Hi I'm a fan ❤ Wanted to ask.. weber recommends not using a baking tray for grilling meats as the condensate ( of the rendered fluids) drips down the sides of the lid. They specify that one must use a perforated aluminum foil for indirect cooking. Did this happen with you ( condensate drippingdown the sides of the lid)?

I love this preparation, Jerry - and I never would have thought of smoking a duck on a Weber Q! I've never scored a duck - I always just poke the skin with a fork all over. Do you find that scoring allows more fat to drip out without making it dry? Oh - and I'm going for a thigh!
Yeah, I've heard/read that you can just poke holes in the skin. I couldn't really tell the difference. I'm thinking scoring in a criss cross is more for show. Thanks for checking this video out!
Ya i did a 12lb turkey this year in my weber q1200. It barely fit in there so i had to spitch cock it. But it worked came out amazing. Super juicy and definitely better then oven.
Yeah duck is great but like any other bird, you're right there's not a whole lot of meat on them - particularly duck because of all the fat I think. For four of us, I think there was only enough for one portion of leftovers.
Yes, this rack and pan is just an ordinary oven set that I pulled out of my cupboard. It works just as well s the Weber rack and shield. To be honest, there is nothing special about the Weber branded rack and shield - an ordinary baking rack and even aluminum foil (which is what I normally use) works just as well! Thanks for watching!

It's personal preference. 50-50 will do. In our household we go light on salt so our ratio might differ from your preference.
