star into a Bronze Star until you replay and complete the mission yourself.

If a power up is something that changes gameplay in some ways I feel captures should be included in which case I would say the puzzle blocks are probably the rarest in MARIO odyssey
In the first super Mario game I believe personally the 1-up mushroom is the rarest since when you die you can’t get any more 1-ups even in other levels
I'd say the anchor in Mario 3 is, considering it's harder to get and considering how useless it is, more rare than the flutes.
The rarest item in Mario 64 is the jumping box that you grab, it will jump 3 times and break into coins, Its in Shifting Sand land, the blue coins are very common, especially from the big goombas in tiny huge land.
I have a really hard time believing anyone who plays through Sunshine could miss the water bottles. I'm pretty sure if I tried to avoid them for a whole play-through i couldn't.

A rarer item from Mario Galaxy 2 is the Spring mushroom, it appears in one level in chomp works galaxy and that’s it
Isn't the blue shell rarer in NSMB? They only come out of the floating ? blocks or the occasional lottery boxes. Also there are Yoshi fruits in loads of missions, but the gliding bird (I forget its name) is only in two dedicated galaxies.

You forgot the White Cat Bell on Mario 3D World, only obtainable by using Amiibo, it works like the White Leaf but with Cat Bell power-up

I think the hammer suit or raccoon suit is more rare then the whistle in smb3
If you included super mario RPG, my vote for rarest item is the Super Suit. 100 consecutive super jumps is not small task and most gamers have never accomplished this.
